Dear Healthcare Marketer,I love this, our Wining and Dining issue! It’s always fun to learn about

your favorite restaurants, try your best recipes…and I love discovering a nice new glass of wine.

I have a couple of new favorite restaurant gems to share with you too. One is Scala del Nonna, located on 32 Church Street, Montclair, NJ. They have outside seating, which this time of year is definitely an added bonus. I can just eat their appetizer specials for dinner – I love their rock shrimp, grilled diver sea scallops, and my favorite pasta is Ricotta Gnocchi con Salsic-cia e Porcini, made with sausage and porcini mushrooms in a light tomato basil sauce with toasted fennel seed. It melts in your mouth! The perfect touch to end the meal is Sally the Pastry Chef’s Walnut Tart. It is to die for…even if you don’t like walnuts, you have to try this treat. The staff is wonder-ful and so friendly too.

Another one of my new favorites is De Novo located at 275 Bellevue Avenue at the Upper Montclair, NJ Train Station. This is one of Andrew McGuire’s favorites too, so you know it’s good (in fact, look for Andrew’s Dining Out Review of De Novo, in an upcoming issue…) To whet your appetite in the mean-time, for starters, De Novo has an amazing flatbread with prosciutto di parma, fig marmalade, and goat cheese. Out of this world!

And while you can count on so many of today’s top restaurants offering locally sourced foods, it’s great to see even fast-food restaurants jumping on this bandwagon. It’s not necessarily up there with my very favorite restaurants, but Chipotle offers tasty food, so I frequent it a lot with the kids. I’m happy to see that they too are improving their offerings by getting rid of a lot of additives and fillers, making their choices more healthy and fresh. Hillary Clinton, President Obama, Taylor Swift, and many more choose Chipotle too.

Speaking of healthy and delicious, in this issue, Sharon Ames shares her best-loved restaurant that offers a wide array of vegan and gluten-free selections, as well as more traditional fare. Gail Kaye dishes on her first choice for a seasonal spot, where picnic tables abound and utensils are optional. Andrea L. Gaymon, M.Ed., highlights her choice for family-style Italian, plus top pick wines to pair with the meal. Tapas in a wine bar? Samantha Bogus has us covered with her pick of the perfect place for small plates. Kelly Morrison shares her tried-and-true favorite restaurant that has delighted generations of her fam-ily. Judy Picciano points us in the direction of Fort Myers, Florida, for some of the best brick-oven pizza and more. And if you’re in the mood for sushi, Alfie Perez tells about Nagoya, where there’s a Malaysian influence on Japanese selections and always something for everyone.

M y newest fave restaurant is Boondocks Fishery in Red Bank, New Jersey. We moved to Red Bank last winter and have

been exploring our new hometown whenever we can. We found Boondocks during the summer as it’s only open from about early May through mid-September. It’s a VERY casual outdoor restau-rant with seating that consists of wooden picnic tables. Customers place their own order at a window and your food is delivered to you on paper plates. The food, primarily seafood, is terrific and you can bring your own wine or beer.

One of my favorite things to eat is the lobster! You don’t mind eating it with your hands in this casual atmosphere. Best of all, the restaurant is located at the wharf in Red Bank. Did I mention there’s usually a live band entertaining outdoors on weekend nights? Nothing more fun than sitting outdoors on a summer evening with a group of friends, casually enjoying Boondocks’ seafood with a bottle of white wine, watching the passing boats on the Navesink River while listening to live music.

Femmina is a classic family-owned Italian restaurant. The Coppola family was originally from Monte

di Procida in Italy. They moved to America and now two brothers run the restaurant. Their seafood specials are delicious. They have a great trio of coconut tilapia, shrimp, and crab cake served with a sea-food ravioli. And their pastas are all homemade. I like their gamberi almone, which is shrimp sautéed with broc-coli rabe in a spicy garlic and oil sauce over linguini. The food is served with house-made bruschetta, pizza bread, Italian bread, and salad. The plates are so big they barely fit on the table and there are always leftovers for at least two more meals.

Since Femmina is BYOB, we like to take with us Bogle Petite Sirah, which has hints of vanilla and blackberry, or their Pinot Noir. Both go well with Italian food. Another favorite is Dogajola, a cabernet-sangiovese. I like to try and find wines that taste good for under $15.

Jamonera is a restaurant perfect for all occa-sions. I’ve been with a friend who was visit-ing, with my boyfriend, and for a New Year’s

Eve dinner. Every time I’m equally impressed. The staff is extremely knowledgeable, but never pushy or annoying, and the food is impeccable. I’ve discovered my favorite wine there too – Verdejo, a white wine I love because it’s fruity and refreshing. The food seems familiar, but with a unique and delicious twist. The space is cozy, not too dark or too loud, and I’ve walked in with no reservation and been able to sit at the bar with no problem.

Some of my favorite offerings include:• Crispy Cana de Cabra – crispy fried goat cheese,

grapefruit, grilled pears, hazelnuts, baby spinach, fennel, apricot preserves

• Seared Sea Scallops – green romesco, housemade pork sausage, oranges, Jerusalem artichokes

• Lucio’s Dirty Egg – braised short rib, Spanish fried farm egg, chistorra chorizo

• Gambas Al Ajillo – garlic shrimp, brandade, roasted peppers, and grilled country bread

• Bunuelos – Spanish donuts to die for; espresso dulce de leche, spiced chocolate ganache, sea salt

In my opinion, you can’t go wrong with anything at Jamonera. I will be back again and again.

DIRECTIONS

1. Stir together first 4 ingredients.2. Beat eggs and next 4 ingredients at medium speed with an

electric mixer until smooth. 3. Add flour mixture, beating at low speed until blended. 4. Fold in carrots and next 3 ingredients. 5. Pour batter into a greased and floured 13” x 9” pan. 6. Bake at 350° for 30 minutes; then cover pan loosely with

aluminum foil to prevent excessive browning, and bake 20-25 more minutes or until a toothpick inserted in center comes out clean.

7. Drizzle Buttermilk Glaze evenly over cake (you can also use a toothpick to poke holes all over the top of the cake so the glaze sinks in more evenly); cool completely in pan.

8. Then spread Cream Cheese Frosting evenly over cake.

Buttermilk Glaze1 cup sugar ½ cup buttermilk1 ½ tsp baking soda 1 tbsp light corn syrup½ cup butter 1 tsp vanilla extract

DIRECTIONS

(Use a bigger pot than you think you’ll need—it foams up quite a bit.) Bring sugar, baking soda, butter, buttermilk, and corn syrup to a boil in a pot over medium-high heat. Boil, stirring often, 4 minutes or until mixture is golden brown. Remove from heat, and stir in vanilla.

Cream Cheese Frosting½ cup butter, softened1 (8 oz) package cream cheese, softened1 (3 oz) package cream cheese, softened1 (16 oz) package powdered sugar1 ½ tsp vanilla extract

DIRECTIONS

1. Beat butter and cream cheese at medium speed with an electric mixer until creamy.

2. Add powdered sugar and vanilla extract. 3. Beat at high speed 10 seconds or until smooth.

Spicy Turkey Meatball Banh Mi Sandwiches Looking for something savory? Here’s an awesome Turkey Meatball Sandwich recipe.

INGREDIENTS

For the meatballs:1 lb 93% lean ground turkey4 garlic cloves1 tbsp fish sauce1 tbsp sriracha1 tbsp sugar2 tsp cornstarch1 tsp black pepper1 tsp salt

For the mayo:½ cup reduced-fat mayo1 tbsp sriracha

DIRECTIONS

1. Julienne or grate daikon and carrots into a large bowl – you should have about 3 cups of vegetables.

2. Add rice vinegar and sugar to the carrot/daikon mixture. Toss to combine. Let rest at room temperature for 1 hour, tossing occasionally.

3. Using a microplane, puree garlic (or mince by hand or with a garlic press) into a separate large bowl. Add ground turkey and the remaining meatball ingredients. With your hands, mix all the ingredients until well combined.

4. With a medium cookie scoop (or a heaping tablespoon), make little meatballs out of the turkey mixture (you should have about 16 in total). Place on a small platter or large plate and refrigerate for 30 minutes.

5. Combine mayo and sriracha; seed and slice jalapeno and mince cilantro. Scoop insides of the baguette out (this will make room for the filling).

6. Heat canola oil in a 12” nonstick skillet over medium-high heat. Add meatballs and pan fry until browned on all sides and cooked through on the inside (meat thermometer should read 165° F).

7. To assemble the sandwiches, spread spicy mayo over the bottom of the baguette, top with jalapeno slices, cilantro, meatballs, and pickled veggies. Top with scooped out bread shell.

Best Carrot CakeAnd now for a little something sweet…

INGREDIENTS

2 cups all-purpose flour2 tsp baking soda2 tsp ground cinnamon½ tsp salt

For the pickled vegetables:1 large daikon radish2 large carrots¼ cup rice vinegar2 tbsp sugar

Additional:1 baguette1 jalapenoCilantro2 tbsp canola oil

OMG – Sweet Basil’s Café in Living-ston is hands down the best breakfast/brunch in New Jersey. Where else can you get a Pulled Pork Benedict? Whisky or Tiramisu pancakes? Lunch and dinner are just as delicious and all the food is very reasonably priced. This is a favorite place to take Novartis folks for lunch. There is a wide array of great salads, imaginative sandwiches, and entrees – Gorgon-zola Bruschetta with toasted walnuts and a drizzle of honey; Sweet Basil’s BLT with melted brie, arugula, tomato, and applewood smoked bacon on a baguette with mayo or honey mustard; Tahini Tuna Fish Salad with onion, carrot, celery,

and sesame tahini on a baguette; Chili Garlic Shrimp Tacos – crispy shrimp with a sweet and spicy glaze served in flour tortillas with pineapple salsa and shredded cabbage.

Plus there are plenty of vegetarian and vegan choices like San Francisco Haven (vegan) – hummus, avocado, cucum-ber, and tomato on toasted eight-grain bread; Vegan Cafe Salad with greens, mango, avocado, and cilantro lime vinai-grette topped with a vegan veggie burger; Memphis Veggie Burger topped with bourbon bbq sauce, frizzled onions, spicy slaw, and cheddar cheese. And yummy gluten-free options like GF Smoked Salmon Benedict served with capers and red onions, Chipotle Garlic Grilled Shrimp Salad of greens, mango, avocado, and cilantro lime vinaigrette. Sweet Basil’s is a lively, inviting bistro-style dining spot. Like many New Jersey eateries, it’s BYOB. But the food is so good, you’ll never miss the drink. I almost don’t want to give this wonderful eatery away, as it’s gotten harder and harder to get a table in recent years.

1. Combine the olive oil, vinegar, prunes, olives, capers and juice, bay leaves, garlic, oregano, and salt and pepper in a large bowl.

2. Add the chicken and stir to coat. 3. Cover the bowl and refrigerate overnight. 4. When ready to cook…Preheat the oven to 350° F. 5. Arrange the chicken in a single layer in one or two large,

shallow baking pans and spoon the marinade over it evenly.6. Sprinkle the chicken pieces with the brown sugar and

pour the white wine around them. 6. Bake, basting frequently with the pan juices, until the

thigh pieces yield clear yellow (rather than pink) juice when pricked with a fork, 50 minutes to 1 hour.

7. With a slotted spoon, transfer the chicken, prunes, olives, and capers to a serving platter. Moisten with a few spoon-fuls of the pan juices and sprinkle generously with the parsley or cilantro.

8. Pass the remaining pan juices in a sauceboat.

Note: To serve Chicken Marbella cold, cool to room temper-ature in the cooking juices before transferring the pieces to a serving platter. If the chicken has been covered and refriger-ated, reheat it in the juices, then allow it to come to room temperature before serving. Spoon some of the reserved juice over the chicken.

A delicious chili with complex flavors, spicy with three kinds of peppers, and a bit more soup than thick chili.

(Particularly perfect for a wintry day!)

INGREDIENTS

2 cups diced onions 2 cups diced celery 5 garlic cloves, chopped ½ cup vegetable oil 1 lb chicken breast, cooked and diced (you can also shred) 8 cups of water (I make this only 3 cups now to thicken

it up) 1 bay leaf 1 7 oz can chopped green chilis ½ tsp oregano ½ tsp cumin½ tsp dry mustard ½ tsp basil ½ tsp Old Bay Seasoning ¼ tsp Cajun seasoning1⁄3 of a 7 oz canned chipotle in

adobo, chopped 4 tbsp chicken base1 pickled jalapeno, chopped (I’ve used a regular jalapeno;

works fine)2 lbs white beans, soaked overnight (I used canned, just

rinse/drain well)½ cup heavy cream 1 cup shredded carrots 16 oz sour cream

DIRECTIONS

1. Sauté onion, celery, and garlic in oil until tender, about five minutes in a large stock pot.

2. Add chicken, water, bay leaf, chilis, oregano, cumin, dry mustard, basil, Old Bay, Cajun seasoning, chipotle, chicken base, and pickled jalapeno; simmer for 1 ½ hours.

4. Add the drained beans and heavy cream; simmer for one hour or until the beans are tender (I simmer for hours).

5. Garnish soup with carrots and sour cream.

A Word on Wine...When having steak, I always pair with a red – Estancia or Justin Cabernet, or a Pinot from Rodney Strong. Tilapia with a J. Lohr Chardonnay. If it’s more than $20, it’s gotta be really special!

Bodegas Volver 2012 Tarima Hill Monastrell

Most people will see this w i n e a n d a s k , w h a t i s Monastrell? Monastrell is rarely bottled exclusively by itself, except in some parts of Spain and the U.S. This grape is mostly used for blending in the Rhone Valley and is know as Mouvedre throughout most of the world. I liken Spanish Monastrell to a more expressive fruit-driven Merlot.

I share my wine thoughts on the app Vivino (see Monique Michowski’s story, p. 14). This is what I had to say about this Monastrell on Vivino: “I can really see people losing their mind over this wine. Gobs of hedonis-tic rich fruit. Very dark ripe fruits, and very easy to drink. This wine represents a SOLID value. If you want an easy night or a crowd-pleaser, this wine is for you. And for about $17 you won’t feel guilty about this Guilty Pleasure of a wine.”

Bodegas Breca Old Vines 2011 Garnacha from SpainTo begin with, not enough people are drinking Grenache. Grenache is a crowd-pleasing wine with loads of fruit and tons of value, especially from Spain where it is called Garnacha. Grenache wants to be elegant like Pinot, but it can’t. The fruits are too big and the grapes want to be more ripe. Breca is well regarded professionally, but, in my personal experience, I typically rate this wine 3.5-4 out of 5, and the beautiful part is the price. For around $11, this wine represents a ton of value.

This is my review from Vivino: “This is prob-ably closer to a 4 (I rated 3.5 on this occasion) for my pal-ate. A very solid Grenache that has a very pleasing palate with a mouthful of blueberries. Good fruit. The front palate washes over and greets the mouth with lush ripe wild ber-ries. While the finish does feel a touch clipped, you have to remember what you spent. For a party, a cookout, or any large gathering there may be no better wine that CAN please anyone for such a low amount of money. Highly rec-ommend.”

M y favorite restaurant is Kelly’s. Part of me liking it when I was little probably had to do with the

name, but as I have grown older it remains my favorite for the ambiance and OUTSTANDING food. Kelly’s also happens to be located in my favorite place in the United States – the Outer Banks of North Carolina.

To start with, at Kelly’s you receive the most delicious sweet potato biscuits. I have tried to emulate this in my bak-ing, but cannot perfect them the way Kelly’s has. Then you have to have the Warm Lump Crab-Artichoke Spinach Dip made with crab caught fresh on North Carolina’s coast. The dip is about as close to heaven as you can get on a pita toast point. Following appetizers, for entrées, I always go with either the Lump Crab Cakes (my go-to since I was seven) or the Seafood Norfolk – sauteed shrimp, scallops, and jumbo

lump crab cake in sherry garlic butter. My hus-band usually goes for the NC Seafood Collection, featuring a little of every-thing – flounder, shrimp, scallops, and crab cake (fried or broiled). You really can’t go wrong with any of the entrées though!

The owner, Mike Kelly, has several restau-rants on the Outer Banks, but this place still holds a special place in my heart. If you want fresh, delicious seafood, this is hands down the best place to go. The seafood is seasonal and local, the ambiance is casual, they have bands playing most nights of the week in the bar area, and Mike always makes a point to come around and talk to everyone.

I love that Kelly’s has become my husband’s favorite res-taurant too. It makes it easy to decide where to go when we are on the Outer Banks!

My wife and I have always been fans of great sushi. When we lived in the city, it was easy to

simply walk by a restaurant, browse its menu, and check out the atmo-sphere. Now that we have kids and live in the suburbs, we like to know exactly what we are getting before committing.

We frequent Nagoya Japanese Restaurant in Westfield even though we drive past 15+ other sushi restaurants to get to Nagoya. Simply put, Nagoya is always outstanding and has never disappointed! From first glance the austere location might not look like the fanciest of places, but the sushi and causal locale are exactly why we keep coming back.

To start things off, the BYOB and next-door liquor store are a nice perk. The owner Henry has a Malaysian influence and incorporates some refreshing mangos into his rolls. Hen-ry’s rolls are unique and never get boring. We usually start things off with a Sushi Pizza – a toasted tortilla with avocado, tuna, masago, eggs, and panko flakes with a spicy tuna sauce drizzled on top. We’ll also have a Sushi Sandwich – a spicy tuna roll in the shape of small finger sandwiches – before div-ing into more traditional rolls. The NYCFOH (NYC Friends of Henry) Roll is another staple. This was created for friends of the restaurant who take the train into Westfield just for the sushi. NYCFOH is spicy tuna, mango, crunchy with eel and seared pepper tuna on top. Our kids are still young and not as adventurous with foods yet, but we always find something on the menu for them also.

While I frequent Nagoya with my family, I sometimes find a reason to meet there for business lunches (minus the BYOB).

Z infandel is my new favorite wine! It has a delicious, clean taste with a touch of sweetness. The particular Zinfandel that got me hooked is called Predator from California. A friend of mine discov-ered Predator on her honeymoon to California at a vineyard in Napa. She highly recommended it

and so do I!I love pairing Predator with a good cheese platter. To name a few of my favorites - Smoked Gouda,

Jarlsberg, Scamorza, Fresh Mozzarella, and Brie.

The Best Pizzaby Judy Picciano

C apone’s is one of my favor-ite restaurants. They serve up wonderful freshly baked

brick-oven pizza, plus a variety of other Italian-themed dishes. We often stop by for lunch.

In the floor is a big glass panel. Underneath are steps down to a vault, where a skel-eton guards piles of “money” on a table. Supposedly, Al Capone kept some of his wealth (ill-gotten or not?) in a vault in this former bank building. The legend is that this vault was “discovered” during building renovation. I’m skeptical, but it’s fun anyway. Another feature: The men’s room door has jail cell bars on it, while the ladies’ room has a running video of Al Capone’s life.

I must admit we usually go for the pizza, because it’s so good! However, other choices include Mama Capone’s Meat-balls – available in appetizer portion or as a sandwich (yum if you’re hungry!) and Sausage and Peppers, available as an appetizer or a sandwich portion, as well. Also, the House Salad has always been fresh and good – it has garbanzo beans and olives in addition to the usual ingredients.

V ivino is a free app I like to con-sider my own personal “Wine Guy.” I downloaded this app onto

my smartphone. It is a great resource and I am happy to share with all my friends in our industry.

Vivino has articles, top wine lists, and reviews of wine all in one place, but what I find best about it is that it allows me to take a photo of a label or wine list in a restaurant and will give me information about the wine.

The information includes:• Average rating • Reviews by Vivino users, who have had the wine• The color• Grape variety• Detailed description of wine• Average price• Where you can purchase online or locally

An example of how I use Vivino is when I am shopping for wine. Whether it is a gift, for dinner at a local BYOB, or a special meal I am preparing at home, I bring my iPhone with me to the wine shop. I open the app, take a photo of the wine label, and have it analyze the wine for me. It has made me somewhat of a wine expert. Now everyone knows my secret. Salud!

What are two things on your bucket list?I have always wanted to see the pyramids of Egypt. As one of The Seven Wonders of The World, it would be amaz-ing to experience their majesty and beauty firsthand. It is a big trip to take and something I hope to do one day in the future. I would also love to create a family cookbook and family photo album that can be passed down from generation to generation. I love to cook, try new recipes, and give them my own twist. I feel it is important to keep family traditions and memories alive.

What was your first job?In high school, I worked at Ralph’s Italian Ices. After I went to college, both of my sisters worked there as well. I guess I started a family legacy. Coconut raspberry tart is my favor-ite flavor! I still visit from time to time to get my fix.

Do you have any pets?I have a six-year-old Boston Terrier named Marshall. I love him even though he is crazy and gets very excited meet-ing new people. Marshall is so gentle with my 15-month-old son; it’s amazing how dogs can sense how to behave.

Who do you most admire for their humanitarian or charitable efforts?

I really admire Angelina Jolie. I find it inspiring that some-one with such wealth and societal influence chooses to take the time to visit and help nations in need and bring real change to the world. She has also brought awareness to preventive treatments in women’s health. Angelina Jolie is a rare example of a prominent figure utilizing his or her resources for the well-being of others. I wish more celebrities used their star power for such great causes.

What is your favorite restaurant?Peekamoose in Big Indian, NY. Since the beginning of our relationship, my husband and I try to get away from it all and rent houses upstate for the weekend a few times every year. A few years ago we discovered this restaurant called Peekamoose that has become both his all-time favorite and mine. Everything is fresh, farm-to-table, and the menu is updated regularly. I love the décor – to describe it best, it looks like an Anthropologie store was turned into a restaurant. Very woodsy and rustic. They also have a

nice casual bar area and outdoor deck where you can have s’mores and enjoy the views of the Catskills.

How do you stay fit?My 15-month-old son certainly keeps me active. He is just beginning to walk and loves getting into everything. He keeps me on my toes, literally and figuratively. I also want to be a good example to my son, so I try to cook almost every night of the week with fresh ingredients.

What is your favorite quote?“Adults are just outdated children.” ~Dr. SeussTo me it is important to not always take yourself so seri-ously and remember to have fun. I think people get too consumed with the day-to-day hustle and bustle. We need to stop and enjoy the little things in life. Seeing the world through my son’s eyes has reminded me of this necessity.

What three adjectives best describe you?Passionate, Honest, and Sensitive.

What is your favorite movie?My all-time favorite movie is True Romance. It has all the makings of a great movie – adventure, romance, crime, and drama with an all-star cast. The dialogue is the best part of the movie. I’m a Quentin Tarantino fan; this was one of his first screenplays written for a major motion picture.

What one thing would you have done differently?Looking back, I think I should have gone away to a col-lege that was outside of Manhattan. Going to Pace Uni-versity and living in the city was fun and I really appreci-ate the experience, but I feel like I may have missed out on the campus and sorority type of life.

Best/worst part of your job?Of course the people are the best part! My colleagues are like a second family to me. It has been such a great experi-ence to grow with them personally and professionally.

What one little thing always makes you happy?Seeing my son’s face or hearing his laugh. I wish I could bottle up that giggle and keep it forever. I could be having the worst day and he will immediately erase all that away and put a smile on my face.

What is your pet peeve?Rude people and loud eaters. The world would be such a better place if everyone just took a second to step back and be a little more polite. Holding doors, helping some-one, smiling, saying thank you and please are such little steps that can really go a long way.

What famous person would you HATE to be stuck in a room with?

Anne Hathaway. I don’t know what it is, but there is something about her that really bothers me. Apparently I’m not alone with this either. There seem to be many people that feel this way as well. Poor Anne…
