The Flippin’ Difference We are a franchisor developed by franchisees with over 60 years of restaurant industry experience. Our past experience as a large, multi-unit franchisee of Taco Bell, Arby’s and Baja Fresh makes us a better franchisor by understanding the support and guidance our franchise partners need to be successful.
Because franchisees are so important to our success, we are looking for qualified individuals who
possess the right mix of expertise, enthusiasm and the following characteristics:
• Passion for the Flippin’ Brand
• Experience owning or operating restaurants
• Live in the market you franchise
• Looking to open 3-5 restaurants
• Financial capability: Personal net worth $400k, Liquid assets $400K and access to capital
Franchise Fees*
• Multi-unit Fee $25,000 1st, $12,500 per additional
• Franchise Fee $25,000 per restaurant
• Royalty Fee 6% of Gross Sales
• Marketing Fund 2% of Gross Sales
• Term 10 years
Over the next few years we plan to grow by partnering with multi-unit franchisees. We’re primarily
interested in centers that service both lunch/daytime traffic and dinner/nighttime traffic. We will also
consider alternative venues such as malls, airports, colleges and other non- traditional type locations. Want to convert an existing restaurant into a Flippin’ Pizza, we can do that too!

The Flippin’ Team Herminio Llevat – Chairman, Board of Directors
Mr. Llevat entered the restaurant and real estate development business in 1998 with the purchase of 5 underperforming Taco Bell restaurants. Between 1998 and 2007, Mr. Llevat and his partners acquired and developed over 75 locations across the country for various restaurant concepts, including Taco Bell, Arby’s, Baja Fresh and Starbucks. Mr. Llevat holds a BA in Economics from Harvard College and an MBA from Harvard Business School.
Peter Tremblay – Chief Executive Officer
Mr. Tremblay has more than 28 years of multi-unit restaurant experience and has held key leadership positions at high-profile, multi-billion dollar global brands. During his 11 years at Starbucks, he received the company’s highest honor, Starbucks President’s Award, from Chairman Howard Schultz. At Jack in the Box, Tremblay led and executed menu strategies, business units and brand marketing to help drive $3.3 billion in sales across 2,220 restaurants in 20 states. At Pinkberry, he was responsible for growth in 21 countries and the company scaled from 40 to over 250 stores. As a former US Navy SEAL Officer, Tremblay is a natural leader and team builder. Mr. Tremblay holds a Bachelor of Arts degree in Economics from the University of California, Los Angeles.
Niv Carmi – Chief Financial Officer
Mr. Carmi is an experienced executive with a solid business background. He was an international management consultant at Booz Allen Hamilton in Latin America for 9 years with experience in finance and marketing in consumer oriented companies. Mr. Carmi has been involved with the group before the acquisition of Flippin’ Pizza and in addition to his role as Chief Financial Officer, he has been closely involved in the development of the marketing initiatives of the brand. Mr. Carmi holds a BS in Mechanical and Industrial Engineering from ITESM (Mexico City) where he graduated first in class and an MBA from the Kellogg School of Management (Northwestern University).
Tabitha Burke – Director of Franchise
Ms. Burke is a strategic thinker who brings over 25 years of progressive experience in streamlining operations and multi-unit leadership. She was the Director of Franchise for HDOS Enterprises where she spent 22 years in company and franchise development. She was responsible for building the franchise program and growth both domestic and international. Ms. Burke holds a Bachelor of Science degree in Business Management from the University of Phoenix and is pursuing an MBA from West Texas A&M University of Business.
Michelle McKee – Director of Marketing
Ms. McKee brings extensive marketing, category leadership, restaurant management and franchise experience to the team. She has worked with a range of businesses from billion-dollar, national food brands such as Jack in the Box, to CPG/retail brands and entrepreneurial start-ups. She has a strategic and holistic approach to business and understands how both big and small decisions impact the bottom line.
Jim – Director of Operations & Training
Mr. Polito has been the Director of Operations and Training for Flippin’ Pizza since January of 2016. Before
joining the company, he held leadership roles for over 20 years with Papa John’s Franchisees in the highly
profitable Pacific Northwest and Las Vegas markets. In 1997 Jim opened the first Papa John’s in Southern
California and built 45 stores in 5 years throughout Orange and Riverside Counties. Prior to Papa John’s
Pizza, Jim spent several years as a Multi-Unit Franchisee for Domino’s Pizza and then 6 years as the
Director of Company Operations for 125 Domino’s stores in the Southwestern United States.
