Crop failure, disease and ageing plantations have led to a shortfall in the supply and an increase in the price of cocoa butter. As a result the chocolate industry is keen to find a high-quality alternative, as the demand for cocoa is predicted to rise by 30% by 2020.

A recent Bangor University study published in Scientific Reports explored the potential of a wild mango (Mangifera sylvatica Roxb.), an underutilised fruit species of south-east Asia, to provide an alternative source of butter for the industry. Analyses showed that wild mango butter has a very similar chemical, physical and thermal profile to cocoa butter, which indicates it has the potential to become a cocoa butter improver.

Wild mango butter has a higher moisture content than cocoa butter, and there is a growing body of evidence that higher moisture content butters produce low fat chocolate.

Postgraduate student and senior author, Sayma Akhter said: “The identification of real added value as we have shown in this study, could pluck the wild mango from obscurity into mainstream production. With the support of government and non-governmental organisations, small scale industries could be set up to create a new income source for local people."

A study by researchers at Bangor University's School of Sport, Health and Exercise Sciences performed an in-depth, multi-disciplinary analysis of how athletes get to be the world’s best.

The collaborative research was commissioned by UK Sport to comprehensively compare and contrast the developmental biographies of serial medalling, super-elite athletes who had won multiple gold medals at Olympic Games or World Championships against those of matched, funded, elite athletes, who had not medalled at either a World Championship or an Olympic Games.

The findings indicated that overcoming or recovering from a foundational negative life event via engagement with sport was of central importance to the development of super-elite athletes.

These findings are important because they show that the potentially negative impact of early negative life events can be offset through engagement with sport to lead to very positive life outcomes.

Following a submission prepared by Professor Lewis Hardy from the School of Sport, Health and Exercise Sciences, the project was short-listed for a 2016 Times Higher Education Award in the Research Project of the Year category.

From a distance they look much like other sheep; but their thick fleeces, ear tags and woolly tails hide a hi-tech secret. The ‘electric’ sheep’ (seen in the picture above) have a special battery-operated heating system which simulates the heat produced by a live animal, and are used by Bangor University researchers to measure the effectiveness of trees and shelter belts to protect flocks from adverse weather.

PhD student Pip Jones takes the model ewes’ temperatures as she moves them around the fields at the University’s research farm; comparing what happens in places where trees, hedgerows or shelter belts offer protection, against locations where there’s no shelter. Wind flow and microclimate around hedgerows are also being measured.

Pip said: “We’re looking at how weather is experienced on a ‘sheep scale’… Sheep use a substantial amount of energy just staying warm; and lose a lot of heat when it’s cool, especially when there’s a wind chill.”

The study is part of Multi-Land - a research partnership finding ways to increase farm profitability and efficiency through sustainable agriculture, whilst improving resilience of the farmland landscape.

Pip's research, into the potential for tree shelter systems to save the energy and lives of livestock in adverse weather, is funded through the KESS scholarship in partnership with the Woodland Trust.

A green science and technology project in which Bangor University’s Biocomposites Centre and School of Chemistry’s research played a significant role, has seen the development of a new biodegradable packaging for bakery products - from the wastes generated by the same industry they come from.

Dr Viacheslav Tverezovskiy, from Bangor University’s Biocomposites Centre, explains: “Wastes from bread crusts, sliced bread and sponge cakes underwent fermentation and enzymatic treatment to obtain lactic acid. Lactic acid was polymerised to a biodegradable polymer, PLA. The latter was processed by the current extrusion technique to produce a packaging film with excellent barrier properties, suitable for different products of the bakery sector, even for packing pasta and sweets.

The new packaging materials are fully biodegradable and compostable. The project’s success really helps to demonstrate the benefits of a circle economy and there is much more food waste we could work with. The Biocomposites Centre is continuing its research into bio-derived PLA and other bioplastic materials towards a sustainable future.”

The project, has been awarded one of the two ‘Green Awards’ as one of the best LIFE Environment Projects of the last 25 years.

My course is great, helping me to develop some really ‘real world’ applicable skills; for example working with local organisations, whilst giving me the theory and depth of knowledge I wanted, in order to learn more. There is so much academic support at Bangor, and the lecturers and staff are always on hand.”
