Lamb Meatball and Pea PilafINGREDIENTS

400g lean lamb mince

2tsp cumin

3 garlic cloves (crushed)

300g basmati rice

Vegetable or lamb stock

300g frozen peas

2 lemons (juice of 1)

In a bowl mix the mince with half the garlic and 1tsp of thecumin, add salt and pepper then shape into small balls(about 16).

Heat a bit of oil in a large frying pan then fry the balls untilgolden and cooked through (about 8 mins).

Remove them from the pan. Put the rice, 1tsp of cumin andthe remaining garlic into the pan.

Fry for about 30 secs, stirring, then pour in enough stock tocover.

Cover with a lid and simmer for 10 mins.

Return the meatballs to the pan, add the peas and warmthrough for a few mins until the peas are tender.

Mix the cucumber with the chopped mint leaves and theyogurt.

To finish the pilaf, stir in the lemon zest and juice with someseasoning.

Serve with a dollop of cooling cucumber yogurt.

topped with crunchy bread and bubbling cheese

Serves 2

Preparation Time ~ 55mins

Ingredients12oz / 350g onions

Butter for frying

1 1/2 tsp Demerara sugar

2 tsp dark soy sauce

1 pint stock (chicken stock islovely)

2 thick slices lightly toasted bread

2oz / 50g cheddar or Gruyere cheese

PreparationPeel and thinly slice the onions.Heat the butter in a medium-sized saucepan.

Add the onions and sugar and fry gently over a low heatfor 10-20 minutes, stirring frequently. The sugar willcaramelise to a nice golden brown coating on the onions.Be careful not to let it stick and burn though, especiallytowards the end.Add the stock and soy sauce, and season to taste withsalt and black pepper.

Put a lid on the pan andsimmer for approximately 30minutes until the onions aresoft and starting todisintegrate.Grate or thinly slice thecheese.

Divide the soup between two heatproof bowls.Float a slice of toasted bread on top of each bowl of soup,and top with the sliced or grated cheese.Grill for 2-3 minutes until the cheese is melted andbubbling (which is why you have to use heatproof soupbowls!)

Serve with morefresh warm bread.

We fondly refer to Venice as the floating city eventhough it is apparently sinking. If you’ve seen Venicein movies or televisions shows, the depictions areaccurate. Piazza San Marco looks exactly the same,birds and all. The Grande Canal is, well, a grandcanal with incredible houses lining it and boats goingup and down this water way. Built on mudflats in alagoon, the city doesn’t really have much room togrow. It just seems paralyzed in time.

Once you’ve conquered the tourist attractions, it willbe time to get serious about Venice. The best way todo this is stand in front of hotel or hostel, determinewhich direction the tourist attractions lie and startwalking in the opposite direction. While you may feellike you’re driving the wrong way on a freeway for afew minutes, you’lleventually start getting into real Venice. Anentirely different side of Venice will appear and you’lllove it. You’ll find little cafes with locals happy to talkto you [and non-tourist prices]. In fact, the Venetianswill tend to hold you in high regard since you’re atourist who is bypassing the tourist areas. This, ofcourse, will logically lead to a whirl of introductionsto this nephew, that son of a brother and so on. Nextthing you know, you’ll be complaining about Italianpoliticians and how things used to be better in thepast.

The voluptuous "bride of the sea" – Venice is a cityof North East Italy. The gorgeous "Queen of theAdriatic" – Venice stretches across 118 islets withina lagoon in the Gulf of Venice, an arm of the AdriaticSea. Locally dubbed as "the Most Serene One" –Venice is a pleasing placid place bountifully blessedw i t h r a r e b e a u t i e s o f n a t u r e .

Venice has long been the city of numerous romanticcharms. The city was an important commercial andcultural hub in the Renaissance era. The sixteenthcentury was the age of flourishing art. The citybecame one of the most important musical centresof Europe, and the era witnessed the birth of theVenetian School of Music. The composers such asAdrian Willaert, Ottaviano Petrucci, Andrea andGiovanni Gabrieli flourished during the century.Shakespeare beautifully portrayed the beautiful cityof gondolas in "the merchant of Venice" and“Othello”.
