Martin Picard just started a brunch last winter on Sundays from 10 a.m. to 2 p.m. The concept is an elaborate version of dim sum, where the waiters pass by your tables with carts. They serve things like squid ink risotto, duck-fat baked crepes with spinach, roasted salmon head, lobster dumplings and, of course, dessert – apple turnovers, profiteroles, it’s all there. “Smart people aren’t afraid to ask questions,” says Healthy Butcher co-founder Mario Fiorucci, whose seminars feed his clientele’s appe-tite to know more about their food. The “aha” moment for meat lov-ers comes when they suddenly understand exactly what that cut is they’ve been ordering. Small groups get intimately acquaint-ed with the cuts of a single animal or delve deeper into the arts of roasting, charcuterie and sausage making. Just in time for barbecue season, courses on smoking foods touch on the importance of brin-ing and the flavours imparted by
different types of wood. Fiorucci is serious about sourcing top-quality, local meats for his shop, and staff know everything about every cut of meat they sell: where it came from, what the animal ate and how to cook it. Time to beef up your knowledge. « Les petits vites n’ont pas peur de poser des questions », lance Mario Fiorucci, cofondateur de Healthy Butcher, dont les ateliers culinaires rassasient une clientèle plutôt regardante sur le contenu de son assiette.
