Greetings Mountlake Terrace residents, visitors and members of
the Mountlake Terrace Community Senior Center.
I’ve had the privilege to have just competed my first year as
Executive Director at our special center here at Ballinger Park.
What a beautiful place to come and work at every day.
My staff and I have worked very hard this last year cleaning
organizing and growing programming. We continue to provide
nutritious lunches 3 days a week and we have successfully added
the 1st Saturday of the month pancake breakfast and we will be
adding a Tuesday brunch in October as well as adding another
congregate lunch on Mondays this winter.
Early spring, we began helping our neighbor at the Edmonds
Senior Center during demolish/rebuild of their center by hosting
programming such as Bastyr University Wellness Clinic, Dental
Hygiene, a reader’s theater group and several monthly meeting
groups.
We have also started a monthly Vendor Market with crafters,
antiques, artists, direct sales, and collectables we’ve named
“Community Treasure Chest.” This fun market is always the same
day as our pancake breakfast, the first Saturday of the Month.
We are busy planning many fun events for this fall and winter,
please come by the center and pick up an updated lunch menu,
program flyers or just come and enjoy a cup of tea or coffee and
take in the beauty our center and the park.

CROCK POT BACON-WRAPPED PORK LOIN PIE RHUBARB
3 to 4 lb pork loin
8 slices bacon
2T honey
Wrap the pork loin in bacon. Place in slow cooker. In
med size bowl mix the next ingredients. Coat the loin
with mixture, covering it completely.
Cook on low for 4 to 6. Hours.
So easy and delicious!

2 lb. rhubarb cut into 1" pieces (about 7 cups)
1 1/2 c. granulated sugar
1/4 c. cornstarch
1 large egg, lightly beaten with 1/2 tsp. water
Sanding sugar, for sprinkling
In a large bowl, combine rhubarb, sugar, cornstarch, lemon
juice, and salt. On a lightly floured surface, roll each piece of
dough out into two 12" rounds.
Fit one round into a 9" glass pie plate and fill with rhubarb
mixture. Dot evenly with butter, then cover pie with
remaining round and trim overhang to 1”. Fold edges of top
dough under and crimp together.
Using a knife, make five 1" slits in a circle in the center of the
top crust. Freeze pie for 30 minutes.
Preheat oven to 375°. Brush top crust all over with egg
wash and sprinkle generously with sanding sugar.
Bake pie with a foil-lined baking sheet on bottom rack to
catch juices, about 1 hour. Check to see if top crust is
browning too quickly and tent with foil if necessary. Continue
to cook, checking every 10 minutes to see if top crust needs
to be tented, for about 30 minutes more, until bubbling in
center and bottom crust is golden.
