Howdy Irsquom Mazatlaacuten Jack and Irsquoll be doing the Stranger in Paradise column for the

foreseeable future You hopefully never heard of me but some of the older readers might remember my illustrious brother Monterrey Jack

Anyhow Irsquove been hanging around this old town for too long maybe but I canrsquot think of a better place to get stuck for the duration Itrsquos got something for everybody at every stage of life

Imagine how cool it must be to grow up in Mazatlaacuten Dozens of miles of beaches within the city limits and not a snow shovel anywhere An expansive sea walk you can skateboard and bike along endlessly A week off school for Carnival every year and two weeks off for Easter Totally awesome Like the song Corrido de Mazatlaacuten proclaims here even the poor folk feel like millionaires

My first couple of years in Maz I covered the waterfront Playa Norte was my haunt rambling from the Fishermanrsquos Monument to Valentinorsquos and back I never missed a sunset went body surfing in wintertime eschewed touristy type places in the flavors of the rustic and exotic palapas shopped at the Mercado Central ate raw shellfish swimming in hot sauce and patriotically washed it all down with way too much cerveza Pacifico con limoacuten y sal

Then my tastes grew more sophisticated and cosmopolitan Olas Altas beckoned Next thing I know the magic of historic old town

has captivated me the Plazuela Machado has blossomed into a cultural mecca and Irsquom becoming an opera fan Everywhere I look I see fellow Norteamericanos walking around with the same love-struck looks on their faces and next thing you know the place is overrun with foreigners

After giving my anthropological and transcultural itches some deep scratching I found myself appreciating more and more the soulless plastic comforts of the Zona Dorada The beer is colder the sand is prettier and there are more restaurants with air conditioning and familiar sports on TV Once you got all that youthful craving for adventure out of your system why not spend a little more and pamper yourself

And now in the October of my years I find therersquos no place like home Thanks to the marvelous modern telephoneInternetbig TVOn line banking combination there is no need to ever go outside anymore Pretty much anything on Godrsquos green earth can be found or ordered the only limit is the imagination and the credit card Every year they come up with more gadgets that immediately become indispensable for everyday life Itrsquos gotten to the point that if I want to know if itrsquos raining or not I go to the weather page rather than open the door and let all that nice cool AC escape Irsquom glad all this stupefying technology waited until the sedentary reminiscent stage of my life to appear at least I accomplished a few things before turning into a small-screen zombie But I fear for

the youngsters who donrsquot know how anything feels just how it looks on their dumb phones

At least here in Mazatlaacuten we have great Wi-Fi service I used to think of Telmex as being one of the great corporate villains right up there with Halliburton and Nestle but the old fat cat Carlos Slim has really gotten his act together in the last few years and Meacutexico enjoys some of the best and cheapest home phoneWi-Fi service in the world Now itrsquos Telcel that is the arch villain of the communications world but donrsquot get me started thatrsquos a whole another story

Anyhow whatever it is yoursquore looking for (except alpine skiing I mean letrsquos be reasonable) Mazatlaacuten has it whether itrsquos surfing the waves or surfing the net

Mazatlaacuten reminds me of a calendar one thatrsquos full of plans which prompt her inhabitants

to be bursting with anticipation all times of the year Shersquos like a department store always preparing for the next event to attract customers the holiday times the fabricated celebrations like Comedy Night bands singing their tunes around the city Ah yes This is the seasonal city one with two major seasons summer and winter

We look forward to the spring when the colorful birds grace us with their visits and we near the summer storms that transport ferocious rain showers down over our heads bringing us lush green terrain within 48 hours Not that our heads grow a green terrain that would be weird Seriously thoughhellip I can look to the east and the brown hills literally turn green with two of these wet outbursts Amazing Oh I just love the storms Mind you my body does this weird thing in the summer referred by some as becoming a sweaty wet mess but still I am content here Yes spring brings us exotic birds but at the same time our northern human friends leave us Itrsquos a bittersweet transition to summer for those of us who remain in this unique land

What is that song ldquoHello I love youhellip wonrsquot you blah blahhellip blah blahrdquo And then therersquos ldquoBreaking up is hard to dohelliprdquo The first song is for the stunning feathery

creatures that have reservations to stay here during our hot times the second is for our new and old friends who are beginning to make their exodus to the north

Itlsquos much easier to write a novel during this time as I do much less socializing I find it effortless to adapt So with that said I feel as though I have the same attitude as my city I welcome each new event that the calendar dictates me to look forward to Does this kind of thinking make me the customer that the department store is trying to attract Hmm thatrsquos an interesting thought ldquoI am a robot moving with the flow of the seasonal changesrdquo

Itrsquos time to change again In the next few months my city will have her arms out to embrace your return and the winter events in the city will begin For those of you that are beginning to

think about what to pack for your winter home retreat I can imagine the excitement the utter exhilaration you must feel You will soon fly into this magical city once more

Such a wonderful cycle this is I realize this type of existence is anywhere everywhere but somehow here in Mazatlaacuten it seems

anticipation of the holidays then Carnaval Semana Santa (Holy Week ~ Easter)hellip we will do this again Life is grand but to me it is also full of rich moments either with the colorful birds or the people who spend their winter months down here Each season gives us something different to enjoy

the return of your migrating snow birds Irsquom beginning to feel the expectations in the air The humidity will soon leave this little town and there will be lots of music to hear in the evenings Boy oh boy can life get any better I donrsquot believe so

Sauces- Browned Butter By Christine Yerbic

1 cube Butter (4 oz)

2 tbsp Lemon Juice

2 tbsp Fresh Parsley minced

METHOD1 Melt butter in a medium skillet

over medium low heat 2 Continue cooking for about 10

minutes stirring and shaking the pan constantly until the butter is golden brown

3 For a clearer sauce strain the browned butter through a fine mesh sieve over a small bowl

4 Stir in the 2 tbsp of lemon juice and the minced parsley

A fine sauce is the art and essences to cooking The word ldquoSaucerdquo is a French

word that means ldquoa relish to make food more appetizing enhance and to compliment by bringing out the flavor of the food it is served withrdquo

A sauce can be a liquid cream or semi-solid food served on or used in preparing other foods The French are credited for refining the sophisticated art of sauce-making

There are hundreds of different sauces all are classified under one of 5 - ldquoMother Saucesrdquo These 5 basic sauces are 1) the white sauce ldquoBechamelrdquo 2) the light stock based chicken ldquoVelouterdquo 3) the brown stock based ldquoEspagnolrdquo 4) the two based ldquoEmulsifiedrdquo sauces ldquo Hollandaise rdquo ampldquoMayonnaise 5) the oil and vinegar based ldquoVinaigretterdquo

Tomato Sauce is now considered

to be an addition to the 5 Mother Sauces since it is the base for a large variety of sauces in todayrsquos cooking

Sauces derived from one of the Mother Sauces are called a secondary sauce such as the browned butter sauce Literally there are hundreds of variations such as pan sauces purees salsas Asian dipping sauces dessert sauces to the traditional American Giblet Gravy served with the Thanksgiving Turkey

Browned Butter Sauce is simply melted butter that has been simmering over low heat until butter has turned Golden brown

The taste is bigger of butter with a nutty flavor and the aroma is enticing Steamed vegetables taste bolder with a brown butter drizzle For a simple Pasta Sauce toss browned butter with hot pasta for a quick and easy topping
