Tequila Herencia Mexicana is elaborated at the Hacienda of Sagrado Corazon, which was founded in 1884 in Los Altos de Jalisco and it is part of the Mexican history as per this Hacienda was attacked and practically destroyed by the Mexican Federal Government during the Mexican Revolution in 1810 when Rodolfo Fierro, a man of Francisco Villa was occupying it.This Tequila distillery that started production in 1892 had an initial daily production output of 150 liters per day. At present its capacity is of 3,000 litters daily and still keeping its craftsman touch with traditional process as the knowle-dge of masonry ovens that requires a slow process with up to 36 hours and getting the best sugars out of the agave heart, from which it gets its unique flavor with very special fruits and species tones from the region as per all the agave used for Herencia Mexicana production is only from the region of Los Altos de Jalisco, zone considered as the best from the country since it has extreme climate that enhance the agave’s properties.

The process to make Tequila Herencia Mexicana starts on the field when agave offshoots, called "pups", are separated from the mother plant and carefully transplanted. After 3 years' growth, they are prepared to be replanted in a new plot within the limits of the hacienda, where they are looked after for 6 or 7 more years. When a quiote (flower stalk) starts growing from the center of the plant, it is promptly cut off so it doesn't prevent the piña (plant core) from developing the full amount of sugars it will need for the fermentation stage.

The Tequila making process of Herencia Mexicana:

Once it is ready to be harvested, each agave plant undergoes a process called jima, which is an artisanal manual operation by which its leaves, or pencas, are removed. Then, the piñas (cores) are taken to the production plant, where they will be split in half before going in the oven.

In this stage of the process, agave cores spend the next 48 hours in masonry ovens. Using this type of ovens - as opposed to faster, more modern methods, infuses the cores with more intense aromas and flavors. After baking, the piñas are left to cool for 36 hours.

Right after the agave juice (wort) has stopped fermenting, it is piped into stills, where it undergoes a first distillation whose products are carefully separated into 3 parts called heads, heart and tails. Then the heart part undergoes a second distillation in copper stills and the resulting liquor is again separated into heads, heart and tails. Only the heart produced by the second distillation is used to make Tequila Herencia Mexicana.

Once the piñas have cooled, they are taken to the mills, where they are shredded and their juices extracted in order to start fermentation. This stage will take the following 72 hours.

Clear Tequila (Blanco), is stored in stainless steel containers, whereas white oak barrels are used for Rested (Reposado) and Aged (Añejo) Tequilas. Tequila Herencia Mexicana Reposado is aged for 9 months in these barrels, whereas the aging time for Tequila Herencia Mexicana Añejo is 2 and a half years. Once the aging process is completed, all Tequila types are bottled and readied for sale.
