When looking to makepermanent changes to a diet, consider using ingredientsubstitutions, said RobertaAnding, registered dietitianat Baylor College of Medicine.
Modifying the fat contentin recipes gives the biggestcalorie reduction, saidAnding. Many times, apple-sauce can replace butter andoil in baking recipes, andGreek yogurt can replacesour cream.
Learning what substitu-tions work best takes sometime and experimentationwith cooking time and tem-perature, but reducing a dietby 100 calories per day canresult in a 10-pound weightloss in one year, said Anding.
Other substitutions in-clude switching to low-fatrather than a whole-fat cheeseand switching from whitebread and rice to wheat breadand brown rice. Not only isthere a benefit in amounts offiber, but also in magne-sium, which can decreasethe risk of type 2 diabetes.

Stagnationby John Stossel
Invent something and the first thing that goesthrough some people’s minds — especially politicians’minds — is what might go wrong.
3D printers now allow you to mold objects right inyour living room, using patterns you find online. It’s arevolutionary invention that will save time, reduceshipping costs and be kind to the earth.
But what critics see is: guns! People will print gunsat home! Well, sure.
On TV, Rachel Maddow sneered about “a well-armed anarchist utopia, where everybody fends forthemselves with stupid-looking plastic guns. ... It’s apolitical effort to try to do away with government.”
Do away with government? If only we could do awaywith some! Big-government politicians and theircheerleaders in the media focus on threats posed byinnovation because they fear loss of control. Theymove to ban things.
In Texas, Cody Wilson used a 3D printer to make aplastic gun. He called it “the Liberator” and posted itsspecs on the Internet. The State Department thenordered him to take the specs down. He did. But bythen, 100,000 people had downloaded it.
Wilson takes pride in pointing out how his gunshows that gun “control” is an illusion. Being able toprint a gun in your own home will render laws againstpurchasing guns unenforceable and irrelevant.
“I’m your full-service provocateur,” Wilson toldKennedy, my TV show’s correspondent. “Here’s theprinted gun. I’m not here to make you feel better aboutit. I’m here to say, ‘Look, this space is occupied. Dealwith it.’”
The “Liberator” didn’t work well. It broke beforeKennedy could fire a shot. However, printed gunswill improve over time. Wilson’s point: “prohibiting thisis no longer effective.”
Technological innovation constantly threatens cen-tralized authorities.
Now we take the Internet for granted, but when itfirst became popular, people worried that it wouldmainly be used by terrorists, child molesters andmoney-launderers.
“Smash the Internet!” said a cover story in the con-servative magazine Weekly Standard, illustrated witha sledgehammer smashing a computer screen.
Even today, after Google, Facebook, Wikipedia,eBay, Yelp, Craigslist, WebMD, YouTube and morehave clearly made our lives better, Luddites in themedia fret about problems.
“The Internet Is Making Kids Stupid” says PC Maga-zine. CBS’s Bob Schieffer whines that in the absenceof supervising editors, “ignorance travels as rapidlyas great ideas.”
There’s some truth behind these complaints. TheInternet does make some people isolated. It doesallow ignorant ideas to spread. But so what? It alsocreates new human interaction and allows the crowdof users to correct ignorant mistakes.
Schieffer is prematurely old, but even hip novelistslike Dave Eggers and Jonathan Franzen worry aboutthe Net. Eggers’ latest novel suggests it creates “un-naturally extreme” needs, and a Franzen essay at-tacks “technoconsumerism.” Comedian Louis CKgets laughs by worrying that cell phones just keepus distracted — but not really happy or sad — untilwe die. He’d prefer his kids didn’t have them.
They are right that any activity can become a time-waster, but to all the fearmongers I say, stop whin-ing! Overwhelmingly, innovation brings us goodthings. It’s even changed the way Americans find love.A University of Chicago study says 35 percent of newmarriages now start online.
We don’t think twice about miracles like computerdating or email or the fact that, today, most everyonein the world has access to all the world’s knowledgeon a little phone. We take it for granted that we canput a piece of plastic into a wall and cash will comeout — and the count is always accurate. Governmentcouldn’t do that. Government can’t even count votesaccurately.
In a free market, a symphony of desires comes to-gether, and they’re met by people who constantly racktheir brains to provide better services and invent so-lutions to our desires.
It’s not a few people desiring guns that I fear. It’sgovernment getting in the way of all those new pos-sibilities.
How much do the collegestudents in this countryknow about government, history, economics and poli-tics? The answer, not sur-prisingly, is very little.
The American Civic Lit-eracy Program, sponsoredby the Intercollegiate Stud-ies Institute (ISI) gave a 60question test to 14,000 stu-dents at 50 different collegesand universities. The aver-age score on the test was 53percent, an F in any collegeclass. Not one institution ofhigher learning accumulatedenough right answers for apassing grade. Harvardranked highest with a stu-dent average of 69 percent,a D grade.
So as not to prejudge thesecollege students, I took thetest myself. The 60 ques-tions were hard, but not im-possible to answer. Somewere surprisingly easy.Overall, I missed three ques-tions of the 60 for a 95 per-cent grade.
Here are some examplesof the questions:
1. Which battle broughtthe American Revolution toan end?
a. Saratogab. Gettysburgc. The Alamod. Yorktowne. New Orleans2. Which of the following
is the best measure of pro-duction or output of aneconomy?
a. Gross Domestic Productb. Consumer Price Indexc. Unemployment Rated. Prime Ratee. Exchange Rate3. The Gulf of Tonkin
Resolution (1964) was sig-nificant because it:
a. ended the war in Korea.b. gave President Johnson
the authority to expand thescope of the Vietnam War.
Civics Testc. was an attempt to take
foreign policy power awayfrom the President.
d. allowed China to be-come a member of theUnited Nations.
e. allowed for oil explora-tion in Southeast Asia.
4. In his “I Have a Dream”speech, Dr. Martin LutherKing, Jr.:
a. argued for the abolitionof slavery.
b. advocated black sepa-ratism.
c. morally defended affir-mative action.
d. expressed his hope forracial justice and brother-hood.
e. proposed that several ofAmerica’s founding ideaswere discriminatory.
5. Which of the followingare in the correct chrono-logical order:
a. The Constitution, theDeclaration of Indepen-dence, the Articles of Con-federation.
b. Fort Sumter, Gettysburg,Appomattox
c. Cuban Missile Crisis,Sputnik, Bay of Pigs
d. Mexican-AmericanWar, Louisiana Purchase,Spanish American War
e. Prohibition, Boston TeaParty, Reconstruction
How did you do on thosefive questions? The correctanswers are 1-d, 2-a, 3-b, 4-d and 5-b.
That is a fairly represen-tative sample of the ques-tions asked. As you can seethey are not beyond the ca-pabilities of any one whohas had a modest exposureto American history andeconomics.
Other than the inability topass the test, the most aston-ishing thing about the reportwas the high level of nega-tive civic learning that goeson in the colleges and uni-
versities of our nation. TheISI report kept separatescores for both freshmenand seniors. In some of themost prestigious universities(Cornell, Yale, Duke andPrinceton) the freshmen outscored the seniors on thecivics test, in one case by asmuch as five percentagepoints.
That suggests that insteadof increasing their studentsknowledge of American his-tory, economics and govern-ment, the major universitiesare eroding that knowledge. It is no wonder that the col-lege student of today is soeasily influence by the lib-erals about American his-tory. They have never beentold the truth.
For folks who aren’t ac-customed to the six-manbrand of ball, understandthat the game is just asphysical and spirited as the11-man version.
The hitting is hard – some-times even harder becauseof the speed players developon the less-crowded six-manfield.
Emotions run high. Tem-pers flare at times.
Many of the games reflectlong-standing rivalries be-tween schools only a fewmiles apart.
And, yes, the games alsohave their share of trash talkbetween opposing players.
But then things suddenlychange when the final hornsounds, whether after fourquarters of rugged ball or a45-point thrashing merci-fully stopped at halftime.
Of course there’s theobligatory lineup of playersand coaches from both sidesmeeting in the middle of thefield and shaking or slappinghands.
But now, more often thannot, the players are not head-ing straight from there to thelocker room or to a huddlewith their coach.
Instead, players from the
opposing squads are mixingtheir school colors togetherand forming a circle in themiddle of the field.
Taking a knee and bowingheads – often holding hands– they either recite theLord’s Prayer in unison orhear a prayer voiced aloudby one of the players.
Then, perhaps partially asa result of that coming-to-gether, the players minglewith each other.
They shake hands again, slap each other on the back, even attempt friendly hugswhile wearing bulky shoul-der pads.
Quick chats occur as if theyare longtime friends. Actu-ally many of them are friends,at least to some degree.
They’ve competed againsteach other for years not onlyin football but likely in bas-ketball, track and othersports as well. Perhapsthey’ve even been team-mates in the past, on thesame side in pickup gamesor youth sports leagues.
They’ve seen each other atFFA gatherings, beenaround each other at one-actplay competitions.
Some may actually livejust down the road fromeach other, or attend churchtogether in a nearby town. Afew have even been to theother’s prom – school rival-ries thrown out the windowwhen it comes to attractionbetween boys and girls.
For many of those samereasons they had, only min-utes earlier, been trying tomake an impression by lit-erally knocking their oppo-nents flat.
But that was then. Game’sover now. They’re no longerfootball players. They’refriends.
That’s the way sportsshould be.

We should count ourblessings daily that Noahherded animals onto the ark. They’ve gotten basically“good press” ever since, even as much of the worldcrumbles around them.
Why? Because they re-joice, thinking every day iscreated just for them. Evenwhen they foul up, we chalkit up to “cutesiness,” basi-cally laughing their miscuesaway.
Okay, so this is an animallover’s opinion. But remem-ber, we are legion….

News from the Zoo…our minds off the brow-fur-rowing human events thatmake us groan.
To wit, in recent days, many hearts have beenwarmed by the birth of twobaby elephants, each weigh-ing in at more than 200pounds, at the Fort WorthZoo; twin baby pandas atZoo Atlanta, and anotherbaby panda at Washington’sNational Zoo. The twinswere the first born in the USin a quarter-century, and thebirth weight of all three pan-das totaled less than onepound. Meanwhile, at theDallas Zoo, two cheetah cubsbefriended by a Labradorpup have the world agog.
Zoos are among the fewremaining “escapes” from awobbling world that chal-lenges and confounds….
*****Think about it. The ad
agencies obviously do,amusing us with gimmickrythat includes talking ani-mals. Geico Insurance hit itbig with the camel trompingaround the office, askingwhat day it is—“hump day,”of course.
AT&T ads showcase chil-
dren, scoring big with its“queen my dishes, please”knock-off of a “knock-knock” joke. Now, it hasturned to talking householdpets. My favorite is Bruno,a canine connoisseur of catlitter. A close second is thecat who doesn’t give the dogmuch credit in the “smarts”department.
How do they make theanimals’ lips move oncue?...
*****We may “gussy up” our
two rescue dogs for com-mercials. They enliven ourhome, providing barks andtail-wags to welcome usback, whether we’re gonefor a few minutes or a fewweeks.
Yeah, Sadie and Sailorshould clear the bar for com-mercials, never mind theyare not purebreds. It isenough that we tell themthey are, and they believe us.
You’d love these lap ani-mals of unknown heritage, and if you drop by, we’llshow ‘em to you, along withslides from a recent trip….
*****Tarzan loved animals. In
his movies, his chatteringchimp, Cheetah, was alwaysnearby.
I remember the story of amodern-day Tarzan, late ona Friday afternoon. Wearyand eager to return to his treehouse, he was barely able toswing to the next vine. Itwas a struggle to flop intothe corner of his abode. As-suming a fetal position, heweakly asked Jane for a
glass of warm milk, thoughit was not yet the 7 o’clockhour. Weeping, Jane asked,“Tarzan, what’s the matter?I’ve never seen you thisway.”
“You just don’t under-stand, Jane,” he moaned.“It’s a jungle out there.”…
*****Likewise remembered is
a Depression-era guy, downon his luck and out of a job.
A second-rate circuscame to town with a “helpwanted” sign. He applied, learning that the circus’ lonelion had died and would bereplaced by someone wear-ing a lion’s suit. He got thejob and climbed into thecage.
When the lock clicked, hescreamed when he saw a ti-ger already pacing therein.“Pipe down,” the other ‘ani-mal’ yelled. “Do you thinkyou’re the only guy out ofwork?”…
*****Oh, my. I’ll do my best to
complete this column withone-handed, “hunt andpeck” typing. Sailor is fastasleep, his head floppedover my forearm. I dare notdisturb him. If I join him inafternoon repose, as I oftendo, maybe I’ll dream of vis-iting the 104-year-old FortWorth Zoo, one of thenation’s best that attractsmore than a million visitorsannually. Probably I’ll go onWednesday, “Hump Day,”when admission is alwayshalf-price.
Or, when my warm milktakes full effect, maybe I’lldream of Woody Allen’slines. Among his best: theone claiming that even if thelion does lie down with thelamb, the lamb won’t getmuch sleep….
