It might be more appropriate to call these subway cushions “trolley” cushions: Each one, down-filled and made from recycled canvas (the lat-est batch had a previous life as United States mailbags), is silkscreened with stops on the original 1947 Toronto trolley-bus line. “I haven’t even changed the order of the names,” says Christine Flynn, photographer, designer and owner of the reclaimed industrial furniture and art stores Love the Design. Now with two loca-tions – the first in Leslieville and the other in the interior-decor hub of Summerhill – Flynn is leaving her mark on Toronto. Clearly, Toronto is leaving its mark on her, too.

A visit to chef Martin Picard’s sug-ar shack, a rustic 130-seat cabin north of the city, has become a rite of spring for Montrealers – one that involves speed-dialing for reserva-tions and packing the Tupperware containers for leftovers. In the fall, Picard turns from maple syrup to another Quebec resource: apples. The varieties change through the season: Look for Cortland, Lobo and McIntosh in your apple pie – or spun into cotton candy. Picard also

uses area producers – sheep’s milk cheese and honeycomb come from just up the road in Mirabel – for the rest of his 10-course menu, which runs from Gruyère-topped soups to headcheese. Last year’s show-stopper was ravioli filled with liq-uefied foie gras, cavatelli and foie gras confit tossed with an apple- infused sauce in a hollowed Parmesan wheel. Pour les Montréalais (qui doivent se ruer sur le téléphone pour réserver une table et prévoir des contenants pour col­tiner les restes), une visite à la rus­tique cabane à sucre de 130 places du chef Martin Picard, au nord de la métropole, est un rituel printanier. Mais à l’automne, Picard troque le sirop d’érable pour un autre produit vedette du Québec : la pomme. Les

Built in 1931 on the grounds of Exhibition Place, the Horse Palace is an homage to Art Deco architec-ture – note the equine friezes in the masonry. With hundreds of stalls on two floors, it’s still consid-ered one of the best riding facili-ties in the country. Under the vaulted glass ceiling, learn the walk, trot and canter gaits (the space is too tight for a gallop).

According to instructor Anne Louise Abraham, first-timers sad-dle up on an “old faithful” quarter horse named Fergus, but with practice you might mount KC, a more “athletic” Clydesdale thor-oughbred cross. For the horse-shy, there’s always Cooper, a miniature pony who stands two feet tall.
