En 1942, lorsque Jim Boyce construit le Lake Louise Ski Lodge avec
quelques hommes, il est loin de s’imaginer que son établissement
connaîtra une telle renommée. Déjà en 1947, Norman Watson, un noble
anglais qui acquiert la construction en bois rond, comprend sa valeur et
ses atouts. Il le renomme Post Hotel afin de séduire les cohortes de
touristes qui se pressent été comme hiver au sommet des Rocheuses.
La véritable transformation s’opère toutefois en 1978, lorsque
séduits par l’endroit, deux instructeurs de ski suisses de passage au
Canada lui succèdent. André et George Schwarz sont plus habitués à
dévaler les pentes qu’à gérer un hôtel ! Leur approche à la fois
rafraîchissante et bon enfant leur portera chance. Ils font d’abord appel
à une brigade européenne pour faire de leur établissement un haut lieu
de la gastronomie. D’entrée de jeu, ils concentrent leurs efforts sur la
carte des vins. L’hospitalité des frères Schwarz et la popularité sans
précédent du restaurant et de sa cave entraînent un réaménagement
en profondeur de la structure de l’hôtel. Le pari peut sembler risqué,
mais en 1990, le Post nouvelle mouture est sélectionné pour se joindre
au groupe sélect Relais & Châteaux. L’ancien chalet, sans rien perdre
de son allure rustique ni de sa vocation première, sait allier avec
bonheur charme, courtoisie, calme, cuisine, caractère et modernité.
Les années se succèdent. De nouvelles suites luxueuses, une biblio
thèque ainsi qu’une salle à manger privée s’ajoutent aux installations
déjà existantes. Les visiteurs affluent à l’hôtel pour profiter du site
exceptionnel et de la nature indomptée du parc national Banff. Ils y
reviennent, conquis par la chaleur de l’accueil, la qualité du service et
le caractère intimiste des lieux.
LE VIN COMME APPÂTÉlevé par un père épicurien, George Schwarz a parcouru toute sa
jeunesse les routes de France menant à ChâteauneufduPape. Dès
1978, alors que l’oenologie n’a pas encore conquis les Canadiens, il
saisit son importance. Le vin est devenu une véritable passion qu’il
compte bien partager avec ses amis et sa clientèle. Avec patience et
doigté, il sait mettre la main sur les cépages qu’il faut boire. La réputation
du cellier traverse rapidement les frontières pour attirer les amateurs et
les connaisseurs. Le magazine américain Wine Spectator, sommité en
matière de vin et de culture du vin, distingue le Post Hotel en 2002, et
depuis 16 ans lui réserve les plus grands honneurs. Aujourd’hui, le
cellier recèle 25 000 bouteilles et plus de 2 300 grands crus provenant
principalement de Californie, Bourgogne, Bordeaux, Rhône, Toscane,
Piedmont et Australie.
En misant sur la cuisine raffinée, sur la connaissance du vin et surtout
sur une façon de faire à la fois décontractée et attentive, George et André
Schwarz ont su créer un petit coin de paradis à nul autre pareil !
In 1942, when Jim Boyce got a few men together to build the Lake
Louise Ski Lodge, little did he imagine how famous his establishment
would become. But when English nobleman Norman Watson bought
what was essentially a log-construction motel in 1947, he already
understood its value and potential. In fact, Watson renamed it the
Post Hotel in order to better draw the crowds of tourists who poured
in, winter and summer, to experience the magnificent Rockies for
themselves.
The real transformation, however, came in 1978, when two Swiss ski
instructors on a trip to Canada fell in love with the place, and bought it.
André and George Schwarz were more comfortable skiing down the
slopes than managing a hotel, but their fresh, good-natured approach
brought them luck. First, they called in a European crew to turn the hotel
into a fine dining establishment, with a strong focus on wine. As the
reputation of the restaurant, its wine list, and the warm hospitality of the
Schwarz brothers grew, people began flocking to the hotel, leading to
the decision to undergo major renovations. It seemed like a risky gam-
ble, but in 1990, the new Post Hotel was invited to join the elite group
known as Relais & Châteaux. The former chalet, now a luxury hotel, had
managed to pull off a difficult feat, modernizing its facilities without
affecting any of the rustic charm, courteous service, a laid-back
atmosphere and fine dining for which it was known. As the years went
by, new luxury suites were added, along with a library and a private
dining room. An endless stream of visitors continues to check in for the
hotel’s fine services, cozy intimacy, and the magnificent natural surroun-
dings of Banff National Park.
LURING THEM WITH WINERaised by an epicurean father, George Schwarz had spent much of his
youth criss-crossing France on gastronomic tours that led to such
legendary centres as Châteauneuf-du-Pape. In 1978, wine fever had
not yet gripped Canada, but George knew it would, and he was eager
to share his knowledge and passion with friends and patrons. Carefully
and patiently, he began collecting all the right wines, and soon the
reputation of his cellar was attracting amateurs and connoisseurs from
around the world. Wine Spectator, the trend-setting American
magazine, singled out the Post Hotel for high praise in 2002, and has
continued to award it the highest honours every year since then. Today,
the cellar holds 25,000 bottles, including more than 2,300 vintages
from Burgundy, Bordeaux, Rhône, Tuscany, Piedmont, California and
Australia.
By putting their money on fine cuisine, fabulous wines and relaxed,
attentive service, George and André Schwarz have created a little
corner of paradise unlike any other!
