INTRODUCCION
About «The dishes of my region» I like to introduce them the traditional «Ajiaco Santafereño» It’is a
delicious soup with chicken.I invite you verify it for yourself .
«AJIACO SANTAFEREÑO»
INGREDIENTES
• 2 chicken breasts• 2 ear of maize• 1 «arracacha»• «criolla» potatoe (1 pound), • «sabanera» potatoe (1 pound)• «pastusa» potatoe (1 pound)• scallion (1 section)• «guascas»• coriander• 3 garlics• salt to taste.
Process of preparation
Make an tied with the scallion , "guascas" and coriander.
Put that in a pot with cold water
Then add the chicken breasts and the garlics
Turn on the stove and put the pot to cook
Meanwhile peel the ears of maize and slice them in pieces
Ten minutes late put the pieces in the pot
Then peel the potatoes and the "arracacha" , wash them and put them in a pot with cold water for ten minutes. Then slice them.
Twenty minutes late move out the ears of maize , the chickens breasts, and the tied with the scallion , "guascas" and coriander. Again put to the pot to the fire until it boils and mix with a ladle
Cook over medium heat with the pot without lid.
Then add "guascas" , mix , turn off the stove and let stand it.• Shred the chickes breasts with the hands y put it over
the soup to serv it.• Serv the "Ajiaco Santafereño" and go with avocado pear
and rice.
