Baked Sweet Potato Fries This alternative to French fries tastes better and is far better for you. You can use either yams or sweet potatoes. If you can’t tell them apart, yams are a creamy yellow on the inside while sweet potatoes are a bright salmon-orange color inside. Sweet potatoes are high in beta carotene, vitamins C and B6, as well as potassium, iron, and magnesium. Their rich orange color is the easy way to know that they are high in beta carotene, the precursor to vitamin A. Ingredients: 4 yams or sweet potatoes 2 tbsp extra-virgin olive oil 1 tsp unrefined sea salt Directions: Preheat oven to 300 degrees Fahrenheit. Line a baking sheet with unbleached parchment paper or lightly grease with extra-virgin olive oil or coconut oil. Cut sweet potatoes or yams into strips similar to French fries. Try to cut them evenly so they’ll cook evenly. Place in a large bowl, drizzle with the 2 tablespoons of olive oil, and sprinkle with salt. Toss until evenly coated. Place fries in a single layer on prepared baking sheet and bake for 3 minutes. Turn fries over and bake for 30 minutes or until lightly browned.
