Together they created a business project that would teach, through example, how to develop a viable business product, while helping the school raise funds for their Student Activities and Technology Projects. Later joining this partnership, David Starr, owner of Beanetics Coffee Roasters located in the Annandale Shopping Center on Columbia Pike, agreed to help Falls Church create its own personal blend of coffee. On Friday, January 04, 2008, Mr. Starr delivered a highly informative and entertaining presentation to FCHS culinary, photography and SCA student representatives. During his presentation, Mr. Starr shared the interesting history of the coffee growing process. He explained that, “coffee is grown all over the world between the two tropics. is cash crop p r o v i d e s livelihoods in many emerging and war torn countries from the Middle East to Indonesia, from Hawaii to Yemen, and from Rwanda to India.” He also discussed the science behind making coffee as well as the many challenges within this highly competitive ten billion dollar a year coffee industry. Students and staff were then treated to two coffee blends, Cro Magnum and Neanderthal, as a closure to Mr. Starr’s presentation. “We are very excited to cultivate our relationship with Beanetics and look forward to our fast approaching visit,” said Michael Brooks, Vice Principal at FCHS. On January 11th forty students from the Culinary Arts Department, headed by Chef Lorraine Lombardi, spent several hours blending coffee beans to create a product unique to Falls Church, while being filmed for the evening news by both CBS and NBC. is cupping, as coffee tasting and blending is known, produced a blend of darkly roasted 20% Brazilian, 30% Guatemalan and 50% Sumatra beans. is blend, brilliantly selected, has the most subtle underlying taste of chocolate which occurs naturally in the Sumatra beans. e Graphics Design and Technology Education students later created the FCHS logo for the bag, the Marketing students drew up a sales plan and have marketed the coffee to parents, community members, staff and to the school’s other business partner, Computer Science Corporation, who generously printed labels for the coffee bags. e SCA students adeptly organized a competition to name this coffee which was unveiled to the public February 28th at a school event known as Touch Base with Teachers. Aſter sampling, parents purchased the entire initial stock of this aromatic and bold body blend now known as JAGUAR JOE. A new supply will be roasted weekly to ensure the freshest taste. Falls Church High School expects to make at least $8,000 this year alone on JAGUAR JOE coffee. It will be served by the Boosters during athletic events, in the Café of the Culinary Arts Department, in the teachers lounge, and to all visitors and guests at the school. It’s noteveryday you see four pieces of pizzarunning down the street with someonedressed up as a piece of sausage in a hospitalbed. We are always looking for morecompetition and it is not too late to get inon the fun. We provide you with a hospitalbed all you have to do is find a team of five

people (one to ride in the bed and four torun with it) decorate it to your theme ofchoice and race it up and down John MarrDrive. If you have not attended one in thepast, what are you waiting for? Tax Talk: Helpful tips to save moneyThis quarter let’s look at the ECONOMICStimulus package signed in February.

Recovery rebates, known as “advance creditpayments”, reaching as high as $600 for singles,$1,200 for couples, and $2,400 for married and 4dependents will be deposited to an estimated 130million Americans. The rebates are also known asa refundable credit against tax. Here are thespecifics:

1. Net income tax liability not to exceed $600($1,200 for joint filers)

2. $300 ($600 for joint filers) if the individual haseither:

a. At least $3,000 of any combination of earned income, social security benefits, and certainveteran benefits, or

b. Net income tax liability of at least $1 andgross income greater than the sum of theapplicable basic standard deduction amount andpersonal exemptions

3. In addition to the basic rebate the law anadditional $300 per qualifying child up to $1,200

4. The recovery rebate checks (or direct deposit)will be paid out starting in May based on 2007 taxreturns or information form the Social SecurityAdministration or Veterans Administration

5. There is a second chance to receive the rebatewhen you file your 2008 return in 2009. This is fortaxpayers who did not get the full rebate or did notfile their tax return by April 15, 2008.

6. The IRS will calculate the proper amount ofthe rebate check based on the 2007 tax return

information or other certification.

7. Eligibility:a. Rebates begin to phase out qt $75,000 of

adjusted gross income (AGI) for individuals and$150,000 for married couples filing joint. Therebate phases out at 5% of the amount exceedingthe applicable AGI thresholds. Therefore, therebate phases out at $87,000 of AGI forindividuals and $174,000 of AGI for marriedfiling joint return.

b. Only taxpayers with social security numberswill be eligible.

c. Individual taxpayer identification numbers(ITIN) will not be acceptable substitutes.

d. A qualifying child must not have attained theage of 17, must be the taxpayer’s qualifying childfor purposes of the dependency exemption andthe child must be a son, daughter, stepson,stepdaughter, or descendant of such child,or a brother, sister, stepbrother, stepsister or adescendant of such relative.

8. The IRS intends on direct depositing ormailing the checks to individuals starting in May.

9. Because the rebate is an advance on 2008 taxreturns, the rebate will need to be reconciled on thetaxpayer’s 2008 tax return filed in 2009.

Next quarter the loose ends regarding the rebateand business incentives from the economicstimulus Bill.

The Annual Bedrace sponsored by the Annandale Chamber of Commerce,Special Olympics Virginia, and the Mason District Police Dept. will be held onSaturday morning, May 17th on John Marr Drive between Columbia Pike andLittle River Turnpike. Applications are still being accepted to participate. Spectatorsare welcome. This is a hoot to watch, followed by Carnival activities for the entirefamily. At Beanetics Coffee Roasters, our motto is the “evolution of bettercoffee.” That cup of coffee actually originates with the skill and laborof people who live between the Tropic of Cancer and the Tropic ofCapricorn – the world’s coffee growing region. When we receive a150 pound burlap bag of green coffee beans, the beans have traveledthousands of miles and have already been picked, processed, sorted,and bagged. Any mistake in a long series of steps will be tasted inthe final cup.

Coffee is produced by a tree -- the twomost popular species are the CoffeaCanephora, know also as coffearobusta, and Coffea Arabica. Thespecialty coffee trade relies on varietalsof the arabica to produce the highestquality flavors and aromas. Therobusta bean is a less expensive andmore acidic and is blended to produce

less expensive coffees. It is also added to espresso blends to addcreama, but delivers the bitterness of traditional espresso.

The coffee tree produces a red berry, or cherry. The coffee bean isactually the seed that is contained within the cherry. The cherriesare picked by hand over a several day period, picking them just asthey ripen. Because the plants usually grow on steep hills, thepicking process is difficult, with pickers paid on a per-basket basis.

Once collected the processing begins either at the estate, coop, or acentral milling operation. The beans are sorted, normally byimmersing them in water where the overripe berries will float tothe top and be discarded. The good berries are then put through amechanical depulper – a misnomer because it is a machine thatremoves the outer skin but leaves the pulp. The beans are thensorted again, this time by size (for example the Kenya AA is a largerbean then the Kenya AB). The pulp is then removed by fermentingthe beans. Depending on the scarcity of water, the beans areeither fermented in large tanks (“wet processed”), or are laid outin the sun (the “dry processed”). Either over-fermenting orunder- fermenting, an art form that is dependent on weather andother conditions, will ruin the coffee. The beans are then washedto remove the “mucilage” and dried mechanically or in the sun. Because the drying process changes the final moisture content ofthe bean, too little or too much will again ruin the product.

As you can see the evolution of a better cup of coffee is timeconsuming and labor intensive. We hope that next time you areenjoying that great cup of coffee you will appreciate the craft of thegrowers, the processors and the roasters. Together, they are theroots of the “evolution of better coffee.”

the area’s horticultural, historical and natural resources. It is also aplace that encourages you to drink in the beauty that is Virginia.People with disabilities can equally enjoy this magnificent space asmost gardens are fully accessible by level walkways and handicapfacilities are available in the Horticulture Center. At your very firstopportunity, visit one of the most picturesque and soothinglandscapes in the entire Washington area and in our own back yard.

At the Manor House, formal EnglishTeas are conducted throughout theyear. Groups may contact the HistoricHouse to reserve a private tour of thegardens followed by Tea or to attend aprogram on Tea Tasting where youlearn about the subtle nuances offlavor and familiarize yourself with the lingo of tea. Other teaprograms discuss Teatime Accessories, the Art of Faux Finish,Heirloom Family Photographs, and Beekeeping for Beginners. Allof the tea programs are followed by a traditional English tea withfinger sandwiches, pastries, scones, cream and jam. Bridal ShowerTeas are also possible with first a lighthearted history of bridaltraditions followed by the full English Tea. A new program on the history and traditions of Pic-niques will begin this year followed by, of course, a picnic. In 1994 a new Horticulture Centerwas opened with meeting andclassroom space, a research library,a multi-purpose room to seat 150people, a greenhouse, gardenthemed gift shop, and educationaldisplays. Classes are offered inbasic gardening; landscape design;

propagation; floral design; hardscaping; shade, water and kidsgardening; beekeeping; and, an ever growing list of fascinatingtopics. Additionally, a Master Gardener Program is available forthose truly devoted to the soil as well as numerous volunteeropportunities. Frequent visitors Tuesdays through Fridays areschool children ages 5-11 who are undergoing a hands oneducational experience that meets the standards of learningcurriculum for Fairfax County. Plans are underway for a new herbgarden and orchard using native plants. It is a massive undertakingthat promises to thrill all gardeners. Organized in 1940 and housed in an old shed, the AnnandaleVolunteer Fire Department began its service to the community withone antediluvian truck. By 1944 a dedicated one story colonial stylefire house was built that held four bays for the forest fire truck, onehigh pressure truck, one combination high pressure truck, and anew ambulance. By the mid fifties, the structure was expanded totwo stories and much later still, Ossian Hall was constructed ontothe back. Ossian Hall is now the site of Bingo held every Mondayand Thursday evenings from 6:45 to 10 PM, attracting players fromeven parts of Maryland and Washington DC. Profits from Bingo,along with the fund drives scattered throughout the year, financethe vast majority of expenses at both the 7128 Columbia Pike and8914 Little River Turnpike Stations. Staffed by the volunteer force,Bingo Nights provide safe,enjoyable entertainment aswell as camaraderie to 125to 150 people each session.On Memorial and LaborDays and at Christmas theyhave a holiday programwhich sometimes includesadditional prizes and freefood. Christmas Holiday Bingo has over 175 raffle prizes. Whencoming to bingo, you need not stop for dinner en route sinceOssian Hall boasts its own caterer, Lynette, who dishes up a largeand varied menu of home cooked comfort foods. She also offersfull service catering for anyone renting Ossian Hall for daytimeevents and off site catering. The hall can accommodate up to 350people and can be rented for antique or flower shows, luncheons,training seminars, business meetings, fund raisers, and reunions.Rental for weddings and receptions is done on a very select basis. The Annandale Volunteer Fire Department, which has served ourcommunity so faithfully, is in need of additional volunteers. “If youare looking to do something for the community, somethingvaluable, this is the place,” says Raju Khemani, a long timevolunteer. “We are like a family, we share equally in the work,

we are a home away fromhome.” Volunteers begin withtwenty hours of initial trainingat the Annandale Station.Men and women at least 18years of age can dedicatethemselves to work inadministration, helping withthe canteen and Bingo Nights,

or they can train as Emergency Medical Technicians and FireFighters. If the latter is their choice, they will undertake additionaltraining both at the Fairfax County Rescue Academy and/or FireSchool. The full schedule of training can take up to twenty months.Upon graduation, they will supplement the career fire fighting staffassigned to Annandale. Volunteers are asked to dedicate 240 hoursper year. The Annandale Community Park, often referred to as HummerRoad Park, houses both the Hidden Springs Nature Center and thePackard Center where the gallery store of Artisans United is located.The official address is 4022 Hummer Road but the Packard Centeris not visible from Hummer Road. Do yourself a favor and take a drive into the park and take your first right. The secondbrick building on the left (actually a very old and delightful home)is the Packard Center. Parking is plentiful. Between thirty and fortyartisans fill the gallery with dazzling gifts appropriate for all yourgift needs.

The purpose of ArtisansUnited is to promotejuried crafts made byartists from this area. Thisgallery serves as the mainfund raising arm for thisnon- profit organizationalthough some grants andmembership dues fill outthe budget. As many as 15 Guilds are represented from quilting,weaving, knitting, and wearable art, to art glass, painted porcelain,pottery, and gorgeous reasonably priced jewelry. One jewelryartisan is Julie Rominger, credited to be a master of fused glass withdelicate silver fittings. There is a nice price range represented butmany gifts can be found regularly for under $35.00. Difficult tolocate hand dyed skeins of yarn; stunning winter hats, scarves, andsweaters; beguiling hand knit baby blankets; painted silk scarvesand silk ties for men; hand made cards; and, clever ceramic bowlsand brie dishes are all offered for sale. Displays are changed everyother month to ensure shoppers an assortment of gorgeous gifts.The first Thursday of every odd month special Guild Shows areinstalled to increase the range of gifts available for sale.

On Saturday, September 24, 1955, a festival simply known as “Annandale Day” was celebrated by merchants and citizens alike. Thefollowing schedule provides an insight into the activities. According to their program, the stores in Annandale featured the best bargains of theyear along with free balloons and other gifts for children.

10:00 AM - DOG SHOW - on the grounds of the new Annandale Recreation Center Entries in the following classes were judged. Two prizes in merchandise certificates wereawarded for each class. The judge was Frank S. Deane.

11:15 AM – DEDICATION OF SWIMMING POOL – Annandale Recreation CenterThis was the largest community swimming pool in the entire Metropolitan Washington area. Therewas also a softball field to be well used throughout the coming years, and the first wing of theCommunity Center Building – the TEENSPOT. In order to finance the entire project, shares ofstock were sold to community members. Their long term plans were to build a skating rink, a largecommunity center building, tennis courts, playgrounds, and as many other facilities as they couldfind the money and/or the help to build. For the dedication ceremony picnic tables and facilitieswere available along with sandwiches and soft-drinks. (Interesting to note, Annandale is still waitingfor our Community Center to be built.)

1:00 PM – PARADEStarting at Chatelain Village just east of the Baptist Church and traveling west on Columbia Pikeand Little River Turnpike, the PARADE will proceed to McWhorter Place where they will take a leftto disband. During this same five year periodthe housing developments of Broyhill Crest, Rolf Heights, LakeBarcroft, and Raymondale were built. HOW BURKE & HERBERT, A GROUP OFDETERMINED LADIES, AND A BASKETOF EGGS SAVED THE FUNDS FOR GEORGEWASHINGTON’S MOUNT VERNON ESTATE

In 1853 Ann Pamela Cunningham founded the Mount VernonLadies’ Association to preserve George Washington’s home. Turning over a sizeable down payment, they contracted to buy theestate for $200,000 from John Augustine Washington in 1858.

Mr. Washington deposited the money at Burke & Herbert Bank,where he knew his friend, John Burke, would, as Washington said,“Protect it as thought it were his own. When the Civil War brokeout, Alexandria was occupied by the Union and authoritiesdemanded the Mount Vernon money from the bank. But is wasgone. John Burke had hidden the treasure at home in his wife’s closet.

John’s wife, Martha, was a Union sympathizer but she knew if thefunds were seized, the shrine to the late President might never hap-pen. When soldiers searched her home, an officer stopped at hercloset. “What’s this?” he asked. She replied, “It’s my closet. Don’tyou want to search it?”

The man closed the door and said, “No madam. It is not my wish tosearch a lady’s closet.”

John Burke knew he had to find a better hiding place. He calledupon a young woman named Sarah Tracy, who worked at MountVernon and sold eggs to raise money for the estate. She had a passfrom the Union that allowed her to travel freely in her horse buggy.John hid the money in the bottom of the egg basket.

Sarah drove her buggy past Union soldiers, crossed the Potomac,and went to Riggs Bank. There, she placed the funds in a safetydeposit box and returned the key to John Burke. When the warended, the money was safe and Mount Vernon Estate was preserved.Burke and Herbert still proudly keeps safe monies of the MountVernon Ladies’ Association. Once again, Burke & Herbert provesit is a bank with a legend where you are a person, not an accountnumber.

Check that theexterior paint, especially the front door and trim, are in goodrepair. Clear toys, garbage cans, unused flower pots and any debrisfrom eyesight. Clean the gutters and remove moss and grime frompaths, siding, and roof. Sweep the walks and keep them clean. If theweather permits, plant bright annuals in beds or large pots tofreshen the look of the landscape.

KITCHENSRemove every picture, magnet, and message from the refrigerator.Take everything possible off the countertops including smallappliances. Brighten the kitchen with a new coat of paint and freshlight bulbs. If the room is naturally dark, change the windowtreatments to let in the most light possible, trim tree limbs outsidekitchen windows, and consider adding under counter lightingwhich is inexpensive and easy to install. Remove outdatedwallpaper and flooring. Clean this room as if your life dependedon it.

BATHSRemove items from countertops, tub, shower stall and commodetop. Put only necessary items into a zip lock bag and tuck it underthe sink or anywhere out of sight. For a relatively small investment,with proven better than dollar to dollar return, consider updatingthe plumbing and lighting fixtures, toilet seat, and shower tiles toadd a more modern look. You can often purchase close-out cabinetsand fixtures at vastly reduced prices. If your budget will not allowreplacement, paint the room and possibly the cabinets to provide afreshened look. Limit the towels on display to 2 colors. Clean,clean, and clean again. The baths need to sparkle.

REVIEW THE ENTIRE INTERIOR, ROOM BY ROOMPaint and patch all walls and trim as needed. Keep your colorsneutral but warm. Rearrange pictures and objects on walls,de-cluttering as you move from room to room. Rent a storage unitfor these possessions until you move. Clean all carpets, windowtreatments, and light fixtures. Wash the windows.

This article is part two in a series entitled, “Cooking Survival Kit.” Partone of the series focused on knives, including which pieces are mostcritical to the success of any cook, how to shop for knives, and how tomaintain your blades once they are in use in your kitchen. This articlewill take a closer look at that wonderful companion to the knife – thecutting board.

So, armed with the knowledge gained in the first article in thisseries, you have spent your money on a handful of good knives andnow it is time to put them to good use. The first thing you are going toneed in order to get cooking is a safe and durable cutting surface. Thereare a variety of cutting boards on the market today, including: Glass,Polyethylene Plastic, Wood, Bamboo, and the latestnewcomer, Wood-Composite. Let’s dismiss one of these right away.Cutting on a glass cutting board is murder on your high-quality knifeblades! The hard surface will make your knives dull anddangerous to use in no time flat. Some of the newer naturalwood-composite boards, plastic, or the more traditional mapleor bamboo varieties are a much better choice when it comes toextending the lifespan of your knives. So, which to choose? As withmost things, it depends on your needs and your preferences. Let’s takea closer look each option.

Wood-Composite Boards are the newest release in the cutting boardmarket. These boards, which are comprised of environmentallyfriendly natural wood fiber laminate, are intended to leverage the bestfeatures of both their plastic and wood counterparts. They aremarketed as dishwasher safe, non-porous, and basically maintenance-free cutting surfaces that look and feel like wood, but are easy to cleanlike plastic. Unfortunately, I have not had the opportunity to use thisstyle of cutting board personally, so I can only offer my initialimpressions thus far. My first observation is that these cutting boardsare typically very thin. This means that they provide little verticalclearance between the cutting surface and the counter-top during use.As a result, you may find yourself banging your hand or knucklesagainst the counter when you try to cut your food. Some independentusers of these cutting boards have also reported that they are not asdurable as their competitors and tend to show cuts more readily withrepeated use. My hunch is that this relatively new technology willimprove with more time on the market. The most popular brand ofthis cutting board, Epicurean, can be purchased at most home storesfor less than $30.

Plastic Cutting Boards are popular with many consumers becausethey are lighter than more traditional wooden butcher blocks, areinexpensive, and are dishwasher safe. Some also believe that plasticcutting boards are less likely to harbor dangerous bacteria than theirwooden counterparts. Be aware, however, that independent laboratorytesting has resulted in different conclusions. The general consensus ofthese tests seems to be that all types of cutting boards are safe, assumingthat they are thoroughly washed with hot soapy water after each useand that they are replaced when they show excessive wear (deepgrooves and cuts that may be impossible to clean). So what’s thedownside? Plastic cutting boards tend to hold more stubborn foodstains, particularly after repeated use. Much like theirwood-composite counterparts, some of the thinner styles on the

market (those paper-thin flexibleplastic cutting “boards” areparticularly problematic) lackvertical clearance between thecutting surface and the counter.Many of these boards are alsoslippery and too lightweight. Theentire cutting board may movearound the counter top each timeyou put pressure on your knife tomake a cut. If you find that youhave this problem, try wetting adish towel, wringing it dry, andlaying it flat on the countertop.Put your cutting board on top ofthe damp towel and it should stayin place for you. If you prefer aplastic cutting board, make surethat you purchase one that is thick enough to give you some clearancefrom the countertop and is heavy enough to stay put during use. Youcan expect to pay $20 or less for this variety of cutting board.

Wood Cutting Boards are known for being solid and extremelydurable, yet gentle on your precious blades. Because they are typicallylarge in both size and weight, however, they are also often seen as ratherunwieldy and inconvenient for everyday kitchen use. In addition, theyshould be hand-washed and thoroughly dried after each use and oiledon a regular basis to prevent staining and splitting. Finally, there is theissue of price. You can expect to pay up to $100 for some of the heftiestwooden boards. The good news is that high-performing smaller,lighter, and cheaper wooden boards can be had for as little as $20-30.A good option is the “J.K. Adams Takes Two” model, which is made ofrock sugar maple and weighs less than 4 pounds. Just be sure to carefor the board correctly, by washing and drying it thoroughly, andregularly applying food-grade mineral oil (usually labeled wood orbamboo oil) to extend its life.

Bamboo Cutting Boards are made from a highly renewable kind ofgrass that grows much more quickly than the trees used to producetraditional wooden cutting boards. They are lightweight, durable, andgenerally provide all of the benefits of their wooden competitorswith less heft and environmental impact. What’s more, some recentlaboratory tests have shown that bamboo has natural anti-microbialqualities that may actually help to kill bacteria transferred to the surfaceof the cutting board during use. (This is, of course, no substitute forthoroughly washing the cutting board in hot soapy water after each use,but it may be a nice added benefit to choosing a bamboo board). Unfortunately, bamboo boards also have their shortcomings, most ofwhich are shared with their traditional wooden counterparts. Theymust be oiled occasionally to prevent splitting and can carry a similarhefty price tag. Cheaper versions may also be less durable over time.TruBamboo, Joyce Chen, and Totally Bamboo are three companies thatmake good quality bamboo cutting boards in the $30-40 range.

A Short and Concise History of theUnited States FlagAs promised in our last issue, your Annandale American LegionBicentennial Post 1976 presents this short history of our nation’sflag. Our flag is the third oldest of the National Standards of theworld. The flag was first authorized by Congress on June 14, 1777.This date is now observed as Flag Day throughout America. Theflag was first flown from Fort Stanwix, on the site of the present cityof Rome, NY, on August 3, 1777. It was first decreed that thereshould be a star and a stripe for each state, making thirteen of both;for our nation at that time had just been assembled from the originalthirteen colonies. There were several versions of our country’s firstflag (Bennington, Stars and Stripes [Standard Version], and “BetsyRoss” Flag). Each had 13 stars and 13 stripes. In 1791, Vermont,and in 1792, Kentucky were admitted and the number of stars andstripes was raised to fifteen each. As other states came into theUnion it became evident there would be too many stripes. In 1818Congress enacted that the number of stripes be reduced andrestricted henceforth to thirteen, representing the thirteen originalstates; while a star should be added for each succeeding state. Thatlaw is the law observed today.

The name “Old Glory” was given to ourNational Flag on August 10, 1831, byCaptain William Driver of the brigCharles Doggett. The flag was firstcarried in battle at the Brandywine onSeptember 11, 1777. It first flew overforeign territory on January 28, 1778, atNassau, Bahama Islands, Fort Nassauhaving been captured by the Americans

in the course of the war for independence. Today, it flies over 50states, extending across the continent, and over great islands of thetwo oceans; and three hundred and three million people owe itallegiance.
