Why is sugar reduction so imperative?
IN TODAY’S FOOD AND BEVERAGE MARKETPLACE, BOTH REGULATORY- AND CONSUMER-DRIVEN SUGAR REDUCTION DEMANDS CONTINUE TO EVOLVE. SUCCESSFUL
SUGAR REDUCTION SOLUTIONS MUST ALSO CONTINUE TO EVOLVE IN RESPONSE.
A Perfect BalanceSUCCESSFUL SUGAR REDUCTION FOR TODAY’S MARKETPLACE
THE FDA-REQUIRED LABEL CHANGES REGARDING SUGARS ARE: “Added sugars,” in grams and as percent Daily Value, will be included on the label.Scientific data shows that it is difficult to meet nutrient needs while staying within calorie limits if you consume more than 10 percent of your total daily calories from added sugar, and this is consistent with the 2015-2020 Dietary Guidelines for Americans.
By law, serving sizes must be based on amounts of foods and beverages that people are actually eating, not what they should be eating. Package size affects what people eat. So for packages that are between one and two servings, such as a 20-ounce soda or a 15-ounce can of soup, the calories and other nutrients will be required to be labeled as one serving because people typically consume it in one sitting.
https://www.fda.gov/Food/GuidanceRegulation/GuidanceDocumentsRegulatoryInformation/LabelingNutrition/ucm385663.htm
Because it is driven by both regulatory changes and consumer demand. The upcoming June 2020 deadline for label changes outlined by the FDA is looming, giving added sugars and serving sizes a reality check—and giving consumers even more reason to pay attention to their sugar consumption.

Serving sizes and calorie counts are prominently displayed, but the biggest change may be that now, added sugars can’t escape unnoticed.
What the new label means to you
WHAT ARE ADDED SUGARS, EXACTLY?Added sugars are things like dextrose and fructose (monosaccharides) and sucrose (disaccharides), one and two chain sugars. The lower molecular weight provides unique functionality and low viscosity to food systems.
The definition of added sugars includes sugars that are either added during the processing of foods, or are packaged as such, and include sugars (free, mono- and disaccharides), sugars from syrups
and honey, and sugars from concentrated fruit or vegetable juices that are in excess of what would be expected from the same volume of 100 percent fruit or vegetable juice of the same type.

Consumer-Driven Sugar Reduction
An increasing number of consumers are seeking out better-for-you options and want to limit their sugar and lower their calorie intake*, so they are checking labels and buying items with low or reduced sugar.
In fact, an overwhelming majority of consumers surveyed are very or somewhat concerned about sugars and sweeteners used in the products they buy or consume most often.* And, these concerns are elevated among women and older consumers.
It all seems pretty straightforward, but it isn’t quite that simple since consumer attitudes toward sugar appear to be on a continuum: “For many consumers, their perceptions, attitudes and behaviors regarding sugar, added sugars and sweeteners are based on a host of factors including moods, product category/type, and vary by eating or drinking occasion, etc.”*
Nearly 70% of consumers surveyed are very/somewhat concerned about sugars and sweeteners used in the products they buy and/or consume.*

Therefore, meeting consumer demand for reduced-sugar food and beverage options can be a real balancing act for product developers.
It’s true, consumers care about their sugar intake—but still want the taste they love.
As an increasing number of food and beverage consumers seek out better-for-you options, the demand for healthy choices, including healthy indulgence, that feature lower calories and closer to nature ingredients will continue to be innovation drivers for foods and drinks.*

Sugar Reduction Challenges for Product Developers
WITH SO MANY FACTORS AT PLAY, PRODUCT DEVELOPERS ARE TASKED WITH BALANCING A LONG LIST OF CHALLENGES:
• reducing overall sugar and managing added sugar values
• moving from double digit added sugars to single digit added sugars (ex. from 12g to 9g) to stay within guidelines/daily value percentages under new serving sizes
• offering reduced sugar options, but keeping the same desired taste and sensory profile (texture, linger, mouthfeel, other sensory qualities intrinsic to the product experience)
• reducing sugar but maintaining the functionality sugar and other sweetening ingredients bring, such as browning, humectancy, shelf life stability, etc.
• reducing sugar while keeping the same overall formulation cost

Functionality MVPs
With exceptional sweetness—up to 1.8 times that of sucrose—crystalline fructose has a quick, clean upfront sweetness which works well with sugar and high potency sweeteners to deliver on better-for-you claims. Crystalline fructose helps to optimize product formulation in a variety of applications, with unique benefits including a low glycemic index, high sweetness
synergy, flavor enhancement, freezing point depression and humectancy.
SweetRight™ erythritol features a clean sweet taste—with approximately 0% sweetness of traditional sugar and low calories—with the benefits of a low glycemic index and high digestive tolerance. Erythritol offers sugar-like functionality, replacing product volume in
reduced sugar applications, and can be used alone or in combination with other sweeteners.
SweetRight™ reduced sugar glucose syrups retain much of the functionality provided by sugar without contributing to the ‘added sugars’ designation
consumers don’t want to see on nutrition labels. Reduced sugar glucose syrups use unique technology to redistribute the molecular weight of the syrup offering
similar functionality and viscosity—with up to 50% less added sugars.
