• Saturated fats-fats that are solid at room temperature, Some raise cholesterol level. Ex. butter, vegetable shortening, margarine.

• Trans fats- created by turning unsaturated fats into saturated fats in a process called hydrogenation. All raise cholesterol levels

• Unsaturated fats- fats that are liquid at room temp. (vegetable oils, olive oil, peanut oil). Tend to decrease a person’s cholesterol level.
