REPORT ON SIAL FAIR – 2014.

Introduction: Paris ‘The city of Lights’

Paris, the capital city of France, often referred to as "La Ville-Lumière" or the ‘The City

of Lights’ is situated on the Seine River, in the north of the country. The city is

celebrated as, the global hub of fashion, noted for its haute couture tailoring and its

high-end boutiques; the home of the Louvre, the most visited art museum in the world,

with outstanding collections of European and ancient art including paintings and

sculptures; the home of several masterpieces of Gothic architecture, most notably the

Cathedral of Notre-Dame-de-Paris; home to much-visited landmark, the architectural

splendour - Eiffel Tower (1889) which marks the centennial celebration of the French

Revolution and home to Paris Metro that started in 1900s, to name a few.

Apart from being the important centre of commerce, fashion, science, and arts, a

position it still holds today, Paris is also world renowned for its haute cuisine, attracting

many of the world's leading chefs since centuries. The French mostly use fresh

ingredients and subtle seasonings in their traditional dishes. Though traditional French

food is not very spicy, the French apparently do use spices to cook with, just in smaller

quantities. They normally wish to sense the natural good taste of the food and not cover

it up with overwhelming flavors. However, they are merchants of exquisite spices.

There have been reports that as early as in the middle ages spices were highly treasured

and very expensive and included pepper, cinnamon, cloves, nutmeg, and mace. The

common herbs produced and used by the present day French are Tarragon, Chervil

(similar to parsley), Savory, Lavender and Sage. Indian spices such as Pepper, nutmeg,

cloves and ginger are usually used in red meat dishes. For vegetables stews Ratatouille,

and casseroles the French use garlic, thyme, oregano, bay leaf etc. Sea food seasonings

are done with saffron, ginger and paprika. For poultry, paprika, ginger, garlic, mustard

cumin, cayenne pepper and a mix of herbs are being used. And finally for desserts they

use vanilla, cinnamon and mint and in bakery lavender vanilla sugar is reportedly a

common ingredient. Some spices used during ancient times but no longer today in

French cuisine are cubebs (Piper cubeba), long pepper, grains of paradise (Aframomum

melegueta), and galengale (Alpinia galanga).

Trends of spice market in France and other EU countries

The European Union is a net importer of spices and herbs. Leading EU importers of

spices and herbs are Germany, The Netherlands, the UK, France and Spain. These are

also the countries with the highest imports from developing countries. Globalization

and changing demographics is expected to drive seasonings and spices demand in EU

countries in future. Increasing awareness of health benefits of spices is also expected to

drive the market.

Online marketing campaigns are offering expansion opportunity for seasonings and

spices market in EU counties. Several companies have started new online advertising

campaigns with ‘Apps’ for product recipes, social media posts and contests, in social

networking sites such as Facebook, Pinterest, Twitter and YouTube that encourage

consumers to create new recipes. It is reported that such campaigns help the companies

in improved connectivity with consumers and thus help in establishing their brand

identity in the seasonings and spices market.

It is to be noted that the spices and seasonings market has been considered to be one of

the most recession-proof markets even during uncertain economic conditions. India’s

exports of spices to France alone amounts to 3889.60 tons valued at Rs 17568.67 lakhs

during 2012-13.

SIAL 2014, Paris Nord, Villepinte

of spice traders /dealers and distributors visited the stall and made enquires about Indian

spices and especially the Flavourit brand received good appreciation in the show. The

visitors of our stall could be broadly classified by way of different categories such as

producers, traders, importers, minor consumers, restaurant businessmen, hypermarket

dealers, wine makers etc. The exhibition provided a reasonable opportunity to interact

with the consumers as well as different business groups from a wide range of countries

growing spices and those involved in spice exports and imports.

The feedback of the visitors are summarised as follows.

1. Several visitors enquired about retail packets and current market prices of whole

spices, spice mixtures.

2. A vast majority asked about organic spices from India and they wanted

authentic Indian spices

3. Some of the chefs who visited asked about availability of recipe books of Indian

dishes & spices

4. Several of the visitors wanted to taste and smell the spices for a feel of flavour

and aroma and they requested that tiny take away packs of different spices

should be arranged.

5. One of the visitors enquired about the packaging of Flavourit spices

Some of the different enquiries are detailed below:

A wine manufacturer from Serbia asked for herbal spices suitable for preparation of

herbal wines.

Several of the visitors collected the contacts of Indian spice manufacture/processing

units and inquired about the role of Spices Board in promotion and regulation of trade

and spice exports from India and about maintenance of quality in Indian spices.

One hypermarket group from Kerala based at Abudhabi, enquired about the possibility

of promoting authentic Indian spices in retail packets.

country. He explained about youngsters going for jobs other than Agriculture and how

Government policies have discouraged farmers, how they have lost the traditional

farming skills which has led his country to import millions of dollars’ worth food.

A total of 72 enquiries were received from spice distributors/ producers and consumers

of various countries.

The list of trade and other enquires is enclosed (Table 1).

Export spices to India

Page 19: Acknowledgment - Spices Board India Report final-signed.pdf · wholeheartedly encouraged me for the successful completion of my assignment. ... campaigns with ‘Apps’ for product

Spices of other countries: A whole variety of spices of different countries such as

cinnamon from Sri Lanka, star anise from China, exotic herbs from Egypt, Greece,

Switzerland, Spain & Morocco, were exhibited in their respective stalls. Exotic herbs

in fresh, dried and processed forms from European counties were also exhibited. They

included chamomile, lavender, chervil, garlic etc. Spices from Singapore, Turkey,

cloves from Indonesia, herbs from Thailand etc were displayed.

Apart from the above there were scores of stalls exhibiting a variety of food items such

as bakery & confectionery, pastas, tortillas and allied products, cereals, grains, pulses,

nuts, edible oils, coconut products, wines, sea food, meat & meat products, milk

products, fruits and vegetables.

Suggestions:

1. If a digital display can be arranged alongside the stall to present spices and

preparation of food items using Indian spices, it would help to add popularity

of Indian spices.

2. Tiny attractive packets of whole spice mixes, spice candies/ chocolates if

arranged for free distribution, as like in other stalls would help promote Indian

spices

3. A table top presentation of map of India with pictures of spices grown in each

state would be an added attraction

4. Authenticity of Indian spices not presented on spice packets/sample containers/

Flavourit.

5. Current market prices is an essential requisite in the stall

6. A welcome board eg. ‘Spices Board of India welcomes you’ with an emblem

suggesting our Govt of India organization status would have a very good impact

in fairs of such magnitude like SIAL.
