21 Day Fix Slow Cooker Enchilada Soup Ingredients 2 tsp olive oil 2 medium onions, chunked (I prefer red onions) 1 each red, yellow and orange pepper, chunked 2 garlic cloves, minced 3 cups veggie broth (for a richer flavor use chicken broth) cup cilantro (fresh or that fun stuff in a tube) 1 15oz can no salt added black beans 1 14oz can Italian Peeled tomatoes 2 cups frozen corn kernels 1 tsp cumin ½ tsp ground oregano 8 oz. of grilled chicken breast or store bought roasted chicken, shredded into chunks. Salt to taste ¼ tsp. Slap Ya Mama seasoning or cayenne pepper if you like a little heat Instructions 1. Heat olive oil over medium heat. Add onion and peppers stirring until soft, about 5-10 minutes. Do not overcook. Add garlic. 2. Add all ingredients to slow cooker, or if not using slow cooker just add the rest of the ingredients, squishing the tomatoes into chunks with your hands when you add them. 3. Cover and cook on low for 2 hours. 4. Serve with whole grain tortilla scoops. 5. Enjoy!
