Everybody has bad habits, especially when it comes to eating. Some of us snack incessantly while we work. Others are prone to guzzling a beer or three every night then crashing out on the couch. More than a few of us enjoy midnight snacks usually delicious junk foods like devil’s food cake, cheddar cheese or salami slices.

Nutritional discoveries from the earliest days of history have had a positive effect on our health and well-being. The word nutrition itself means “The process of nourishing or being nourished, especially the process by which a living organism assimilates food and uses it for growth and replacement of tissues.”

Poor nutrition stems from a number of causes. According to the website Kids Health, celiac disease, lactose intolerance and cystic fibrosis can all lead to malnutrition and deficiencies of one or more nutrients. Iron deficiency is the most prevalent form of malnutrition in the world

HEALTH EFFECTS

Poor nutrition can cause a variety of health problems. Symptoms depend largely on which nutrients are missing and the severity of the deficiency. According to the National Institutes of Health, vitamin D deficiency causes the body to leach calcium from the bones, resulting in skeletal fractures, pain and deformity. Because nutrients work together to produce their effects, deficiencies in a single vitamin or mineral can cause problems with the absorption and assimilation of others.

PREVENTION/SOLUTION

The best way to ensure good nutrition is by eating a healthful, varied diet. The American Cancer Society recommends eating five or more servings of fruits and vegetables each day. Choose whole grains over refined white flour, and eat meats such as poultry or fish instead of beef, lamb or pork to reduce fat intake. Preparation methods are also important. Broiling, poaching and baking are preferred to frying and charbroiling, which produce compounds such as heterocyclic amines that can be harmful in excess.
