MY HUSBAND USED that phrase to describe the way in which he hopes our mutual retirement will unfold. Ian’s “idlement” began at the beginning of this year and mine, as of this printing, is official. However, we are far from being idle, although we now have the fearless option to do nothing if we so choose.

I always envisioned my retirement calendar chock-a-block with volunteer assignments

and so I set out ahead of time to learn of local opportunities. There’s no shortage on that front. Time helping at the food bank and assisting seniors top the list.

Unlike other retirees who look forward to time cruising on the high seas or trekking in far off lands, long-distance travel is not a number one priority for either of us. I expect that Ian will get to know the lay of the land at as many local golf courses as there are sunny and/or cloudy days this year, whereas I’m keen to spend my greenspace time exploring hiking trails with a nearby hiking club to guide the way.

Of course, there’s no shortage of books to read. Among the titles I intend to devote undivided attention to is Hermann Hesse’s The Glass Bead Game; I’ve had a copy for many years now without getting too far into it whenever I thought I had the time. I also fancy starting a book club with friends I have made since moving to our little town.

Which brings me to emphasize how significant friends are at a time like this. All too often I confess to seeing friends sporadically over the years, slotted into a schedule like an assignment with a deadline. Those days are gone, to be replaced with long leisurely lunches discussing the minutiae of our lives.

I now appreciate that enduring friends plant themselves in your soul like hardy perennials that can weather all climates and still rise elegantly to greet you after wintry absences.

Thank you to the many ACTIVE LIFE contributors who shared their time and expertise over the years. I know my successor Catherine Daley will thoroughly enjoy managing this inspired publication.

They can help you understand where you realistically stand financially. This would include an accountant, your financial advisor and lawyer if you have one. Also take some time to

The day that you shut down your computer, finish your shift, or walk out of your office building, for the last time can be filled with mixed emotions. Most retirees I know are excited about the future but also anxious about what the next chapter in their life will look like. Many also wonder if they have saved enough money to do what they want to do in retirement.

You’ve spent your working life preparing for this time, saving your money, learning how to invest it and making plans. In the 90 days after you retire it is crucial you get a grip on your personal finances and know exactly where you stand. Here’s how to spend the first three months of freedom from work.

meet with your kids, or someone else you trust, after. This is to let them know where your finances are at. It’s important that someone close to you knows about all your investments, bank accounts and other assets.

Set goalsJust because you have retired doesn’t mean you stop setting financial objectives. Make a 5-10-15 year plan. What do you want to accomplish and get done working with this time horizon? If an extended world tour is on the agenda in five years, you have to start planning now, making sure you have enough money. Also, start making arrangements for someone to watch your place while you’re gone, or if you’re renting it out (which is the smartest thing to do) finding a tenant by then.

Your legacyNow is a good time to start thinking about your legacy. It’s not coming for many years, but now that you have stopped working you should have a fair idea of how much money you will

want to leave as an inheritance. Start thinking about where you want your assets to be distributed. If you plan on spending it all on yourself, that is awesome, but still make a plan. Some retirees choose to give their children a living inheritance, which is a great idea. You get to see how that money will help them and it also can save on some capital gains tax.

Spend itLike I said at the top, you’ve been saving for retirement for a long time and now you should start to take advantage of all that hard work. Drop some of your frugal ways, treat yourself, and relax. After you’ve figured out what your money situation is exactly, it’s time to spend any surplus you have.

For example, if your cost of living is $3,000 a month and you’re netting $3,250 a month, spend the remaining $250 on you. Use it towards a holiday, a new dress, a dinner with friends, whatever it is that enriches your retirement. Do it! You deserve to.

On another note, I just want to take this opportunity to wish our amazing editor Katherine Moore a wonderful retirement. I wish you all the best as you start this awesome journey. I know you say you’re really frugal, but this is the time to bend some of those money-saving rules I’m always preaching. Now is the time to spend money on the people and things that make you most happy. n

Jim Treliving, the original dragon, is a former RCMP officer turned highly successful businessman who, along with his partner, George Melville, is owner and chair of Boston Pizza International Inc. (BPI), through their

company T&M Management Services. T&M is a billion-dollar company that also owns Mr. Lube, Dermal Laser Centres, Stonebrook Benchlands Development, White Rock Commercial Real Estate, Kitchen Partners Limited, among others.

A passionate venture capitalist, Treliving is also the author of Decisions: Making the Right Ones, Righting the Wrong Ones (Harper Collins, 2012), and most recognizably, an investment architect on Dragons’ Den.

Known alternately as the “nice dragon” or the “quiet dragon,” Treliving is anything but a push over.

“A lot of it is listening to other people, analyzing what they have to say. When you are listening to someone else you are mentally using your brain,” Treliving says. “On Dragons’ Den I listen, don’t say much, then I make the decision. If you talk to people who have been around me for a long time, they will tell you, I’m a little bit feistier than that of a ‘nice dragon.’ I can be tough if I have to be, and I’m strong as to what I want to get across.”

As the recipient of a long list of prestigious awards and distinctions, which includes Canada’s Top Ten Most Admired Corporate Cultures, 50 Best Managed Com-panies Platinum Club, the Henry Singer Award from the Canadian Institute of Retailing and Services, the Canadian Franchise Association’s Lifetime Achievement Award, the Canadian-American Chamber of Commerce Lifetime Achievement Award (Texas), and the Order of British Columbia, Treliving acknowledges that up

to and throughout his 40s, his career was the priority. His ultimate focus centered on the business at hand, ensuring that it was running well and successfully on all fronts. However, Treliving says, the business as his driv-ing force changed dramatically as he evolved through his 50s and 60s.

“It became a question of, what am I going to do with the rest of my life,” Treliving says. “It was a question of how I could give back, how I could make a difference; that’s what changed in my 50s and 60s. They say as you grow older you get wiser; I don’t know if that’s true but you get more involved. You have a chance to sit back, and a chance to give back to the community.”

When Treliving was in his 60s, life as he knew it spun on its axis, delivering fortune and fame on two highly visible fronts: Boston Pizza’s IPO and Treliving’s starring role on Dragons’ Den. “The IPO let me do things I couldn’t do before, including a lot of travelling. My role on Dragons’ Den had a major impact. It was a big transition and probably one of the biggest and hardest of my life.

“Suddenly in my 60s I was being perceived as a rock star, (although I don’t see myself as such), and the notoriety was hard on my wife and my family. The show is aired in 14 countries and people stop me in the streets in places as far away as Italy and Australia. I have to be careful as to how I present myself, and I have to make sure it doesn’t cost me.”

Treliving’s inherent beliefs and defining qualities started with the childhood grounding that he was not the most important person in the world. Those qualities manifest in his advocacies for a broad spectrum of communities, as well in his mentoring roles and sporting activities with young people.

“As you get older, you go back to how you can help other people,” Treliving says. “I like to sit down with young people and tell them, ‘Look here’s the pitfalls I went through.’ I tell them, ‘Live your dream like I did. It’s all about that. That is the single most important lesson: don’t take life too seriously and live your dream.”

Treliving’s empathetic heart, not unlike the outsize heart of a dragon, is deeply committed to the cause of helping both kids and disadvantaged Canadians of all ages across a spectrum of various endeavours.

“I don’t want to be the richest guy in the graveyard,” Treliving says. Treliving’s daughter, Cheryl, is the Executive Director of the Boston Pizza Foundation,

(founded by Jim), an organization that has raised, since 1990, in excess of $10 million dollars to help Canadians in difficult circumstances.

CAMH, The Centre for Addiction and Mental Health, is a personal cause that Treliving, along with his wife, Sandi, are committed to nurturing across the country. Treliving sits on the Board of the David Foster Foundation, which does replacements for lungs and hearts for kids, as well as Jays Care, an organization that helps boys and girls who might not otherwise have the chance or opportunity to get involved and play baseball. Treliving also sits on Hockey Canada’s Foundation, which has the goal of getting more kids involved and back into the game of hockey.

At 75, Treliving is far from interested in seeking out a quiet place to retire and enjoy the legacy he has created; one, in fact that he is still in the epicentre of crafting. Twice yearly vacations—a winter sojourn in Hawaii and three weeks in the summer at Muskoka’s Lake Joseph, where Treliving revels in his love for golf—are virtually the only two occasions when he actually stops. Although, compared to most, it probably wouldn’t be considered a “hard stop.”

“I can be decompressing and then compressing,” Treliving says with a laugh. “I go for long walks on the beach then I’m fired up and ready to go! I’ve invested in a couple of lots in Hawaii, and I’m involved in three golf clubs there.”

Treliving does not hesitant when stating that there is not a lot that he misses about being young, other than the fact that when he was younger he was more carefree and, well, younger.

“I’m not as physical as I used to be, and the travel keeps me busy,” Treliving says. “I can’t play hockey like I used to, and I can’t hit the golf ball as far. But I’m not going to have a one handicap again or be on the ‘ Tour,’ so I don’t have to worry about that. I have fun with what I do, golfing and good business deals.”

What is of tantamount importance to Treliving is his family, whom he considers the “gifts of this stage of his life.” His wife, Sandi, is an integral partner with him on his charities; his daughter, Cheryl, is a doctor at Children’s’ Hospital in Vancouver; his son, Brad, is the General Manager of the Calgary Flames; and his four granddaughters keep him “centered and busy.” Now he has great grandchildren just beginning to come along.

Treliving muses that if he were a new supplicant on Dragons’ Den his pitch would probably revolve around a techie business, although he does reinforce that he is more of an investor now.

“My bliss is about being involved in the action, being around young people and helping them make their deals,” Treliving says. “It’s about the next big idea and how I can be a part of it.”

With all of Treliving’s gargantuan successes and an estimated net worth of $640 million, one might be forgiven for thinking humility might not be front and centre for such an achiever. Not so with the ‘quip-witted’ genuinely affable, loyalty-driven Treliving, who states, “Basically, I’m just a business guy selling pizza.”

Well Jim, that’s one hell of a family-size pie you’ve created, topped with all the extras a humble boy from small-town Manitoba could ever hope for. n

Fifteen years ago the first injectable neuromuscular blocker, Botox, was approved

by Health Canada to treat facial wrinkles caused by the movement of facial muscles. With the addition of filler products to re-volumize the areas of the face that “sink and sag” over time, dermatologists can reduce the impact that aging has on facial beauty. Lasers and other energy-based devices completed the trifecta of non-invasive tools we use to address the appearance of facial aging.

As dermatologists have continued to hone their skills (myself included) in the area of facial rejuvenation, the jawline and the neck remained a challenge because this part of some people’s anatomy resisted simple treatments. Over the years, the fresh, heart-shaped faces of our youth increasingly become a memory; we see a more square and jowly jawline develop, fat depositing in the neck, and the laxity of the skin and muscles.

Previously, the only option I could offer was a referral to one of my colleagues who performed liposuction. While very effective, liposuction is more invasive and, as with ay treatment, does carry its own unique risks. For a non-invasive alternative, there were few good options—until now.

Now we have safe, effective and non-invasive options for rejuvenation of the jawline, chin and neck. If each of the factors that produce the appearance of aging in this region are addressed, beautiful and natural results can be achieved without the need for more invasive procedures.

◆ JOWLS AND JAWLINE Filler injected along the jawline can re-establish the fluid lines of a more youthful lower face. Interestingly, replacing some lost volume in the cheeks higher up can often help reduce the lower face sag. It often looks more natural to treat the whole face as a unit.

◆ NECK BANDS These vertical bands of muscle that run from under the chin to the lower neck, and NECKLACE LINES (the horizontal wrinkles in the neck caused by neck flexion) can be softened using neuromuscular blockers (e.g., Botox).

◆ JAWLINE IMPROVEMENT can also be augmented using a Nefertiti lift; injecting small amounts of these products along the jawline.

◆ LOWER FACE AND JAWLINE SKIN LAXITY Loss of elasticity that contributes to the drooping of the lower face can be improved with the use of energy-devices that emit radio-frequency waves. This is a safe, non-invasive way to tighten the dermis from the skin surface.

◆ SKIN DISCOLOURATION AND FINE LINES Light-based devices such as intense pulsed light and lasers can help address superficial skin colour and texture irregularities.

◆ DOUBLE CHIN Also called “increased submental fat.” Good news! Health Canada has just approved a product called Belkyra; the first non-invasive treatment to get rid of submental fat without surgery/liposuction. Two-thirds of people surveyed say they’re bothered by their double chin.

Belkyra is injected in a grid like pattern in the area of fat under the chin. Two to four treatments, spaced one to two months apart are often needed. CLIMBING ROCKSFor me, rock climbing seemed impossible. Just thinking about it took me so far out of my comfort zone. How can a person with a disability, who uses a wheelchair, possibly go rock climbing? The stability of my core and abdominal muscles is significantly reduced. Nobody with limited strength in his or her arms, and even less in their handgrip, could be able to enjoy this kind of a sport, right? Rock climbing is a whole body experience. And I can’t use my whole body.

Cort McElroy, ACMG Instructor and General Manager of The Rock Oasis Climbing Gym, justified why my excuses were without merit. “Just check out Mark Wellman’s ‘No Limits’ website.”

Mark Wellman is a two-time Paralympian champion wheelchair user. He is also a rock climber, having created an adaptive pull-up bar to make rock climbing possible for people with disabilities.

I am the first to admit, I didn’t have the courage to take this on. As my anxiety heightened my confidence diminished, but deep down inside, I knew I really did want to try it.

GETTING STARTEDMy first step was visiting Cort at the gym. He hooked me up to a six-rope pulley system. For every foot of rope I pulled, I actually pulled six feet. And

my weight was evenly distributed, which made it seem easier to pull myself up.

Cort was not my nemesis after all. I had been my own worst enemy, limiting myself even before I had left the ground. But the true test would be on my first outdoor climb.

We went to the Rattlesnake Point Conservation Area in Milton, Ont. Not only was this beautiful country, I could feel the exhilarating experience start to grow. Slowly but surely I pulled my way up into the trees. Pushing myself physically made me feel alert and alive. My fears dissipated and morphed into a permanent smile.

While hanging 35 feet in the air next to the rock, I had a great sense of satisfaction. Cort had given me a powerful and enduring gift—the positive sense of self. I will always value his knowledge and experience.

The lesson that I learned yet again was that life gets a whole lot easier when you accept that change is inevitable and how important it is to get on with living. Instead of being afraid of what the next step is, just

Do you often have butterflies in your belly or a knot in your stomach? Do you have

irrational fear? You may be feeling anxious for reasons unknown to you.

Anxiety is our body’s way of alerting us to possible danger; a programmed reaction advising us to take flight. Some with severe anxiety wind up in the emergency room to be given breathing instructions, maybe oxygen, and sent home with medication.

The Symptoms VaryEmotionally you might feel apprehensive, powerless, unfocused, irritable, fearful and easily fatigued. Physical symptoms can include shortness of breath, sweating, trembling, a rapid heart rate, digestive problems, headache, and insomnia.

You might need to see a doctor if anxiety feels out of control. Your doctor might give you medication, or if she is a savvy yoga practitioner, she might suggest that you focus on your third chakra, your centre of power and will, to deal with this issue.

The Solar Plexus ChakraA chakra is an energy “wheel” that runs along your spinal column. The third chakra, one of seven, is perceived as bright yellow and is located in your solar plexus, roughly between your ribs and your navel. This is where the benevolent warrior gets her power: it is the centre of chi and qi as the ancient healers and visionaries divined it.

Working the chakra takes a spiritual approach to deal with

anxiety. It is believed to govern your digestive system and it helps generate personal power. Like the, sun which is our ultimate source of energy and light, it is bright yellow.

The solar plexus chakra embodies self-esteem, will, and a sense of security. When this chakra is in balance, you are strongly intuitive, confident and emotionally fulfilled. You are grounded in a place of power and charity and there is no place for anxiety to creep in.

When the third chakra is out-of-balance, you may feel overwhelmed, irrational fear, and a sense of being closed off.

◆ Sit or lie in a comfortable position.

◆ Close your eyes and take a few deep, centering breaths.

◆ Let your jaw drop a little, release your face and observe the sensations in your body.

◆ If you feel tense, you can make a decision to let it go with a deep exhalation.

◆ To enhance the sensation, make a loud sigh as you exhale. It feels good to let go!

◆ Place your hands gently on your solar plexus and see a ball of warm, bright yellow under your hands. The warmth of the sun-like ball under your hands feels comforting and nurturing.

◆ Follow the breath and notice the hands moving up and down, observing your physical and emotional response to this simple, loving exercise.

◆ See yourself as an innocent young child and send yourself love and acceptance, and ultimate healing. n

If you have full dentures, veneers are not an option.

Other TreatmentsThere are several options that might suit your needs. Depending on your evaluation and diagnosis, you may require a brand new set of full (upper and lower) dentures, which are held in by adhesion, cohesion and suction. Depending on your financial situation, there are other options with dentures that snap onto implants for a more secure fit, without feeling that they will slip or slide out while eating or talking.

Barefoot Resort— Fazio CourseTThis is classic South Carolina Lowcountry golf at its best. Tom Fazio used the local typography – ancient oaks, pines, sand, natural grass and native grasses – and crafted one of his best designs ever at the Barefoot Resort. This truly is a natural beauty where waste areas and formal bunkers have been handcrafted and placed for visual and strategic effect, while natural elevation changes add a sense of drama and excitement to your round. Water features can be seen on 15 holes, yet many lakes are in out-of-play areas to ensure playability.

Barefoot Resort— Dye CourseMost resorts are lucky to have one very good course, but Barefoot features two exceptional layouts - the previously mentioned Tom Fazio Course and the amazing Pete Dye Course. I consider Dye’s Ocean Course at nearby Kiawah Island to be my favourite in the U.S., with his Barefoot course coming in a close second. Dye used the local landscape to his advantage here – his course borders the natural white sands of Carolina Bays – and, while featuring the master designer’s infamous pitfalls, is fair to all handicaps. Like many European courses, the Dye Course does not return to the clubhouse after nine holes.

Heritage Golf ClubMy first question when I arrived at this classic South Carolina course was: “Is this a golf course or a botanical gardens. The setting is stunning: giant magnolias, ancient oaks, fresh water lakes and lots of Lowcountry marshes. The only thing better than the visuals is the course. Heritage is ranked among the “50 Best Public Courses in America” by Golf Digest, and follows the natural contours of the land, stretching out beside long abandoned and historic rice fields. After my round, I enjoyed a cold one at the course’s southern colonial clubhouse and looked up at the heavens and said: “Take me now Lord, because golf doesn’t get any better than this.”

True Blue Golf ClubMy favourite area to play golf in Myrtle Beach is Pawleys Island, just a short drive from the Grand Strand. And one of the best courses in this Lowcountry section is True Blue, which rests in what once was a thriving rice plantation. Designer Mike Stranz utilized the fertile landscape of twisted live oaks and towering pines, tidal creeks and salt marshes as the backdrop for his masterpiece. True Blue was named the “No. 1 Public Course in the Myrtle Beach Area,” and made the list of “America’s Top 100 Public Courses.”

Caledonia Golf ClubThis course is only 20 years old but its drenched in Lowcountry charm. Gnarled live oaks festooned with Spanish moss line the fairways at this beauty that’s ranked No. 27 on Golf Magazine’s Top 100 Courses.

Dunes Golf & Beach ClubThis is another Myrtle Beach course ranked in Golf Magazine’s Top 100 and although it looks like a private course it welcomes vacationers as well. This is a Robert Trent Jones design and many says its one of his best. The 590-yard, par-5 13th that doglegs 110 degrees to the right around Singleton Lake is a real challenge. Oh, and watch out for the alligators here!

Love at Barefoot Resort On this Davis Love-designed course, Love copied the legendary Donald Ross’s turtleback greens and the result would have pleased the old master. A re-created plantation house runs along five holes on the front nine and that makes for a memorable day. The resort offers discounted green fees for all of its four courses on Wednesdays throughout the year.

Tidewater Golf Club This 1990 Ken Tomlinson design dishes out low-profile fairways that ease past forested bluffs and along marsh-edged flatlands. Lots of photo-ops, so don’t forget your camera. The toughest hole is the 189-yard, par 3 12th because your tee shot must fly a marsh to a well-bunkered green.

TPC Myrtle BeachThis Tom Fazio design is tough enough to host the 2000 PGA Senior Tour Championship and its Murrells Inlet location is one of the loveliest in the area. Tree-lined fairways dominate the front nine and there’s lots of water to contend with on the back. However, it’s a fair course and if you play it smartly, you’ll have a memorable day.

Grande Dunes ResortThe Resort Club layout opened in 2001 and comes with views of the Intracoastal Waterway from multiple holes. At 7,618 yards from the tips, it’s one of the longest courses in the U.S., and there’s plenty of wind. n

Eight performances of Don Juan in Hell and Candida were held in the Court House auditorium that first year, and the summer theatre festival was born.

Points of InterestThe Botanical Gardens, the Floral Clock, Oakes Garden Theatre and Queen Victoria Park offer stunning seasonal displays. For the more adventurous, the Bruce Trail is the oldest and longest marked footpath in Canada. The main trail spans 890 kilometres, in addition to 400 kilometres of associated side trails.

Trails GaloreThe network of Collingwood trails now exceeds 60 kilometres. 1 Good value does not always equal the lowest price. Plants are living things. Much like fresh fruit and vegetables, words like bruised, over-ripe and best before yesterday just don’t cut it, regardless of the price. A great looking plant is not pot-bound, is not leggy, does not have yellowing leaves or is necessarily in full bloom. It is young, with roots that fill only half of the container. It is stocky and always green, and not necessarily in full bloom.

2 Labelling pays for itself. At this time of year, it is not always easy to get gardening advice from a sales person. That’s why accurate picture labels are valuable. A good label is printed in Canada, is appropriate for for the growing zone, has a picture and cultural details on it. Place the label next to the plant in your garden.

3 Roots should not encircle the inside of the container. Young, white fibrous roots are ready to take off in your garden. The roots must make a home in your soil before the top of the plant can thrive. Turn a plant upside down while at the garden

centre, gently remove it from the pot and inspect it. If the roots circle the inside wall of its container, put it back and choose a younger, perhaps less impressive looking specimen.

4 Full blooms are not always a good. It takes energy for a plant to produce a bloom, which attracts pollinators (not buyers), and to reproduce. Garden performers have much more green growth than blooms. The power reserved in the plant’s roots is made available to push the blooms as the plant resides in your garden, not on the store shelf.

5 Recycling. Many garden retailers take back your used pots and cell packs for recycling. Most municipal recycling programs do not accept used plastic plant containers. Retailers who provide this servicedeserve our consideration.

6 Buy wet plants. The sign of a good retailer is one who maintains the plants they sell. Mass-merchant retailers often allow plants to dry out in the store. A plant that dries out excessively “hardens off,” reducing

the vigour that it had when it left the green house. Avoid plants that are lightweight (dry) as they may collapse before you get them home.

7 Look for blossom buds. If you want colour in your garden sooner rather than later, look for plants that are loaded with blooms that will open in a few days or a week. These plants will give you a great performance in your garden, not at the garden centre.

Finally, when you get your plant purchases home be sure to place them in a shaded side of your house until you get them into the ground. Water them as the surface of the soil in their container becomes dry, preferably with rain water from a rain barrel as it is nice and warm.

Prepare the planting holes well, firm the soil around the roots of each plant with some “umph” and water well, right after planting.

The performance of your new plants in your garden will now depend on regular watering when the soil becomes dry about one centimetre down, fertilizing with 20-20-20 every couple of weeks and keeping the weeds under control. n

Picturesque Crystal Beach, first made famous as a popular tourist mecca in the 1890s, has reinvented itself to remain a destination hot spot. The small picturesque town on Lake Erie

was named for its Caribbean-like white sandy shores and crystal-clear lake water. In its heyday, crowds swarmed to Crystal Beach’s amusement park to ride on the terrifying Cyclone rollercoaster and to enjoy the majestic hotels, board walks, and big band entertainment.

After the amusement park closed in the late ‘80s the area went through a lull, until recently when it was propelled back into the limelight by those who appreciate the coastal living lifestyle. Now, many people are relocating to Ontario’s South Coast to escape congestion and stress, with the added delight of paying small-town prices for a quieter, more relaxed and outdoor-focused lifestyle.

The attraction is understandable. Crystal Beach offers a unique and beautiful setting. The town sits in the heart of the Niagara Peninsula surrounded by UNESCO Biosphere conservation areas. In addition to one of the best beaches in Canada, the outdoor activities include a network of hiking trails, as well as canoeing, waterfront sports and summer cycling. In winter, there’s cross-country skiing on the doorstep.

Niagara-on-the-Lake with its summer Shaw Festival theatre is a short ride down the Niagara Parkway. As are award-winning Niagara wineries and neighbouring Buffalo, with its world-class Albright-Knox art gallery, theatre, sports stadiums, restaurants, and malls.

Everyone knows how delicious fresh blueberries taste. Many of us have spent countless hours picking the little darlings only to find our

baskets not quite as full as our bellies. In addition to the abundance of

antioxidants found in wild blue- berries, they’re low in fat, high in fibre, only 80 calories per cup, and an excellent source of manganese, which is vital to bone development.

Now, recent research suggests that wild blueberries may help fight Alzheimer’s Disease because of the benefit to cognitive function and memory.

Here’s a quick and easy way to add wild blueberries to your menu, all year long.

Preparation Time: 20 minutesCook Time: 13 minutes

INGREDIENTS:

1 cup (250 mL) vegetable stock3 tbsp (45 mL) olive oil1 cup (250 mL) couscous1 tsp (5 mL) grated lemon rindPinch ground cumin2 carrots, diced1 small zucchini, diced1/4 cup (50 mL) walnut halves, chopped 1 1/4 cups (300 mL) frozen wild blueberries1/2 cup (125 mL) cooked (canned) chickpeasSalt and pepper4 sprigs each fresh coriander and flat leaf parsley, chopped

PREPARATION: In small saucepan, bring vegetable stock and 2 tbsp (25 mL) of the oil to boil. Add couscous, lemon rind and cumin; stir to combine. Remove from heat and cover; let stand for 5 minutes. Fluff with fork and scrape into large bowl.

Meanwhile, heat remaining oil in skillet over medium heat and cook carrots for 5 minutes or until softened. Add zucchini and cook for 3 minutes or until softened. Remove from heat and add walnuts. Add to couscous. Add wild blueberries and chickpeas to bowl. Season with salt and pepper to taste. Add coriander and parsley and stir to combine well.

Serves 4

Tip: Cover and store in refrigerator for up to 3 days.
