ABOUT EDUCATION

Highlighting the Work of the South Dublin Adult Learning Centre

South Dublin Adult Learning Centre (SDALC)was established over 20 years ago to deliverbasic education courses.

Located on the Main Street, Dundrum, SDALCprovides services to meet the needs of adult learnersthrough a range of programmes, free of charge,from one-to-one courses to accredited courses.These courses are run periodically throughout theyear.

The SDALC supports adult learners and encouragesthem to identify their educational needs.

Our classes concentrate on:

• Improving Reading skills• Improving Writing and Spelling skills• Brushing up on Maths• Introduction to I.T. for people

with basic education

All courses are available on a part time basis duringthe day or evenings.

One of the programmes we currently offer is theITABE (Intensive Training in Adult Basic Education).This course helps students improve their generalcommunication skills, including reading andwriting. Revising and improving numeracy andMaths for Life is also available to students, as wellas an Introduction to Computer Skills. The ITABE isa 14 week intensive course, which students attendfor 6 hours a week. Former students have gone onto take certification courses, such as FETAC.

SDALC is part of the County Dublin VEC, so it isapproved to deliver courses accredited by FETACat Levels 2, 3 and 4. The FETAC certification isrecognised both nationally and internationally.

Some of the courses accredited by FETAC anddelivered by the Centre include Communications,Maths, Computer Literacy and Personal Effectiveness.

In addition to FETAC, Junior Certificate courses inEnglish and Maths are also available to students.Many of our students have also had great successwith Leaving Certificate English.

All of our classes are organised to meet localdemand. We offer a wide range of classes to assiststudents to improve their skills and we take intoaccount their special interests. A highlight of theSDALC year, is the publication of the students’writings.

SDALC provide a professional, confidential, freeservice to local people aged 18 years and over. Westrive to make all of our classes welcoming andlearner-centred.

ABOUT RECIPE

Golden Lamb Stew & Rosemary Shortbread

GOLDEN LAMB STEW

500g Lamb, dicedSmall green pepper, choppedSmall onion, chopped1 Large tomato, chopped5 Small potatoesTomato puree2 Carrots, sliced500ml Vegetable stockSmall yellow pepper, choppedOil to fry

• Parboil the potatoes and drain.• Lightly fry the lamb until all the juices have been

sealed. Add the onion and fry until soft.• Add the stock, along with the potatoes and other

vegetables. Simmer gently for 1 hour.• Add the tomato puree to taste and stir in the chopped

tomato. Cook for a further five minutes.• Serve with boiled rice.

ROSEMARY SHORTBREAD

350g Unsalted butter, at room temperature150g granulated sugar2 Tbsp Fresh rosemary, or 2 tsp dried340g Plain flour75g Semolina¼ tsp Salt2 tsp Demerara sugar for topping

• Preheat the oven to 190°C and grease two bakingsheets.

• Cream the butter in a large bowl until light andcreamy. Add the sugar, and continue mixing until themixture is fluffy. If you are using fresh rosemary, chopit very finely and if using dried, crush it until it is finebut not a powder.

• Add the flour, semolina, salt and the rosemary to thebutter mixture, and mix until thoroughly combined.The dough will be soft, so refrigerate it for an hour sothat it is firm enough to roll out.

• Roll the dough out to about a centimetre thickness.Cut shapes as required, or fingers and place them onthe greased baking sheets. Sprinkle with sugar andbake in the centre of the oven until they are gold atthe edges, between 12 and 15 minutes.

• Remove from the oven and place them on wire racksto cool. Pack in an airtight container where they willkeep, their flavour improving, for at least a week.

Do You Know Your Director Duties?by Brendan Dillon, Dillon Solicitors

When deciding to go intobusiness people frequently optto set up as a limited companydue to the advantages itprovides. It is important howeverthat people becoming directorsof these companies becomefamiliar with the legal

obligations and responsibilities attaching to theirposition.

The primary function of the directors of a company is tomanage the company on behalf of the members. Adirector has a fiduciary duty to act in a manner whichplaces the interests of the company ahead of their own.This can be difficult as in many Irish companies thedirectors andmembers of the company are one and thesame and therefore, it can be difficult to distinguishbetween the company’s property and the director/member’s property resulting in directors treatingcompany property as though it was their own.

Director’s common law duties:1. Directors must exercise their powers in good faith

in the interests of the company as a whole and notto benefit the interests of any particular memberof the company.

2. Directors are not allowed to make an undisclosedprofit from their position as director and mustaccount for any profit which they secretly derivefrom their position as director.

3. Directors are obliged to carry out their functionswith due care, skill and diligence and are liable forany loss resulting from their negligent behaviour.

Director’s statutory duties:These duties arise under the Companies Acts 1963-2001 and include:1. A director has a duty to comply with their

obligations under the Companies Acts and toensure the requirements of the Companies Acts arecomplied with by the company. If a directorauthorises or permits a breach to take place theyare in breach of their duty, unless they can showthat they took all reasonable steps to prevent it, or

due to the circumstances it was beyond theircontrol.

2. If a director makes a statement or produces adocument which they know to be false orinaccurate they are in breach of the Acts.

3. Section 202 of the Companies Act 1990 requiresevery company to maintain proper books ofaccount and it is a criminal offence to fail to do this.

4. Every company has a duty to maintain certainregisters and documents. These include a registerof members, register of directors and secretariesand their interests, register of debenture holders,minute books, directors’ service contracts,contracts to purchase own shares and register ofinterests of persons in its own shares (if a publiclimited company only)

Round The Garden: Awkward April

April can be delightful on the weather front, but it canalso be an awkward month to predict. Cold snaps andeven snow can occur, so keep lots of horticulturalfleece at hand to protect tender plants – not forgettingtrees of the peach family.

PrepareOn the subject of horticultural fleece, it’s a good idea tocover the ground for a few days before planting, as theslight rise in soil temperature of the soil will be beneficial.This is the month for weeds to really take hold, soremember to hoe frequently. The gardener’s nightmare iscoming into its own this month – so do keep a carefulwatch for the first signs of slugs and snails. Deal with thembefore they can do too much damage to young seedlings.Peaches and nectarines can be pollinated with a smallbrush.

PlantApril is a great time for propagating hardy perennials, soplant some old favourites in new areas. Rock gardensshould be inspected for any plants which need to bepropagated by division. For those of us with ponds, this is

also a good month for division of water lilies. Strawberriescan be planted out in April. Don’t forget to train runnersinto new pots to gain additional plants.

PruneClimbing plants should be trimmed before new growthappears. Cuttings can be taken of all soft wood plants forstriking in pots. Roses should be pruned and shrubs, suchas buddleia davidii, need to have last year’s growth cutback.

Spring Clean Your Thinking!

Isn’t it good to see the stretch in the day andrealise that spring really is around thecorner?

At this time of year we often think about aspring clean: the house, the garden, thewardrobe, etc. But, how about a spring clean ofour thinking?

How challenging would it be to re-think howwe felt about ourselves - especially our bodies -when we look in the mirror?

Imagine that when you get up and have thatfirst bleary-eyed look at yourself in the morningyou were pleased with what you saw? This is nota pipe dream or wishful thinking. We are all tooready to be self critical. How much better wouldit be to be self praising – or at the very least self-accepting?

Studies have shown that there is a direct linkbetween our appearance and our self esteem.When we are feeling down or low aboutourselves we are most likely to dress in darkcolours and not to make an effort with our hairand makeup. What’s more, our body languagewill send a very clear “I’m unhappy” message toanyone around even if we don’t shuffle aboutwith hands in pockets looking at the ground!

If, on the other hand, at the start of a ‘feelinglow” day we took the time to do both hair andface and wore the clothes we knew worked thepositive effect on ourselves when we looked inthe mirror would begin to change our mood.

This can be easier to achieve if we’ve alreadysorted through our wardrobe and identified

what are the best clothes for our body shape,colour and lifestyle.

Everyone has positive and attractive features andwe could all benefit from focussing on those fora while, making an effort to ignore the innercritic and working at enhancing those attributesthat others might wish were theirs. Take a littletime out this season to re-think yourself into apositive frame of mind ladies, and rememberthat the wardrobe spring clean can also be partor this year’s therapy to a new you.

Childcare Challenges and the ECCE Grant

In the current economic climate when manyparents are losing their jobs, one of the firstexpenses which are being examined is childcare.With this in mind, coupled with the introduction ofthe ECCE grant, we spoke with local childcareprovider Barbara Thornberry of ChuckleberriesMontessori about the options available to parents.

“These are certainly challenging times for crèches andMontessori schools”, says Barbara. “While we havebeen providing quality childcare in Knocklyon andFirhouse since 1998, we havemade changes to our businessmodel, to adapt to theeconomic challenges.”

“We opened a fabulous newcentre in Dalriada lastNovember, as our old centre inWoodstown, which was abovethe shops, was not adequateand didn’t allow for an adjacentoutdoor play area”.

“In tandem with this move, wehave been preparing for the new Government ECCE'free preschool place', which was introduced lastJanuary.”

Barbara explained “Initially it seemed that the schemewas not going to work for many childcare providers, asit appeared overly complicated and inflexible.”

“In simple terms there are two streams to the initiative,both of which covering the year prior to the childstarting primary school.”

“Firstly, regardless as to whether children are in full orpart time care, parents are granted €48.50 per weekfor 50 weeks care. The crèche then ‘claims’ the grantfrom the government and parents pay a 'top up' tomake up the difference between what the crèchecharges and the grant provided.

However, if children are in ‘sessional care’ (i.e.

playschool, naoinrai, Montessori, etc.) the grant is€64.50 per week for 38 weeks. Parents cannot pay a'top up' with this option. So, in real terms, thegovernment was telling childcare providers that theyhad to charge €64.50 to be approved for the scheme.

Many providers were ‘creative’ in stating what theparents were paying for. Some said it was thedifference between the grant and their fees forbirthday parties, arts and crafts materials, danceclasses or even 'voluntary' donations.

For us at Chuckleberries, thiswas too vague. It was fraughtwith complications for theprovider, children and theparents who didn't want to payfor extras.

So, just like our policy ondiscipline, we focussed on thepositive. We increased the timewe provided from 3 hours perday to 3 ½ hours per day, at noextra cost to the parents.

Not only did the parents then qualify for the grant,but the children gained an extra half hour of qualityMontessori, in the formative year before they startprimary school. It was a win-win solution!

Our Montessori schools are all certified with St NicholasMontessori Society, which has a stringent evaluationprocess. Chuckleberries have also been award winnersof the NCNA Centre of Excellence Award.

Our slogan is “we never forget it's the children thatmatter”. So, regardless of economic pressures, wenever do!”

The Watoto Children’s Choir from Uganda

The Watoto Children’s Choir from Uganda sang at the morning service on Sunday 21st Februaryin Rathfarnham Parish Church, Rathfarnham Village, followed by an evening performance.

The Watoto villages cater for those orphaned as a result of AIDS and war. Over 2000 childrenare catered for and a new village has been opened in Northern Uganda to cater for former childsoldiers. The Choir were on a European tour and we were delighted to be able to host them.

Sam McMahon Trust – A Fundraising ‘Culinary’ Triumph!

You may remember in our last issue we highlighted thestory of local boy Sam McMahon, who suffers fromFriedreich’s Ataxia. We asked your help to support afundraising event organised by his family to raise fundsfor the Sam McMahon Trust.

Well, on March 8th at the Grosvenor Suite in the D4Berkeley hotel, over 400 people attended the NevenMaguire Cookery Demonstration. It was a completesell-out!

His mum Caroline wrote this report.

The evening kicked off with a wine reception, duringwhich Neven's new book ‘Home Chef’, was snapped up!

During the first session, Neven selected what heconsidered to be the perfect three-course meal from‘Home Chef’ and guided the audience through therecipes. Gratin of Hake with Prawns, Spinach andPesto and a Chicken Chorizo Rice Bake looked andsmelled divine.

We were instilled with confidence that we couldrecreate them at home.

We raffled some fantastic prizes, including a meal atNeven’s McNeans Restaurant, during the break - all ofwhich added to the fundraising cause.

The second session saw Neven bake Warm Pear Tartswith Citrus Mascarpone Cream and Spun Sugar Curlsto decorate.

When the show was over Neven posed for endlessphotos and signed book after book. Words can’t conveyhis generosity and kindness. Not only is NevenMaguirea superb chef but he is a gentle, kind man who waswilling to give his time to the Sam McMahon Trust.

He presented Sam with a signed copy of his book andencouraged him and his brother to try out the recipes.We, at the Trust are also grateful to Neven’s wifeAmelda, who was involved in planning the event andJohn from Flogas who assisted Neven and suppliedcopies of the recipes for the demonstration.

Thanks are also due to all of the people who boughttickets, donated prizes for the raffle and who workedso hard to ensure that the event was a great success.We raised a fantastic total of €10,500.

We have arranged another cookery demonstrationwith TV3 celebrity chef Andrew Rudd in aid of theTrust and at the Loreto National School, RathfarnhamParent’s Association on 23rd May.

Spring into Action!

Yes, it is that time again - Spring Cleaning! As theweather gets milder, flinging open the windows tothe fresh air and attacking the house is somethingwhich many find very therapeutic! To help makethings easier we’ve got some great tips from a localprofessional – Kevin Mills at Chem-Dry Express.

“With anything you must prepare in the right way. Youwant to get the job done fast but not cut corners. Youwant to use safe products but they have to be effective.Most importantly you don’t want to take on a job thatis meant for a professional, as you’re only wasting yourtime and energy!

The good news is I have enough tips for you to getthrough everything and have your house like new again!

1. PlanningDon’t take on more than one task at a time. This willenable you to work efficiently and effectively. Whenitems are found that belong in another area, placethem in a basket and take the time later to return eachitem to its rightful place.

2. ClutterThis is a great time to simplify and de-clutter yourhome. Recycle old books, magazines and clotheswhich you no longer wear. Replace with candles andflowers.

3. FridgesSpringtime brings a change in diet, so this is a greatopportunity to clean the refrigerator. Use a chemicalfree combination of salt and soda water. The bubblingaction of the soda water combined with the abrasivetexture of the salt works great as a cleaner.

4. Kitchens and Bathrooms (We can help here!)There may be a build up of limescale around yourtaps. The best way to get rid of it is to lay paper towelsover the fixture and soak it with vinegar, letting it setfor one hour. The deposits will soften and becomeeasier to remove. The same applies for shower headsin hard water areas. In the bathroom, pop anymildewed or scummy plastic shower curtains into thewashing machine on a warm wash - say 40°C. Don'tspin - remove and hang back up straight away so thatthe creases fall away!

Use old toothbrushes to clean awkward nooks andcrannies - like plug-holes and drains. If you find that thebottom of your shower tray or shower doors havewatermarks which are difficult to remove - get a nylonscouring pad and water, it works wonders! Want an ecofriendly way of removing stains from the toilet? Just poursome cola down, flat or fizzy, it works a treat (honest!)

If the grouting around your tiles is looking mouldy,you can get it professionally cleaned – which will saveyou money and make your tiling look like new!

5. Carpets & Upholstery (We can help here too!)Invest in a good vacuum cleaner! Vacuum your carpettwice a week. This will help keep dirt from settling tothe bottom of the carpet. If you have pets, try tovacuum three times a week especially in the areaswhere your pet lies on the carpet.

For fresh stains, carbonated water works well. Just poura generous amount to the soiled area and gently blotthe area with a typical white towel. Avoid cheap carpetcleaning products, they leave behind a soapy residueand the carpets will get worse over time!

Fun Family Doggy Day Out
