SoME of THE MoST difficult things to dwell upon are also the things that need to be remembered. That is certainly the case with the events of September 11, 2001.

To honor the lives that were changed forever, the national Corvette Museum in Bowling Green is hosting “A Global Moment,” an 8,000-square-foot traveling exhibit that originated at the new york State Museum and explores the global, personal, and historical significance of that fateful day.

The exhibit will be on display from August 4 through october 28, 8 am to 5 pm, seven days a week.

on August 31 at 10 am, retired fBI agent Wesley Wong, whose expertise is counter intelligence, will present his singular insights and personal stories of the men and women who valiantly tried to save lives at the Twin Towers. He himself was trapped in one of the towers and was pulled to safety by the firefighters.

“I made a promise that if I could do something to keep the memories of those we lost alive, I would do it,” says Wong whose illustrious career followed a trajectory from investigating organized crime boss John Gotti, to the 1993 World Trade bombing, to the Millennium plot, to the 9/11 attacks. He was the senior fBI agent and the on-scene commander at Ground Zero.

Katie frassinelli, marketing and commu-nications manager at the national Corvette Museum, points out that as important as it is for children to be exposed to the his-torical evidence, Wong’s speech may not be appropriate for young audiences. It’s pretty intense, she says. “He talks about the jump-ers. He talks about finding the body of father Mychal Judge, who was at the time the first pronounced casualty of the 2,752 people who were killed.

The traveling exhibit will however offer parents and teacher the opportunity to inter-pret the events for school-aged children. “The exhibit is fine for younger people as long as they have an adult to explain and interpret,” says frassinelli.

Visitors can expect a montage of impor-tant artifacts. There are personal objects from victims and survivors. There are pieces of the aircraft used in the attacks, rarely seen photographs, and evidence of the inter-national response to the tragedy including expressions of sympathy from other nations.

In fact, the first stop on this exhibit, which documents events that had such a vis-ceral impact on American lives, was actually the le Caen Memoriale Museum in Caen france. The politics however, are of sec-ondary importance. “This exhibit focuses more on the human side of it,” points out frassinelli. “These were real people and real people died.”

The Corvette Museum is a natural venue because it pays homage to a sports car that has unique ties to the armed forc-es. frassinelli explains that during WWII, American soldiers were exposed to the Porsches, Audis, and BMWs that were the classic original European sports cars. The Corvette, which was named for a naval bat-tleship, offered an American made version of those fantastic automobiles.

Educators are encouraged to schedule tours of the exhibit because although history books are always being written, history itself can be forgotten. “The kids who were just five or six years old when it happened won’t have the same memory that we do,” says frassinelli.

He also says that funerals have changed over the years as people’s lifestyles have changed. “There is lot more ‘personaliza-tion’ now,” he explains. He references the memorial service itself saying that in years passed, people attended funerals dressed in their Sunday best and the atmosphere was stern. Today, people are relaxed about pro-tocol and more willing to act independently.

“Each of us is different. We have things that distinguish us,” he says and lynn agrees. To that end, the funeral service often includes a specific type of music, not neces-sarily just hymns. Personal effects are on dis-play. Pictures or DVD’s are used as memo-rials. “It’s a celebration of life and I think people are looking at it more that way than they used to.”

In the past, families tended to stay in the same region, but today people are scattered and Kevin says it makes his business more challenging. “It can take a couple of days to get everybody back home,” he says. Partly because of this, cremation has grown in pop-ularity. He also points out that cremation is much more versatile in the long term.

He dispels the myth that there isn’t enough burial space by exaggerating. “There is enough room in cemeteries around here to bury everybody in this county ten times.” But cremation has other benefits for a mobile society. “What happens when you bury someone and you move out of town,” he asks before answering the question him-self.

“We have urns and we have keepsake urns,” says Kevin. These smaller “keepsake” urns divide the remains among the survivors so that each of them can participate. “Each child (for example) will go to a place where they have a fond memory of his or her mom or dad and those ashes could be spread in four of five places,” he explains.

Kaitlynn, Kevin and Lynn represent just part of the Kirby clan who keeps the family business an integral part of the Bowling Green community.

Cremation also allows survivors to have a more intimate experience in terms of memorializing their dead. “There is a com-pany that can put you in fireworks and shoot you into space. There is a company that will turn you into a diamond. There are compa-nies that will make handmade pottery with the ashes in it,” he continues listing the more exotic approaches to handling remains.

And since they established the Bowling Green Gardens Cemetery, the Kirbys are able to honor much more traditional requests. “People like the convenience. Driving all the way across town in a proces-sion can be overwhelming to some people. We kind of went back in time by building a cemetery with a funeral home adjacent,” he says. “It allows for more personalized grave-side services.”

Kevin and lynn also purchased a horse-drawn hearse, which they utilize on certain occasions. “We have had people use pickup trucks, mules, wagons, and even walk the casket to the graveyard—just like you would in a little old country church,” says Kevin.

He says his industry has gone “green.” There are wicker caskets and caskets made from reclaimed barnwood. Embalming, while still a standard practice, is in fact optional. “There is not a law that says you have to have a casket,” says Kevin. Indeed, the deceased can be wrapped in a quilt and placed directly in the ground.

He credits his excellent staff, which includes his grown children, for making his business viable and honorable. one of the most difficult things he has endured over the years is simply becoming more aware of the passage of time.

Both he and lynn agree. “As I get older,” he says, speaking for both of them, “it has been more difficult. I’ve been around the funeral home since I was seven years old and I’ve come to know and love so many people. you start by burying your friend’s grand-parents. Then, their parents. And now, I’m starting to bury my friends. That’s definitely the toughest part of the business,” he says.

But in the end, as Kevin points out, “you see people all these years and then you drive them to the cemetery and it’s the last time you’ll see them on earth.” Despite those harsh realities, he appreciates the faith that people have placed in him and his family to make those final arrangements that honor a person’s life.

Foundations of HomeQUESTIon: Tim, we are planning to build our new home soon and we have questions about foundation and basement options. Would you give us a summary of the basic foundation and basement options available?

AnSWER: The word “foundation” evokes thoughts of strength, permanence, and solidity - the basis for everything that follows. A home’s foundation is simply the most important part of its construction and overall performance, if not top of mind among homebuyers and owners.

The reason there are different types of residential foundations has to do with the soil and other conditions of the lot, regional building materials, the skills of the local labor force, and, where possible, needs and personal preference.

Almost all single-family home foundations in the u.S. are built with concrete or masonry blocks or some close variation, such as precast concrete panels or insulated concrete forms. A few are built with steel or treated wood, but those are rare occurrences and for special conditions. Regardless, a new home has one of the following three types of foundations:

Slab: A slab foundation is a lot like it sounds: a three stage or monolithic horizontal block of poured concrete. The slab is usually supported by a relatively shallow perimeter footing that runs along its entire boundary just below the ground. The center of the slab rests on or is embedded with a steel mesh over well-compacted and level ground.

The beauty of a slab foundation is its low cost and fast construction, especially for a simple house footprint or layout. once the footings are excavated and the formwork and reinforcing steel mesh is placed, it takes only a few men and a few hours to pour the concrete, tamp and level (or “screen”) it smooth, cut control joints to accommodate surface cracks, and embed any connectors for the next phase of construction. Within a day or so, the slab is ready for the structural frame.

Crawlspace: Also called a pier-and-beam or raised-floor foundation, a crawlspace creates a shallow area between the structural frame and the ground using a short perimeter wall of poured concrete (called a “stem” wall) and strategically located short support posts (or piers) in the middle. Combined, the wall and piers hold up the structural beams and joists of the wood-framed first-floor platform upon which the rest of the home is built.

This creates a 3- to 4-foot space allowing easier access to plumbing and electrical conduits and central air ductwork serving the house. It is critical to insulate the underside of the first-floor platform (and also the inside of the stem walls) to maintain the desired comfort level of the living space above; a moisture barrier on the raw ground and vents embedded in the stem wall will help keep the crawlspace dry and free of water-related damage.

Full Basement: A basement foundation is basically a combination of the two other types. Excavated to about 8 feet below the ground, it features a concrete floor (essentially a slab) and concrete or masonry block perimeter walls with as-needed support posts. The first-floor frame is built slightly above finished grade, creating a platform for the rest of the house.

Accessible from the rest of the house above, so-called “full” basements create at least an 8-foot clearance between the slab and the floor frame above. This full-height area can therefore be finished as living or storage space, utility area (such as the heating and cooling equipment and laundry), as well as mechanical and duct runs.

Most are “daylight” basements, with deep window wells along the perimeter that allow natural light and emergency egress. “Walk-out” types, meanwhile, take advantage of a slope on one side of the basement to create more conventional outside access to the basement ... and perhaps even an outdoor living area, such as a patio or garden.

Regardless of the type, a foundation is literally the basis of a home’s strength and performance, from energy efficiency to withstanding high winds. A well-engineered and well-built foundation allows the rest of the home’s construction to go as smoothly and quickly as possible, and maintains its structural integrity. It may not be visible or sexy, but a strong foundation is arguably the best way to maintain housing value.

EvErybody has his or her own idea of fun. some people are happiest shooting hoops. some people play cards. some are armchair quarterbacks who place a friendly wager and watch the game unfold. but for their part, builders enjoy solving puzzles and when homeowners Paul and shannon Maglinger of bowling Green hired contractor brent Wimpee to transform their backyard from ordinary to extraordinary, it was definitely “game on.” Wimpee utilized every inch of space and created a private paradise where everybody wins.

The backyard hideaway features a large salt-water pool with a slide for the kids and a board for future olympians, because as shannon points out, “if you’re going to have a pool — have a pool.” adjacent to it is a regulation half-court for basketball. a lovely grotto style pool house features a wrap-around kitchen complete with a dining area where shannon and her mom — who stops by for cards — can easily keep an eye

on the kids in the pool. a high definition television is mounted above the wood-burning fireplace and this outdoor living room is well appointed with comfortable all-weather furnishings.

Wimpee , who owns sou thern Kentucky building & remodeling, was the natural choice for the project, according to shannon, because in 2004, he actually designed and built the home that the couple then purchased four years later. Wimpee’s intimate knowledge of the original building project literally gave them a home court advantage and made it easy for the Maglingers to maintain the continuity in terms of architectural finishes.

brick to match the façade was used to construct a retaining wall, which doubles as a sort of balustrade for the steps leading down to the pool house. Wimpee then used the same brick to build the open-air, pavilion-style kitchen. a rough-cut stone was used to frame cabinets and counters while stainless steel appliances including a full-sized refrigerator complete the space. Ceiling fans with an island motif are mounted above on the knotty pine bead board ceiling.

What had initially been intended as two separate bathrooms — one with a shower and changing bench, and the other with the toilet and sink — were combined into a larger, more efficient design and trimmed almost entirely in tile.

despite its perfect proportions and precise detail, there was a time when the backyard was a steeply graded grassy slope toward the river. The couple had a good idea of what they wanted, but it was Wimpee’s ability to carefully align each element that created this perfect backyard hideaway.

First and foremost, the grade had to be corrected so Wimpee’s team hauled away 23 double-axel dump trucks full of dirt. he points out that the required easements in residential construction force a builder to be more strategic. “in commercial projects, you have a big building on a small lot. you need a building site, a parking plan, and the proper elevations.” in residential building, those preliminary evaluations have to become very detailed and precise before construction can begin.

The original plan was to have a circular path down the steep grade to the pool patio. instead, the plan was tweaked to become a large deck, with a straight flight of stairs, interrupted by a landing, and designed with solar lights on the risers so that even at night, it’s easy to navigate.

They broke ground in october of 2011 with the goal of finishing in time for summer. as a mild winter allowed construction to progress quickly, it was clear that Mother Nature was cooperating with their intended deadline. Even spring rains that pooled on the pavement allowed them to see in real-time the most efficient plan to facilitate the runoff toward the culvert at the back of the landscaped lot. and since shannon enjoys washing her car by hand in the backyard, draftsman Kevin ballard’s Cad design actually directs the waste water from the driveway into a row of hydrangeas which remain lush and healthy, creating a living fence with the neighboring yard.

despite the scale of the project there

were only a few “tweaks” according to shannon. her recommendation to couples planning a major remodel is to know what you want but also to, “trust your builder.”

Paul advises patience and also communicating any specific questions beforehand. For example, he and his brother are high-tech enthusiasts and they wanted hands-on access to help design and build the outdoor entertainment system. Wimpee’s team was very cooperative and the brothers were able to work with the electricians, charting ratios, specifying cable and integrating all the necessary components to get exactly what they wanted.

Now the flat screen is in place and ready to add another layer of competition to this backyard arena where the summer olympics will give way to fall football season. surveying the finished project it becomes clear that Wimpee definitely deserves a shout out as the MvP.

Becoming a grill master gives the cook

plenty of delicious options and sets up an

barbecue competition teams, but he concedes that barbecue isn’t rocket science.

“The key to good smoked meat is to cook it at a low temperature slowly,” he says. “you’ll hear ‘low’ and ‘slow’ at barbecue competitions all the time.”

ashford makes a clear distinction between grills and smokers. “a grill is something you find in nearly every backyard. a smoker will have an offset chamber and has the ability to give off smoke and heat,” he explains.

Grills come in kettle and commercial varieties with charcoal, propane, or natural gas options. some barbequers classify a gas grill as essentially intended for quick cooking.

The big Green Egg, a smoker and grill in one, is a 25-year-old hybrid that uses lump charcoal.

“it’s more functional that a regular grill,” says ashford. “some customers put their food on it in the morning when they leave for work, and it’s done when they come home in the evening — and you can still get it to 750 degrees to sear a steak.”

ashford offers a twist to the gas grill for backyard grill masters: Use the grill as a smoker. The keys here are to keep the heat on one side and the meat on the other side, place a tinderbox with woodchips above the heat source, and keep the meat moist.

once the cooking method is chosen, meat, rub, smoke flavor, and sauce take the stage. The best meats for smoking, according to ashford, are chicken thighs and drums, beef and pork ribs (remove membrane on the underside before cooking), pork butts and shoulders or picnic cuts, and beef brisket.

rubs are built from personal taste preferences. “a rub can be salt and pepper or any combination of salt, brown sugar, black pepper, red pepper, paprika, onion powder, garlic powder,” he says. “Try some that are sold in stores, or build your own; taste it to see what combinations you like.”

an hour before cooking. some people soak or inject the meat with marinade. ashford says a good bark, the term for the dark crust that results from the rub, smoking, and slow cooking process, can have incredible flavor alone.

“The same goes for barbecue sauce. if the meat is seasoned correctly, you just don’t need sauce,” he says.

Keeping the meat moist is as important as selecting the flavors and cooking apparatus.

Grill humidifiers can be filled with water, beer, or fruit juice. spritzing the meat with juice every 30 to 60 minutes also works well. if personal preference includes barbecue sauce, ashford says to mop the meat with sauce at similar intervals in place of spritzing.

SERvES 4

8–10 oz spinach leaves, washed, spun dry and torn if large6 shallots, peeled and sliced into thin

1/16 inch rounds1 cup olive or canola oil1 cup whole almonds, toasted

(4–6 minutes in 375o F oven or until fragrant) and roughly chopped

1 cup gruyère or other interesting aged swiss, grated

¾ cup vinaigrette Kosher or sea salt and freshly ground

pepper to taste

Separate shallot rounds into individual rings. You can toss with a bit of cornmeal or flour to dredge or just fry as is. Shake off excess flour or cornmeal.

heat oil in shallow sauté pan over medium heat. when the oil shimmers but is not smoking, add 1/3 of the shallot rings. Adjust the heat so that the rings are frying and sizzling. Stir frequently to ensure even frying. Once the shallots are a deep golden brown, use a small sieve to scoop them out of the hot oil. Place on a plate lined with paper towels and salt generously. Repeat with the remaining 2/3 of the shallot rings (in two batches).

Just before serving, toss the spinach, fried shallots, chopped almonds, and gruyère in a bowl. Sprinkle with salt and freshly ground pepper and add just enough vinaigrette to coat the leaves.

We like to dry rub the chickens the night before we roast them. We use a variety of herbs and spices (feel free to experiment), equal parts kosher salt and brown sugar, and some freshly ground pepper. For one chicken, we use 1 tablespoon of herbs/spices, 1 tablespoon of salt and 1 tablespoon of brown sugar, with about four turns of a pepper mill. Mix all of the rub ingredients together and rub the inside and outside of the chicken. Put into a bowl or baking dish, cover with plastic wrap and refrigerate overnight.

The only complicated part of this recipe is to slice the breasts off of the chicken partially through the cooking. I do this because the breasts will dry out before the leg meat is cooked and dry chicken breasts are as awful as undercooked leg meat.

1 lemon or orange, washed and cut into 8 wedges

A variety of herb stems, if you have them, from the garden

Preheat the oven to 425° F.

Add the onion, lemon or orange, and herbs to the cavity of the bird.

Pull the wing tips behind the head.

Place chicken in a roasting pan or baking pan lined with foil or parchment, breast side up.

Roast in 425° F oven for 15–20 minutes.

Turn oven temperature down to 350° F and roast another 15–20 minutes.

The breasts should now be sufficiently browned on top so you can turn the chicken breast side down. Roast an additional 10 –15 minutes.

Take the chicken out of the oven and let it cool.

when it is cool enough to touch, (15–20 minutes later), carve off the breasts by cutting on either side of the breast bone and following the rib cage until the breast comes off in one piece. The breast should be cooked but still tender and juicy.

Return the de-breasted chickens to the oven to continue roasting the legs. This should take another 15 minutes. The legs are done roasting when the skin and meat starts to shrink from the end of the drumstick, the skin is a deep golden color, and the juices run clear when the leg is pricked with a knife on its skin side.

Remove from oven and let rest for 15 minutes.

To serve right away, push the legs away from the carcass and use your knife to disjoint at the hip. Each leg piece can be cut into two pieces or left whole. To cut into two, just cut across the leg where you think the two leg bones meet. If you miss the juncture by a little, just move your knife around and you will find the place where the joint is.

You may return the legs and breasts (which can also be halved) to the oven to warm for 5–7 minutes or, since it is summer, feel free to serve it at room temperature.

tipAny assortment of berries or stonefruit can work — just make sure that they are washed, stemmed and pitted if necessary.

Preheat oven to 425° F.

gently toss strawberries with sugar (and some garden mint or fennel) and pour onto a baking sheet to macerate over the next hour or so.

Sift the all-purpose flour, granulated sugar, baking powder, and salt into a large bowl.

Add diced butter and cut in with a pastry blender until the mixture is the texture of coarse cornmeal.

Beat the egg, milk and heavy cream together and add to the flour mixture.

Mix until it is a craggy dough. Do not over mix. wrap in plastic and let rest for 30 minutes at the least.

Roll out dough to ¾ inch thick. Cut out with a 3 inch biscuit cutter or glass.

Brush with the 2 tablespoons of whipping cream and sprinkle with demerara sugar.

Bake for 12–15 minutes. They will be golden and puffy when they are ready.

when cool, split each biscuit and top with sweetened whipped cream (or ice cream) and macerated berries.

The shortcake dough can be made a day or two ahead of time, but don’t bake it more than a few hours ahead of serving. The berries should be made only an hour or two ahead of time. The beauty of this dessert is its freshness.

i havE LivEd in three places as an adult: the little one-bedroom apartment in the upstairs of an old house where i brought my son home from the hospital, the renovated 1920s apartment building where he grew up, and the 1950s cottage i purchased three and a half years ago.

The first apartment was darling with dormered ceilings and wooden floors. The second apartment was 45 stairs up and had lots of windows and charm. Then i began to look for a house.

What i really wanted was a turn-of-the-last-century house. The problem was that those houses require a substantial “rainy day” account, and buying a house was going to take me just about down to zero in all my accounts. Two years into house shopping, my amazing realtor drove me to a little green cottage that had been built in 1954. it was surrounded by other little cottages that were pretty similar, but they were all clean and happy-looking in their own way. i walked in and knew this was my house. i put together all my money and bought it. it

What makes a home?

A Shift InDreamsdidn’t have incredible charm, but it did have a yard for my then-10-year-old son to play in, it had an attached sunroom that reminded me of my grandparents’ house, and i felt pretty certain it wasn’t going to fall apart on me.

When i drove Quinn past it for the first time, we stopped, and i said, “see that house? i just bought it.” he looked at me and didn’t seem to comprehend what i was saying. i said again, “i just bought this house for us.” he got tears in his eyes

and couldn’t really speak. suddenly, this house was the most perfect of houses. his reaction made me see this little cottage for what it was—our home. it doesn’t have the most-incredible architectural features, but it is ours, and since i bought it, we have added a golden retriever and my long-term partner, now my wonderful husband, to the mix.

i still hope to someday have an old house with gorgeous woodwork, high ceilings, a beautiful foyer, and other features that ooze charm, but Quinn’s response to this house means more to my heart than any architectural feature ever will. This house is my dream home.

His reaction made me see this little cottage for

what it was—our home.
