Once we got past the inial juggling of the table wines it was onto the Muscat and Sweet Red Forfied wines such as Grenache. Our first pick of the Muscat came in at 17 baume which gave us every indicaon that this was going to be a year for high sugars. All the ferments for the Muscat were wild ferments and on average a ferment went for 4 days. By the me we had finished the Muscat we had sugar levels in excess of 24 baume and even now we are not enrely sure how we actually managed to get some processed into the fermentaon tank in the first place. Last, but certainly not least, was the Muscadelle. This was the only variety in the 2016 vintage which seemed to behave as normal. When I say normal; I mean difficult, with ripening occurring at the end of vintage; as usual, but not really reaching the same comparable levels in sugar to other variees. In fact, we let the grapes hang out on the vine for over 2 weeks all the while hearing how this winery or that winery had finished or was about to. Finally, our paence ran out and we completed harvest on 21 st April. Overall we processed 197.38 tonnes for 2016 with about half of this being processed by the start of March. It’s hard enough to believe that we’re nearly halfway through the year let alone realize that this is the 70th newsletter I’ve put to-gether since I relocated from Adelaide in 1998. At last count we had 8,781 subscribers all around the world and I’m pleased to say Bill hardly ever refers to it as “junk mail’ any more!

As many visitors to our cellar door will understand, Rosewood is essentially a farm and these are just some of the little cross-breed orphans from the Autumn lambing. 2016 VINTAGE REPORT It looked like an early start to harvest around the end of Janu-ary with the 27th pencilled in, but the weather had different plans delivering around 25mm of rain between 27th and 31st. This rain event had a twofold effect. Not only did it delay the start of harvest but it also seemed to turbo-charge the vines. We found that upon commencement of picking the following week that the sugar levels of the grapes had increased signifi-cantly.

Initially we were not too concerned, but when we found that a block of Shiraz and Shiraz Mondeuse were both above 13 baumé and the Riesling at 11.5 baumé by 11th alarms bells started to ring. Couple this with the best crops for a few years, it quickly become obvious that this vintage was going to be one of logistical management. We had to juggle white and red ferments simultaneously, which for us is problematic as we utilise the same ferment tanks for whites and reds. The result was that every possible vessel which we could manage some kind of temperature control on was used, this included the old Milk Fridges; which were our only form of real cooling in the 70’s and 80’s.

There’s also a free wine check-in service so you can give the bus driver any wines you purchase which you collect before heading home.

Hopefully it will be fine but probably best to keep in mind that we sometimes have wet and windy weather at this time of the year.

There’s plenty to see and do — as usual there’ll be a few surprises along with all our favourites for you to check Out. Then, if you’re looking for something a bit more exotic, you can sample our world famous top end forti-fieds. The $10 tasting charge is refundable on purchase.

Beechworth’s famous Splatoons caricature artist Adrian Osborne will be here Sunday afternoon so a good chance to have your portrait done.

Then you’ll be ready to rock on with the ever popular Brook Chevell Band who’ll be partying on from noon until closing time at 4pm both days.

You probably run your own full size home refrigerator at about 5 degrees for most of the year and understand it’s job is to chill your food down quickly and reduce humidity.

Many of you will also have a bar fridge for keeping your drinks cold and have possibly wondered whether there is any value in having a special wine fridge.

The fundamental difference in the technol-ogy is that wine fridges take the tempera-ture down slowly and maintain optimal levels of humidity to provide perfect cellar-ing conditions for wine. The fact they don’t vibrate as much as our domestic models is another surprising important difference.

There are some very sound reasons why you’d want to provide the best possible envi-ronment for your favourite vinos and they do look pretty swanky but it may be easiest to rely on your friendly fine wine specialist until you win the lottery.

Old Vine Muscadelle Price Reduction Those who are long terms fans of this wine would have ob-served that during its lifetime there was a rapid rise in price from the initial $20 a bottle up to its current price of $55. This we felt reflected the age, quality and quantity of the product on offer.

Over the last couple of years there has been a conscious effort to bring the Old Vine Muscadelle more in line with the industry adopted Classification system by using the Classic category as a guide, which by definition is a wine which shows youth and primary fruit characters with some barrel maturation. This has been done by the introduction of more youthful components into the solero hence driving the wine to the more youthful end of the spectrum toward the Rutherglen Muscadelle and away from the Grand Muscadelle as per the classification definition.

With the introduction of the Old Vine Muscat; which is also in the classic classification, it is felt that a price reduction to align better with the Old Vine Muscat pricing and reflect the more youthful characters was in order. The new price is now $30 a bottle.

WINE EQUALISATION TAX DEBATE As you have no doubt seen in the media, the Federal Govern-ment is moving, over the next 5 years, to amend the Wine Equalisation Tax rebate which was introduced in 2004.

This rebate has been particularly useful for the thousands of smaller producers like us, whose slice of the pie is a mere 10% in a marketplace dominated by of a handful of very powerful wine companies.

Although it’s aim was to support small regional winemakers in Australia, other entities operating out of New Zealand and those who just operate with a shop-front rather than a genuine cellar door were able to benefit.

Much like our friends in the dairy industry, we’ll need to look for your support if we are to enjoy a sustainable future.

CHOCCY MUSCAT TART A flash looking dessert to whip up in minutes!

2Filling: 2 cups cream, 1/3 cup of cocoa, 400gm good chocolate, 60ml Muscat, 2 eggs + 1 yolk, Handful of Walnuts Base: 1 pkt crushed Scotch Fingers, 125gm Butter Method: Bring cream to the boil then remove from heat Stir as you gradually add chocolate In a separate bowl, mix eggs and cocoa Combine with chocolate mixture and add Muscat Pour into prepared crushed biscuit base Bake at 180◦C for approximately 30 minutes Cool then refrigerate for at least 2 hours Garnish with walnuts and serve with cream

Did you know… ● In bygone eras, wine was used to treat infected

wounds and, over the intervening years, we’ve heard of

a myriad of health benefits that can assist everything

from digestion and heart disease to preventing ingrown

toe nails (just kidding) if we adhere to the emphatic

moderate consumption of wine message.

● Researchers are also taking a keen interest in wine’s

antibacterial potential in regard to our oral health.

Wouldn’t it be great if, in the not too distant future,

we’re advised to have a glass of the good stuff to ward

off a sore throat or prevent cavities in our teeth!!!

protects us against cardiovascular disease, you need to

know this is only valid if we exercise as well.

● I was surprised to read that white wine has as much

potential to stain our teeth as red wine. Apparently,

acids in the wine attacks the surface of the teeth which

then allows staining to occur.
