Ever the optimist - I believe you really can have it all!! Yes you can have your cake and eat it too :)

A NOTE FROM ANNAGrowing up in a family that loved to bake, and host morning teas, I also love to do the same! There’s nothing like sitting down with a plate of pretty cupcakes, a nice coffee or tea and relaxing with friends.

This was a large part of the inspiration behind creating Anna’s Low Carb Kitchen products. I didn’t want to have to miss out on entertaining or hosting events, yet I also didn’t want those horrible, lethargic feelings that arise from indulging in too much sugar.

In the ebook I have made it super simple for you to look like a super host and wow your guests with treats so pretty and tasty they won’t even know that they are also good for them!

Orange Almond cupCakesMakes: 12 regular sized cupcakes

INGREDIENTS

1 packet of ALCK Low Carb Vanilla Cupcake Mix (220g) Rind of 1 orange - finely grated - (3 tablespoons) 1 cup milk of choice (250ml) 2 eggs 1/3 cup melted butter (70g)

METHOD

1. Pre heat oven to 180 deg or 170 deg if fan forced.2. Place cupcake mix in a large bowl. 3. In a smaller bowl whisk together milk, eggs, and grated

orange rind. Add in melted butter, whisking as you go.4. Pour egg mix into the cupcake mix - folding gently to

combine. Do not over mix, otherwise cupcakes wont rise.5. Using a teaspoon, portion mix into 12 oil sprayed cupcake

wrappers and bake for 15-20 minutes.6. Remove from tin and let cool.

ICING/GLAZE

1. Place 1/3 cup (75g) ALCK Low Carb Icing Mix sachet in bowl & add 1T orange juice stirring to combine.

2. Spoon glaze on top of each cupcake.

DECORATE

With sliced orange rind and flaked almonds.

STORAGE

All our products are preservative and sugar free, so please keep refrigerated. Un-iced cupcakes can be frozen for 3 months.

Mixed Berry CakesMakes: 12 regular sized cupcakes - You can do 2 different berry flavoured icing for a pretty table look!

INGREDIENTS

1 packet of ALCK Low Carb Vanilla Cupcake Mix (220g) 1 cup milk of choice (250ml) 2 eggs 1/3 cup melted butter (70g)

ICING INGREDIENTS

2 large strawberries - fresh or frozen OR 1T frozen blueberries or raspberries (microwaved until soft)

125g soft cream cheese 40g soft butter (2T) 1/3 cup (75g) ALCK Low Carb Icing Mix

METHOD

1. Pre heat oven to 180 deg.2. Place cupcake mix in a large bowl. 3. In a smaller bowl whisk together milk, eggs.

Add in melted butter, whisking as you go.4. Pour egg mix into the cupcake mix - folding gently to

combine. Do not over mix, otherwise cupcakes wont rise.5. Using a teaspoon, portion mix into 12 oil sprayed cupcake

wrappers and bake for 15-20 minutes.6. Remove from tin and let cool.

ICING/GLAZE

1. Microwave cream cheese & butter together for 30 seconds to soften.

2. Add ALCK Low Carb Icing Mix to cream cheese & butter, add mashed berries on top.

3. Using electric beaters, beat until light & fluffy. Optional: add a few drops of pink colouring for extra pink cupcakes!

4. If your icing is runny, place in the fridge for 30 mins and it will set.

DECORATE

With fresh berries - whole or halved

healthy Chocolate mud cupcakesMakes: 10 muffins

INGREDIENTS

1 packet of ALCK Low Carb Chocolate Cupcake Mix (220g) 1 cup milk of choice (250ml) 2 eggs 1/3 cup melted butter (70g) 100g dark choc chips 1 small zucchini (100g)

ICING INGREDIENTS

1/3 cup (75g) ALCK Low Carb Icing Mix 1/3 cup (40g) cocoa powder 40g soft butter (2T) 1 tpsn milk of choice (10ml) 125g soft cream cheese

METHOD

1. Pre heat oven to 180 deg.2. Place cupcake mix in a large bowl, add zucchini and dark

choc chips.3. In a smaller bowl whisk together milk & eggs.

Add in melted butter, whisking as you go. 4. Pour egg mix into the dry mix - folding gently to combine.

Do not over mix, otherwise cupcakes won’t rise.5. Using teaspoons, portion mix into 12 oil sprayed cupcake

wrappers and bake for 15-20 minutes.

ICING/GLAZE

1. Microwave cream cheese & butter together for 30 seconds to soften.

PikletesMakes: 18 pikletes

INGREDIENTS

1/2 cup (60g) ALCK Low Carb Pancake Mix 1/2 cup milk of choice 1 eggs

METHOD

1. Place all ingredients together in a large bowl. Using a hand whisk or fork, whisk all ingredients together.

2. Heat a non stick fry pan with oil - heat until nearly smoking, then reduce heat to low.

3. Using a tablespoon, portion out pancake mix, forming pikelets about 4cm in diameter.

4. Cook on low heat until bubbles form. Using an egg flip, flip pikelets and cook other side for 30-60 seconds.

5. Place cooked pikelets on a plate and cover with clean tea towel to keep warm.

DECORATE

1. Serve pikletes together with raspberry chia jam (see below), and cream.

2. Decorate plate with fresh berries if desired.

Raspberry Chia JamINGREDIENTS

1 cup fresh or frozen raspberries 2 tbsp water 2 tbsp chia seeds

METHOD

1. Place all ingredients in either a microwave safe bowl, or small saucepan

2. Cook for 1o minutes (stovetop) or 5 minutes (microwave)3. The mixture will bubble and thicken4. Let cool and, if you prefer smoother jam, you can blend

with a hand mixer – or leave as is to enjoy the chunks of berries.

STORAGE

You can store this jam in an airtight container for up to a week – without the usual high sugar content and preservatives, it won’t last as long as store-bought jam.

Vanilla CreamMETHOD

1. Pour 300ml cream into a clean, dry, mixing bowl.2. Sprinkle on top 1T sweetener of choice and 1 tpsn vanilla.3. Using electric beaters, beat until stiff peaks form.4. Place cream in a bowl to serve with Raspberry Chia Jam

and Pikelets.
