Have your recipe near by at all times
Ingredients
• 4 eggs
• 2 c. sugar
• 2 c. canned pumpkin
• 1 c. oil
• ½ c. water
• 3 & 1/3 c. sifted flour
• ½ t. baking powder
• 2 t. baking soda
• 1 t. salt
• 2 t. pumpkin pie spice
• 2 c. chocolate chips
Directions
1. Preheat oven to 350°.
2. Beat eggs and sugar in a large
bowl.
3. Add pumpkin, oil, and water
and blend thoroughly.
4. Sift all dry ingredients together
5. Add dry ingredients to the wet
ingredients and mix well.
6. Add chocolate chips and mix.
7. Pour batter into muffin tin.
8. Bake at 350° for 15-20 min
Pumpkin Chocolate Chip Muffins
• 2 c. Sugar
– Measure out 2 cups
of sugar
– Pour sugar into mixer
• Mix eggs and sugar
together on a low-med
setting
Step 2: Beat eggs and sugar in a large bowl.

– Open can of pumpkin
with can opener
– Measure out 2 cups
of pumpkin
– Put in mixer
Step 3: Add pumpkin, oil, and water and
blend thoroughly.
• Blend on a low
setting until
ingredients combine
to make an even
consistency

– Measure out ½
teaspoon of baking
power
– Sift and add to flour

– Measure out 2
teaspoons of baking

– Sift and add to flour

– Measure out 1
teaspoon of salt
– Sift and add to flour

spice
– Measure out 2 teaspoon
of pumpkin pie spice
– Sift and add to flour
mixture
Step 4: Sift all dry ingredients together.
• Gradually add dry
ingredients to wet
ingredients.
• Mix thoroughly until
flour mixture is no
longer visible
Step 5: Add dry ingredients to the wet
ingredients and mix well.
• Place cupcake liners
in muffin tin
• Pour about ¼ cup of
batter into each
cupcake liner
• This batch turned out
to make about 36
muffins
Step 7: Pour batter into muffin tin.
• Put muffins in oven
• After about 15 min check to
see if they are done by
placing a toothpick in a
muffin
– Clean = done.
– Not clean = not done bake
for a few more minutes and
check again.
• Take muffins out of tin and
cool
Step 8: Bake at 350° for 15-20 min.
