Baking Powder Biscuit Mix8 cups flour 1/3 cup baking powder 2 teaspoons salt 2 teaspoons cream of tartar 4 teaspoons sugar 2 cups shortening, butter or margarineCombine all, until mixture resembles cornmeal.Store in a container with a lid or Ziploc bag and refrigerate.This recipe makes 12 cups of mix (or enough for 48 biscuits).To make 6-8 biscuits, combine 1 1/2 cups mix with 1/3 cup cold milk. Stir well with a fork until a slightly stiff dough forms. Drop biscuits from a tablespoon onto a baking sheet sprayed with oil. Bake in a preheated 450 degrees F oven for 12-14 minutes or until the biscuits are golden brown.Variations:To make biscuits for creamed chicken or turkey, add 1/4 teaspoon poultry seasoning to the mix before adding milk.For shortcake biscuits, add 1 tablespoon sugar to the dry mix before adding milk.For a copycat Red Lobster Cheddar Biscuit - combine 2 cups mix with 1 cup cold buttermilk, teaspoon garlic powder, teaspoon cayenne pepper, 4 ounces sharp cheddar cheese, shredded (about 1 cup shredded)For the Topping:2 tablespoons unsalted butter, melted, divided teaspoon garlic powder1 teaspoon minced fresh parsley (or teaspoon dried)DIRECTIONS:1. Preheat oven to 475 degrees F. Line a baking sheet with parchment paper or a non-stick baking mat, use a greased -cup measuring cup to scoop out portions of dough. Place on the prepared baking sheet, leaving a little more than an inch between biscuits. Bake until the biscuits are golden brown, about 12 minutes. While the biscuits are in the oven, stir together the 2 tablespoons melted butter, garlic powder and parsley. Remove the biscuits from the oven and immediately brush with the topping mixture. Allow to cool for at least 5 minutes before serving.
