Italian cuisine is undoubtedly one of the most renowned features of our country in the world. In order to celebrate such an important aspect of our culture, this year the Italian Ministry of Foreign Affairs and International Cooperation, together with numerous other parties, has organised the First Week of Italian Cuisine in the World. The initiative has been met with great interest and the program for the week includes over 1,300 events across 110 countries.

Italian cuisine has its origins not only in popular culture, where humble dishes were born, but also in the very sophisticated culinary traditions which reached their peak in the Renaissance courts. Having said this, Italian cuisine comes from that same mix of history, cultural exchanges, creativity, spirit of initiative and passion for what is good and what is beautiful which are at the foundation of all of the most elevated manifestations of Italian culture. Of all of the objectives of the First Week of Italian Cuisine in the World, the most important one is to enhance the link between Italian cuisine and other expressions of Italian culture and art.

I am proud and delighted to introduce to you the numerous activities which will take place in Dublin, thanks to the many partners in the Italian food industry in Ireland under the coordination of the Embassy of Italy and the Italian Institute of Culture. The program is extremely rich and interesting, covering many gastronomic and cultural elements. It is our hope that a vast public will take this opportunity to learn more about Italian cuisine, by attending the scheduled events and combining the pleasure of the palate with cultural enrichment.

Michele Sartori from Acetaia Giusti will recount the compelling story of his company, which is one of the oldest businesses in the world. Michele will also share his expertise on the product and explain how to recognise a good quality one. Back in 1716, Cosimo III De Medici declared and branded four Tuscan areas (today known as Chianti Classico) for the production of wines. The Chianti classic region has been designated a UNESCO World Heritage Site. Paolo Nevini from Grevepesa, Chianti Classico wines and representative of the Consortium of Chianti Classico producers, will take you on a wine tasting journey through the Chianti territorio. However, Tuscany is not only renowned worldwide for amazing wines, it also boasts a unique cuisine based on local seasonal produce. Along with the wine tasting, patrons will be sample Salcis Tuscan sheep cheese infused with truffle, black pepper or saffron.

Restaurant dining is more than an eating experience. When eating in a restaurant, the diner joins a group of fellow patrons and the dynamics of the kitchen, floor staff, bartenders, food and wine impact on the overall dining experience. Nowhere is this most prevalent than an Italian restaurant where food, wine, chatter and the clinking of glasses create harmonious joviality. An overhead projection of La Cena invokes the typical Italian trattoria experience of dining with convivial conversation punctuated with Italian cinematic imagery.

What is cooking? The amalgamation and transformation of raw materials. Stefano Crescenzi likes to remind younger chefs of the importance of respecting traditional recipes, as a good understanding of these will give a chef the bones, the structure, the keys of Italian cooking. It is important to have strong points of reference. He believes that to change traditional recipes to suit a particular taste or sell more dishes, as is so prevalent in the restaurant sector, is extremely damaging to these culinary milestones.Cookery demonstration by Stefano Crescenzi followed by a question and answer session.

• 21 – 24 November Carragh Quinn, a recent fashion graduate from St Martin, London, will showcase her graduate collection. Carragh will be resident at L’Officina restaurant to discuss her work and techniques with young aspiring fashion designers. Her research focuses on the Italian artist Artemisia Gentileschi, one of Italy’s most skilled female painters of the 17th century. Dunne & Crescenzi - L’Officina Kildare Value Retail.

• 21 – 25 November Calabrian artist Antonio Caporale A series of paintings portraying the poetry of the Calabrian poet Costablile. Dunne & Crescenzi, Sandymount Restaurant.

• 20 – 25 November - Emerging Irish artist, Connie McKenna, presents a series of multimedia works on paper titled Vegetable Transversals. • La Sagra dell’ Amatriciana - Dunne & Crescenzi The devastation of the small town of Amatrice struck a cord with Italians home and abroad, being synonymous with the pasta all’amatriciana dish. Let us not forget Amatrice. D&C invites you to partake in this earthy dish along with a glass of wine in any of their restaurants for €18 during the Prima Settimana della Cucina Italiana nel Mondo.
