a whole lot more interesting.”

CHAMPAGNE OF THE MONTH

The House of BILLECART-SALMON is part of a rare family estate who, through their work and their know-how, has built the myth of champagne. It all began in 1818 when Nicolas François Billecart and Elisabeth Salmon founded a Champagne House that was above all conscious of the excellence of its wines.

From the XVII century, Pierre Billecart, wine maker and ancestor of Nicolas François Billecart, was hailed by King Louis XIII who authorised him to create his own coat of arms.

Thus, when the champagne House was born in 1818 from union of the Billecart family to the Salmon family, his descendants proudly reinstated them.

“Blue inside a gold chevron with three bunches of grapes lined up along the top above a greyhound

standing to attention”: this coat of arms decorated the old barrels of the BILLECART-SALMON House, not so long ago. Champagne.

The House of BILLECART-SALMON has preserved ancestral vinification methods handed down from generation to generation and constantly perfecting them.

Always conscious to improve the quality of their champagne,in the fifties the House established the technique of chilling the must combined with the use of stainless steel tanks for a longer fermentation at a lower temperature. Over time, the wines conserve their freshness, the aromas intensify, allowing the BILLECART-SALMON champagnes to deliver all it promises.
