Supplementary Fig. 1 - Schematic diagram of the production of blueberry polyphenol-protein
matrices. The standard procedure consisted of complexing the concentrated blueberry extract
after ethanol removal with organic whole wheat flour, chickpea flour, coconut flour or soy
protein isolate and submitting the mixtures to vacuum oven drying, freeze drying or spray
drying in order to obtain polyphenol-protein aggregate matrices.
