Closer to home, Members can now enjoy a series of regular events and activities organised by the Club including complimentary fi tness classes, whisky/ sake/ wine appreciation classes, seminars, festive celebrations, and special events such as the ONE15 Christmas Boat Light Parade.

On the occasion of our 12th anniversary, this edition of Longitude also features a special cover that celebrates the ancient paper art of quilling—a form of paper fi ligree work done by rolling strips of paper into specifi c shapes. We employ this technique to capture all our childhood fantasies of playing with paper boats, imagining voyages to faraway lands. It is that spontaneity and courage to dream big that has got us to where we are today and continues to propel ONE°15 Marina Sentosa Cove’s ongoing journey into the future.

September is a momentous month for the Club, as it marks ONE°15 Marina Sentosa Cove’s 12th birthday. I am proud to say that we have attained many highs since we launched in 2007. The last two

years in particular, have seen us reach a number of new milestones. I take this opportunity to thank all our pioneer Members, Members and boaters—we would not be here today if not for your support.

ONE°15 Marina Sentosa Cove won the Best Asian Marina award for a remarkable eighth time at this year’s prestigious 15th Asia Boating Awards, organised by Asia-Pacifi c Boating magazine. Other recent accolades include Unique Luxury Hotel of the Year 2019 at Luxury Travel Awards, the Business Excellence Awards at Corporate Insider 2019, and the Commendation Award (corporate category) at the 14th South West Eco Awards in 2018.

These wins reassure us that we are on the right course and encourage us to keep pushing the boundaries when it comes to maintaining the quality associated with the ONE°15 Marina brand.

The new Customs, Immigration and Quarantine (CIQ) Facility opened on our premises on 15 June. We are the only private marina in Singapore to offer this convenience, which acts as an alternative immigration point and will help to ease traffi c at the facility at Sisters’ Islands during busy periods.

The new CIQ Facility will also facilitate boaters’ movements between ONE°15 Marina Sentosa Cove and the future ONE°15 Marinas at Puteri Harbour, Malaysia and Nirup Island, Indonesia; more details on page 12.

The Puteri Harbour and Nirup Island projects are but two among the seven other ONE°15 Marinas in development in other parts of Asia, including China and Thailand. Together with these and our fl agship at Sentosa Cove and the marina in Brooklyn, New York, we are looking to build a network of marinas in popular yachting destinations worldwide that will add to our Members’ enjoyment. As a precursor, we shine a spotlight on the latest luxuries to amp up your nautical lifestyle (page 28).

Captain Pierfrancesco Cafaro shares the most breathtaking and heart-stopping moments on his round-the-world sailing expedition.

MASTER OF THE SEA

A warm, briny breeze blows across the ONE°15 Marina as Captain Pierfrancesco Cafaro slowly sips his coffee. This quiet tropical morning is a welcome break in his two-year

sailing expedition embarking from Italy. Across the marina, the luxury yacht Luna is serenely docked. Like its captain, it has seen watery wonderlands so breathtaking that words cannot capture their beauty.

Seafaring AdventuresThe 51-year-old captain has been helming Luna for a prominent Milanese family for seven years now. Most days, he wakes up to the multi-faceted brilliance of the sun on the sapphire sea, and drifts off to sleep under the ethereal glow of the silvery moonlight playing off the dark, hypnotic waves.

To the self-confessed nomad, the journey is the destination. But after stretches of endless blue, the wonder he feels upon reaching verdant land can literally make him catch his breath.

“If you go by plane to the Marquesas Islands, you probably feel a different emotion. But if you travel by sea from Panama through Galapagos and west to Polynesia, after 20 days of sailing, the moment that you reach a green highland is

very special,” he says of one of his favourite destinations. “Because it is hard to reach by plane, it is not touristy like Tahiti or Bora Bora. It is full of fi shes, and rich in animals and fruits. There are few people on the island.”

While the rest of the world is on terra fi rma, he loves spending his days swimming in pristine waters. “A special place we discovered during this trip are the Tuamotus Islands, made of a ring of land surrounding a bay of water with a gorgeous cluster of reefs in the middle. If you sail into the island, you will have protection from the reef and land. When you drop anchor, you are safe from the winds, and can explore waters fi ve to six metres deep that are full of fi shes,” he adds.

One of his fondest memories on this trip is of Tonga Island, north of New Zealand. “We were there last September where the southern humpback whales returned from Antarctica to give birth to their young. We dropped anchor, went close to the island and swam as close as two metres from the whales. Because they are 15 to 18 metres long, you can feel the movement in the water when they swim, and hear them communicating with one another,” he says, positively lighting up from the memory.

All In A Day’s WorkCaptain Cafaro typically proposes destinations and works out a loose itinerary with the owner, his wife and three sons. However, according to him, this itinerary changes 99 per cent of the time, mid-course—one of the luxuries of owning your own yacht.

One of the owners’ favourite vacation spots in the Mediterranean Sea is Greece, because of its beautiful islands, clear water and gorgeous summers. “There aren’t many boats or jet skis. If you leap from the boat, you can swim without fear of sharks or dangerous sea creatures such as jellyfi sh, which you can’t do in Polynesia, New Zealand or Australia,” he explains.

“Symi island has a special atmosphere—you can fi nd a traditional village with 200- to 300-year-old little houses and buildings. Milos also has a rich history. If you go for a walk or cycle, you will stumble upon beautiful little churches and ancient buildings,” the captain adds.

My boat gives me a sense of freedom and home. Where I am at each moment is not so important.

That said, sailing is not all sunshine and soft breezes. Though the enhanced connectivity of today has made it easier to avoid storms, the captain has encountered his share of bad weather.

Luna faced its worst storm from the Caribbean to Panama, where large rivers along the Colombian coastline created irregular waves. Water seven metres high rushed at it from its port side, and a gale pushed from the back of the ship threatening to capsize it.

The 53m-long Luna might be expected to withstand this storm. However, the real problem was that when departing from Antigua, there weren’t any available cranes to load the tender onto the yacht. As such, it was attached via two lines and towed behind the yacht. This storm easily snapped the lines, carrying the tender away into the waves.

“We immediately drew the sails, turned 180 degrees and chased the tender through the storm,” says Captain Cafaro. “As soon as we found it, we put Luna between the wind and the tender, and one

of my crew members jumped onto it. We were 15 miles north of Colombia, so he braved two hours of storm to make his way to shelter there. Because Luna could not sail in shallow water, we arrived four hours after him.”

“The problem was that my crew member had nothing with him—no visa, no passport. If the authorities found him before me, he could get into very big trouble. So before reaching Colombia, he switched off all the lights of the tender and waited in the darkness. It felt a little like a drug operation—we were very worried,” he laughs.

Reaching Colombia utterly spent, the captain asked if he could drop anchor for a couple of hours to seek shelter. The request was denied. So in the storm, the crew hurriedly reattached the tender and headed back into the choppy waters at the crack of dawn, sailing for another three days before reaching Panama.

Bound To The SeaAfter 36 years of sailing and countless storms, the sea continues to hold the captain in its mysterious thrall. At the point of writing, Captain Cafaro and his party are waiting to load Luna onto a big cargo vessel and ship it to Greece to avoid the Indian

Ocean, where pirates are known to operate. It should reach by end July, in time for summer.

The Mediterranean holds a special place in the captain’s heart because it is the seascape of his youth. From the age of 15, he started exploring its stunning islands such as Sardinia, Capri, Sicily and Corsica on a little sailboat. At 19, he obtained his certifi cation to sail solo; at 20, he bought his fi rst 20m boat for charter; and at 25, he set out on his fi rst round-the-globe expedition with his girlfriend and four-year-old daughter.

Today, the captain is married with three children aged 29, 16 and 12. “It can be hard to spend fi ve to six months away from my family. The fi rst week after returning from a long season, you feel like a spectator,” he confesses.

That said, his love of sailing has not waned. “Usually when I’m sailing, I am 100 per cent balanced. I’ve no worries on my mind and don’t get hung up on unimportant things. I see the world in a beautiful way. When I’m on land, I have to manage many things and tend to feel exhausted easily. My boat gives me a sense of freedom and home. Where I am at each moment is not so important,” he adds.

A new facility launches at ONE°15 Marina Sentosa Cove Singapore with the promise of easing bottlenecks during customs clearances.

CUSTOM CONVENIENCES

Any sailing enthusiast worth their salt knows that entering Singapore by sea starts at the Sisters’ Island Customs, Immigration, Quarantine (CIQ) facility. Here, boaters would previously

have to wait for CIQ offi cers to arrive before they got the green light to sail in and enjoy all that the Red Dot has to offer. However, all that is about to change, thanks to the CIQ facility that began operations at ONE°15 Marina Sentosa Cove Singapore on 15 June 2019.

The facility was offi cially launched on 2 August 2019 with a ceremony that saw Senior Parliamentary Secretary, Ministry of Home Affairs & Ministry of National Development, Ms Sun Xueling, who was also the guest of honour; Chairman, Mr Arthur Tay; Acting General Manager, Sentosa Cove Resorts Management, Mr Ow Yong Haur Kit as well as the Club’s General Manager, Mr Teo Joo Leng in attendance.

In the two months the CIQ facility has been in operation, it has served more than 50 boats and the Club expects this fi gure to rise as more boaters get to know about the facility. The implementation of this new facility is also a feather in the Club’s hat, as it is presently the only private marina to offer such a service on the island’s shores.

It’s a progressive move forward, Mr Tay said, as the move comes hand-in-hand with Singapore’s growth as a regional yachting and boating hub, making it “necessary for our existing checkpoint facilities to grow in tandem to support the additional traffi c in our waters”.

With the immigration service provided at ONE°15 Marina Sentosa Cove, I have no doubt it will become an even more attractive choice for the boating community.

But progress also comes at a cost, said guest of honour Ms Sun, who noted in her opening remarks that while the Club’s CIQ facility will streamline on-site customs clearance and open up new and convenient travel avenues for its Members and the regional boating community, safety at the nation’s borders also remains a top priority. As such, the marina has been responsible in enhancing their security measures in the form of fences, CCTVs and access control gates. “Singapore is an attractive destination but it also goes to show that we have to safeguard ourselves against perpetual security threats,” she explained.

Additionally, the facility will boost ONE°15 Marina Sentosa Cove’s standing as an internationally respected marina and elevate Singapore’s status as the gateway to premiere yachting playgrounds in the region, said Mr Tay. It is, indeed, a timely initiative, especially with the construction of more Club amenities that’s now underway at Puteri Harbour, Malaysia and at the integrated marina at Nirup Island.

“Going forward, we will continue to fi nd new and innovative ways to value add to the marina, our Members as well as to all Singaporeans,” concluded Mr Tay. Ms Sun concurred wholeheartedly, saying, “With the immigration service provided at ONE°15 Marina Sentosa Cove, I have no doubt it will become an even more attractive choice for the boating community.”

Victoriya Khalimanova is the very defi nition of a 21st-century global citizen. Born in Ukraine, she spent her childhood on a wintry part of Russia surrounded by the sea. At the age of

13, her family relocated to Singapore, uprooting Victoriya from her quiet childhood—she suddenly found herself thrust into a multiracial, multilingual and multicultural cosmopolitan city.

“I never expected to leave Russia,” she recalled. “When I fi rst arrived in Singapore, I had no friends, didn’t like the food, didn’t understand the language and wasn’t used to the weather. I didn’t know what to do or where to go. I felt completely isolated.”

For three formative years of her youth, Victoriya was rocked out of her comfort zone, and forced to meet people of different races and backgrounds. This opened her eyes to cultural nuances, and what started out as a nightmare for the unwilling teenager became one of the most pivotal moments in her life.

“It changed my point of view drastically. I was forced to be more open and open-minded. Coming out of my shell, I began to appreciate how people from different cultures do things differently, talk differently and eat differently. It was very enriching,” she enthused.

This personal breakthrough shaped Victoriya’s career trajectory, and led the 25-year-old to where she is today—a Memberships Relations Manager at ONE°15 Marina Sentosa Cove since August last year.

She spends a typical day meeting Members from around the globe, recruiting new Members, and creating unique events for existing ones. Building relationships is key to her role. And her natural warmth makes it second nature for her.

“I think that if you are genuinely interested in people and want to fi nd out more about them, it shows,” she said. “But fi rst of all, it is important to be polite and understanding because you are meeting people from all over the world, and they might behave differently from you. You don’t know their life story and how it shaped them.”

“The highlight of my day is when I bring a smile to someone’s face,” she added. “One of the challenges I face is to fi nd two matching pieces of a puzzle when dealing with two groups of people. One group wants to sell their membership because they may be leaving the country, for example. Another group wants to buy it. My job is to listen closely and fi nd the best match that factors in the needs of both parties.”

Beyond her Memberships Relations role, the vivacious Russian also enjoys chatting with Members on a personal level. “The Club is very different from a hotel where people come and go. Our Members remain with us, so you get to know them and their families and develop a lasting friendship,” she said.

One of her favourite parts of the job is attending networking events. “I get to meet lots of interesting people who run their own business, travel to exotic places and share interesting stories with me. This has even inspired me to explore new places.

“Recently, I visited Sri Lanka. Nature is spectacular there. The beaches are great for diving and surfi ng. When I was cycling in the woods in Galle, I saw harvested rice fi elds full of peacocks. Within two hours, I counted more than 50 peacocks. I also found a lot of peacock feathers, which I brought home,” she added.

Because of Victoriya’s love of meeting new people and discovering new cultures, travel is also one of her greatest passions. Besides Sri Lanka, the young lady has also checked a few other countries off her bucket list.

A hobbyist painter in her free time, Victoriya adds the little cultural nuggets from her trips and daily encounters to her acrylic paintings. One of her latest paintings features the Hamsa Hand, an ancient Middle Eastern good luck symbol.

Victoriya also has an unusual affi nity for the ocean, having grown up on an island near Vladivostok, a mere 10-minute walk from the sea.

“The sea is in my blood—we have always been close to the sea. Shipping also runs in the family. My grandfather was the captain of a boat, and my father is in shipping as well,” she shares. “And now, at the Club, I fi nd myself surrounded by the sea and meeting yachting enthusiasts every day.”

It is no wonder she looks right at home halfway across the globe from Russia.

On 13 June, Members were introduced to the nuances of drinking whisky at a whisky appreciation class conducted by Jamey Merkel, Beam Suntory Brand Ambassador. The whisky in question was The Chita Suntory Whisky, the fi rst single grain whisky from the House of Suntory, Japan. As guests sniffed, swirled and sipped the drink and learnt of its history, WOK°15 Kitchen, the venue host for the event, served savoury light bites that complemented the complex nature of the versatile whisky, while highlighting its sweet notes. Guests also got a chance to taste Auchentoshan 12 Year Old and 18 Year Old malt whiskies.

EYES TO THE FRONT TERRACE TAKEOVER PARTYThe city’s style-set took to the roof to party till late When it comes to a party, nothing beats one with a view. On 6 July, 200 stylish guests, Members and others, got on to the rooftop of ONE°15 Marina Sentosa Cove to party the afternoon away. There were DJs on rotation, a band on play and a barbecue station serving hot dogs, steaks and fries—and bubbly. That the terrace was milling with activity till 10pm was enough evidence that a great time was had by all.

When it comes to good durians, Mao Shan Wangs are the obvious choice. Thirty Members gathered at the Rooftop Terrace on 12 July for the evening of relishment. That along with the food served—satay, prawn noodle soup and chicken rice—and the breathtaking view of the marina at sunset had Members quipping that they were looking forward to the next durian- tasting event.

On 20 July, ONE°15 Marina Sentosa Cove Chairman, Mr Arthur Tay, accompanied 100 Members on a boat trip to the soon-to-be-opened ONE°15 Marina site on Nirup Island. A total of 13 boats embarked on a day trip to the island. Upon arrival, Members and guests took to the beach to go jet-skiing, banana boating, snorkelling, kayaking and stand-up paddling, or just to frolick or lay back and relax on the sand. Overall, it was a Saturday well spent.

The best part about tropical weather? It’s perfect for a swim all day, every day. Sure enough, when Yvonne Swim School descended on the Marina’s infi nity pool for a swim camp, they had 19 eager young participants. Activities like Dive Torpedo, Catch the Rings, Pass the Hula Hoop kept the children engaged, who on their part kept the four coaches busy with their enthusiasm and energy. Clubbing fun with learning were individual skills training and team bonding games. It’s no wonder some of the kids were overheard saying that they “love swim camp”.

DIY PAPER FLOWER & VASE MAKING WORKSHOP Young minds spent a Sunday learning about conservation through art

They say it’s never too early to start children on recycling and eco-conservation. The fl ower and vase making workshop held on 28 July at Captain’s Table did one better and threw in crafting as well. Children learnt how to make fl owers and their vases using recycled magazine paper. What made the event even more interesting for the staff was how the young ones lent their own creative touches to make their fl ower shapes and designs unique, not to mention the ease and speed with which they caught on with the seemingly complicated process. It was a sign for ONE°15 Marina to organise more events of the same nature.

CARIBBEAN FOLKLORE NIGHT WITH DON Q Boaters’ Bar sees a slice of Colombia

On 26 July, popular Colombian singer Concha Bernal made a stop at Boaters’ Bar as part of her Asian tour. Bernal performed with her three-member band—Andres Camilo Cupaban, Yey Fry and Ramón Paez—who play a variety of instruments including traditional Colombian ones. Aside from her scintillating voice and the vibrant energy she and her band exuded, the rapport Bernal shared with her audience, engaging them and encouraging them to keep to the beat was the highlight of the evening. Adding to that Latino fl avour was Puerto Rican Rum Don Q, and with 1 for 1 (at $13++) cocktail deals, it was “happy hours” all the way at the packed bar.

ChineseWith Chinese people having put down their roots in many areas within and outside the country, the cuisine has also adapted and evolved based on the climate, history and availability of food. Therefore, Chinese cuisine off ers plenty of options for cooking and experiencing the taste of seafood. “Chinese prefer to steam fresh seafood and serve it with light superior soya sauce to bring out the fl avours. The other common method is deep frying the fi sh and pairing it with a sweet and sour sauce,” says Chef Soh. It is also practice to cook the fi sh whole, head included. Chef Soh recommends adding some fruits to make the dish more interesting.

MediterraneanUnder the umbrella of Mediterranean cuisine are many distinct fl avours and unique cooking traditions that have sprung up along its seaports and shores. Seafood remains at the heart of the cooking heritage for many of these cultures with grilling, sautéing and stewing being the most popular cooking methods. For example, the delicate taste of scampi, which are edible lobsters that can be found in the Mediterranean Sea, is best retained when poached in wine, garlic, shallots and herbs. Chef Soh also recommends sole, halibut, turbot, monkfi sh for Mediterranean cuisine. “These are oily fi sh, so the fl esh does not crumble easily when cooking. Oily fi sh go well with Mediterranean cuisine because the taste blends well with their ingredients such as olive oil, tomato and herbs.”

American The availability of seafood such as shrimp, salmon, oysters, and crabs such as king, snow and Dungeness crabs makes seafood a staple of American cuisine, particular along the coast. With its long history of immigrants, American cuisine has evolved to blend with culinary infl uences from around the world. Many cooking methods are used, including stewing, boiling—such as for the Louisiana Crawfi sh Boil—and grilling—for cooking with the Alaskan king crab and shellfi sh. In the northeastern region of New England, where seafood is plentiful, the preparation is according to the season. Haddock, for example, is baked in a casserole with a creamy sauce in winter, while summer sees grilled, smoked and poached fi sh. “Baking seafood in a casserole holds all the fl avours in, making it aromatic,” says Chef Soh. “Americans also like to roast seafood with Cajun spices and plate them in heavy sauces,” he adds.

French French cuisine varies according to the region, from the hearty Lyonnaise with its creamy sauces to the light Mediterranean fl avours of Provence. Normandy and Brittany being closer to the ocean are known for their seafood. Aside from the commonly used monkfi sh, Chef Soh recommends Dover sole with the tangy fl avours of grenobloise, a sauce made of lemon, butter and capers. Beurre blanc, a butter sauce made with wine, is another to consider. “The French usually stick to light and mild sauces to allow the freshness of the fi sh to be savoured,” he says. Aside from stewing to make a bouillabaisse, the French use a technique called à la nage, which combines steaming and poaching to cook seafood in a light, fl avourful broth.

Japanese Another cuisine synonymous with seafood is Japanese cuisine. Among its most famous dishes, sushi and sashimi, are paired with sake to bring out the fl avour of fresh seafood. Raw seafood delicacies in Japanese include uni, which refers to the edible gonads of sea urchin, and fugu, the notoriously poisonous puff erfi sh. That said, in addition to raw seafood, Japanese cuisine is also renowned for its cooked varieties. Grilling, pan-searing or braising with ingredients like miso and seaweed add to the natural umami in fi sh and other seafood. “Frying is used very sparingly in Japanese cuisine. And when they do, it is usually deep-frying with a light batter, and especially for fi sh,” says Chef Soh. He recommends using codfi sh, which is boneless and ideal for frying.

Thai With thousands of kilometres of coastline, Thailand has easy access to the Andaman Sea and the Gulf of Thailand. Fish and seafood dominate the diet of those living in the coastal areas. A typical Thai meal satisfi es the four primary fl avours of salty, sweet, sour and spicy. This makes Thai basil, Thai lemon, lime leaves, lime juice, chilli padi and lemongrass, which create a distinct fragrance, must-haves in Thai cooking. The cooking methods for seafood are varied and include boiling, grilling and stir-frying for crabs, fi sh, clams and cockles. Light salads can be prepared with prawns. Chef Soh recommends using Thai lemon for its stronger fragrance to enhance Thai-style seafood dishes.
