Carnaval is South Dakota’s only Brazilian-style steakhouse. The restaurant opened in 2005, and is probably best known

for the “Gaucho Meal.” This feast includes an abundance of slow-roasted meats served table-side by Gauchos.

With the Gaucho Meal, you can first visit the expansive Hot and Cold Salad Bar, and then return to your seat. The Gauchos continually pass by the tables with the meat service. All you need

to do is use the Red and Green service indicators to let them know you are ready for them to stop.

You can also order from the menu, which includes Small Plates (appetizers), grass-fed beef steaks, seafood, a variety of flame roasted pizzas and Lavash flatbreads, salads, burgers and more. Carnaval also offers a children’s menu.

In the past, a seasonal patio has been available to customers

from Spring through Fall, weather permitting. But, with business growing, general manager Todd Burns said the time came to start exploring options for expanding their seating.

A few years ago, he saw a concept that would allow the restaurant to expand seating without actually having to build an addition. The Cabreeze system, which was added to the existing patio area, includes retractable glass walls that can be adjusted

open or closed, depending on the weather. In addition to the Cabreeze system, Carnaval added a roof

over the patio, creating four-season outside dining. The area can accommodate 70 guests, has stainless steel tables and all-weather chairs covered in a bright red to fit the Brazilian theme. Radiant floor heat and radiant overhead heaters can be used when the weather turns cold.

think fresh.

As the weather gets warmer, the glass enclosure can be opened for a true outdoor dining experience. South Dakota is not without its share of wind, though, so Burns says they can make adjustments and close off a corner so there’s a wind block.

The main section of the restaurant has seating for 220 guests. And, even though the live music is performed inside the traditional restaurant, guests dining in the Cabreeze can enjoy it as well.

Carnaval keeps an online calendar of events at www.carnavalbraziliangrill.com, so you can watch for your favorite performers or special events like wine dinners. You can also make reservations online.

Burns recommends Carnaval for private events, too. “We invite people to plan their celebrations here. From small

birthday parties to large business events, we can help create a one-of-a-kind experience.”

Taking care of your vision has never been easier—or more fun—thanks to 20/20 Eye Candy.

The business recently moved to Remington Pointe at 69th Street and Western Avenue, and owners Anne Jorgensen and Krista Smit say their goal is to provide excellent service in a unique atmosphere.

20/20 Eye Candy offers full-service vision care with partnering optometrist, Dr. Meghan Montreal to help patients with everything from routine eye exams and contact lens fittings, to more challenging conditions like dry eye, allergy, red eyes,

glaucoma and macular degeneration. In addition to fitting you with the right frames, Jorgensen

says, “We are dedicated to providing the best visual experience with our lenses. We fit patients with the newest lens technology and lens enhancements. Our goal is to ‘wow’ every customer and patient with our service, selection and expertise. We will not compromise your vision just to ‘make a sale.’ We want to build relationships and create customers for life!”

“There have been so many advancements in both lens materials and designs,” says Jorgensen. “If someone has worn

contacts in the past but stopped because of discomfort or vision changes, we encourage them to come see us. We are very proud of our extensive contact lens selection.”

Dr. Montreal can determine the best option based on a patient’s unique visual needs, the type of correction they require, previous contact lens experience and their lifestyle.

The business is branded, “Eyewear With Attitude.”“We want this experience to be very personal,” says Smit.

“Not only do we have tremendous expertise in our team, we also offer many unique frame lines—not otherwise available

in this region. This way each patient can find the right style to meet their needs and to fit their personality.”

The store carries exclusive frame lines like Jee Vice, Isson, Em’ and Iyoko Inyake. Jee Vice, for example, is manufactured in Italy. Many celebrities have been photographed wearing Jee Vice shades, like Rihanna, Anne Hathaway and cast members from Sex in the City.

The European designed product lines and the exquisite craftsmanship allow customers to experience extraordinary, unique eyewear and products from around the world without

Take the Ride of Your LifeTour de Cure • July 12

Today, 25.8 million children and adults in the United States are diagnosed with diabetes and 7 million are undiagnosed.

With such alarming numbers, the Tour de Cure could not come at a better time. The Tour de Cure is a series of fundraising cycling events held in 44 states nationwide to benefit the American Diabetes Association. South Dakota will be pedaling toward our $98,000 goal on Saturday, July 12th at the Sanford Research Center in Sioux Falls.

The Tour is a ride, not a race, with routes designed for everyone from the occasional rider to the experienced cyclist. Whether you ride 10 miles or 50 miles, you will travel a route supported from start to finish with rest stops, food to fuel the journey and fans to cheer you on! South Dakota also provides a walking route for those that choose not to cycle.

July 12th will be a day we celebrate our Red Riders and Striders. A Red Rider or Red Strider is a person who lives with

diabetes and showcases the courage it takes to live every day with this difficult disease. All riders who have type 1 or type 2 diabetes are eligible to become a Red Rider or Strider and receive special recognition materials. With hundreds who may share a similar story, and hundreds more to support them, being a Red Rider or Strider can help with the first step or the millionth—in the fight to live a healthier life!

Your typical Tour de Cure experience:• Arrive for your check-in time to get your rider number and

turn in any donations.• Enjoy the breakfast provided and have a stretch before

making your way to the starting line.• Our Opening Ceremonies will inspire you to have a great

ride for a great reason. The Red Riders lead everyone out—they are why we ride!

Many people will participate in the Tour de Cure for the camaraderie and cycling challenge, but the real reward comes in knowing that every mile we ride and every dollar we raise brings us that much closer to stopping this disease that affects over 26 million Americans.

Dress for Success Sioux Falls opened its doors in October 2013. Their mission is to help women achieve economic

independence and their self-defined financial and professional goals. Women go to them through Referral Partner agencies and organizations in the Sioux Falls area. Each woman is assigned a Client Coach, who spends several hours assisting the woman with Interview Suiting and Preparation. If the woman obtains a job, Dress For Success provides her an entire weeks’ worth of attire appropriate for her work situation.

Women are also invited to join other career development and support programs Dress for Success offers, including access to the Career Center, mentoring with a Career Coach, and membership in their Professional Women’s Group (PWG). The Professional Women’s Group provides networking support and training programs.

Volunteers are essential to the operation of Dress for Success. Currently, they are almost 100% volunteer-driven. Volunteers serve as Client and Career Coaches, Clothing Sorters, and on Special Events Committees. Their marketing and office operations staff also consists of volunteers. If you would like to learn more about Dress For Success volunteer opportunities, please contact the office at (605) 610-0665. They have regularly scheduled trainings, and would love to include you.

Often, the women who come to the office do not know what to expect when they are referred to Dress for Success. They may be nervous, wondering if they will be judged; feel unworthy to receive the items; or scared by all the challenges they face. However, when a woman enters the doors of their little house, she is immediately put at ease. It is peaceful, respectful, and beautiful. They meet the client where she is and do not pass judgment. The hours a woman spends with her Client Coach in her Interview Suiting and Preparation are focused on her. For many of the women, it is the first time they have had access to professional attire. As a result, many women have expressed how special and beautiful they feel after the visit.

Dress for Success is more than just the suit. They are about dressing the woman from the outside in. They strengthen her confidence and ability to secure a job, and, thereafter, support her in job retention and advancement. One woman expressed it best: “It doesn’t matter what pair of shoes I wear to work, I couldn’t have made it without the women at Dress for Success.”

The 7th annual Susan G. Komen South Dakota Race for the Cure is more than just another 5K in Sioux Falls. This event celebrates life

and hope while honoring those whose journey has ended in their fight against breast cancer. Families, friends, and coworkers are invited to join together at Falls Park for events including a Kids for the Cure activity area, a group Zumba dance, a new koMEN area with fun and friendly competitions, and a health expo filled with local exhibitors. After the expo, show your support to those affected by breast cancer everywhere by walking or running through our trademark, downtown 5K race route. All competitive runners and leisurely walkers are welcome as each step we take gets us closer to ending breast cancer forever.

The Komen Race for the Cure is the largest series of 5K run/walks in the world each year. In 2014, it is estimated over 1.6 million people will participate at over 150 races on over 4 continents. Since its inception over 30 years ago, Susan G. Komen has funded more than $800 million in research and provided $1.7 billion in funding to screening, education, treatment and psychosocial support programs serving millions of people in more than 30 countries worldwide. Komen was founded by Nancy G. Brinker, who promised her sister, Susan G. Komen, that she would end the disease that claimed her life. We continue to fight for this promise today, and the promise made by millions of others to end breast cancer forever.

This promise is carried out in South Dakota through events including our local Race for the Cure. As a result of fundraising at the Race, we have made a tremendous impact locally. Your dollars have helped us touch the lives of over 36,000 women and men across our state by providing survivorship and support programs, diagnostic services, travel assistance to cancer treatment centers and education on the importance of early detection. We have also provided over 6,500 mammograms and clinical breast exams and as a result, detected over 170 cases of breast cancer. When breast cancer is detected early, before it spreads beyond the breast, chances of survival greatly increase, which is why it is vitally important we continue to provide screening to low-income and medically underserved women and men in our state. In addition to investing heavily in our local community breast health programs, we also fund innovative research, some of which is being done in our backyard in South Dakota.

Help us keep our promise and join us on September 28, 2014 in the fight against breast cancer as we come together to save lives in South Dakota. We will continue this fight until our daughters, mothers, sisters and friends are safe from this ugly disease which will impact 1 in 8 women in her lifetime.

Registration for the Race is now open. Use the discount code ‘FINDACURE’ between May 1 and May 20 to save $15! Visit www.komensouthdakota.org/race to register and make your promise today!

If you are dreaming of a new home, you might be wondering whether to buy or to build. Some people enjoy the process of starting with nothing but

an empty lot, while others do not.One Sioux Falls resident thought she would like to build a

new house, but discovered that process perhaps wasn’t right for her. So, she found an existing home that she liked, but she wanted to make it her own.

This home had a floor plan she liked, but the décor was traditional. Describing her style as eclectic, she decided to seek out some design help. Enter Daniel Paulson.

Paulson, a local designer with his own business who spent a decade in L.A., turned out to be just what this homeowner was looking for.

“This was great, because I ended up getting just what I

wanted without having to start from scratch,” she says. The client-designer relationship began with a series of

interviews to get to know one another, and both agree this was a key element in the process.

“I don’t always get a chance to spend time with my clients,” says Paulson, “so I really appreciate the opportunities when I do have the chance to really get to know them and their style. I have certain things that are my ‘stamp’ as a designer, but I also realize the client is the one that has to live with the design choices.”

A client will appreciate a designer who not only listens, but also observes. In this partnership, the client talked about her desire to create spaces that were functional and comfortable, but added that she also likes a little “glam.” She was surprised to find out later that Paulson not only used ideas she suggested,

but he also took color cues from her outfits and accessories, right down to the color of her nail polish.

The entryway makes a welcoming statement with a large, color-splattered art piece that introduces guests to the home’s color scheme. This particular piece has dominant oranges and yellows, colors which represent energy and creativity, says Paulson, which is perfect for a client who loves people and entertaining.

The color scheme throughout the house is warm earth tones with splashes of color. Having a neutral base, like the earth tones, lets a homeowner play with color and texture.

In the living room, for example, there is a grey sofa, complimented by the burnt-orange side chairs with metal studs that sit opposite it. The coffee table is made of industrial-looking stainless steel, but it has a glass top covering a design of horizontally- and vertically-placed wine bottle corks. A tall

vase in the corner holds tall bamboo rods, there are jute rugs on the floor, but a light fixture of dangling strands of crystals.

It’s perfectly fine to mix-and-match, according to Paulson. The key is balancing it out.

“If there was just one item made of metal in an all-wood room, it might seem out of place. But, you can choose all sorts of textures and materials with a little wood here and a little over there, or a piece of art using metal to balance out a metal piece of furniture.”

The living room and kitchen are in a shared open space, to create some entertaining space, the pair placed additional side chairs near the angled island, so people sitting at the island can turn their chairs around, other guests could rotate the retro-looking ivory chairs in the living room...and an entirely new conversation area is born.

Page 36: 2014 05 etcmagazine volume13 issue06

“Most people end up around the kitchen when entertaining anyway,” the home owner says, “so having this seating made more sense than creating a dining space here in the kitchen.”

There is a separate space for occasions when she does want to have a sit-down dinner. Tin ceiling tiles, French style chairs and floor-to-ceiling drapes give a historic touch to the room,

but the “eclectic” style comes from the reclaimed wood table, a crystal chandelier matching the one in the living room, and a fireplace mantel dressed up with faux fur and hanging candle lanterns.

“I’ve had this piece for years,” she says. “It came from a bar in Milwaukee, and is dated back to the late 1800s. I moved it 4.14.14 ETC syverson_Layout 1 4/14/14 10:21 AM Page 1

once, gave it away a couple of times, and it just kept coming back to me. When Daniel saw it, he knew he wanted to use it in this room.”

She adds that it’s great to have a designer who is willing to work with what you have, as well as to introduce new ideas and perhaps encourage a homeowner to go outside their normal

comfort zone.“There has to be a lot of trust when you work with a designer,”

she says. “You have to be willing to give up a little control, which was hard for me at first.”

The two would often walk through stores together, not necessarily to pick out a specific piece, but more for the

experience so that Paulson could see the different items that would “speak” to his client. From there, he could begin to develop ideas for various rooms.

Knowing that his client liked to wear animal prints, he used that as the inspiration for the master bedroom, adding a faux fur rug, zebra-print throw blanket on the bed, and a beautiful print on the wall of a pair of zebras. But, to add in a little bit of the bling, there are metal starbursts on the wall over the bed.

The lower level is also a great space for entertaining, with its bar and large seating area. Here, the theme was “go minimalist.” Built in shelves surround the flat screen television, but both designer and homeowner say that just because you have a lot of shelves doesn’t mean you need to fill them all.

Their advice is to find things that make a statement or have a special meaning and showcase those on your shelves. Accessories, such as candlesticks, vases and frames, are a

great way to change the look of your room without breaking your budget.

Pillows can do the same thing to liven up the furniture. For example, Paulson suggests, when you buy a chair or couch, take the pillows off that come with it and replace them with other throw pillows in a bright color, different pattern or with a texture like fur or fringe. That’s a tip this homeowner loves, because she admits that she has a “pillow thing.”

Paulson’s top recommendations for anyone looking to update a home are lighting - mixing and matching lamp styles is okay - and making things interchangeable. “You should be able to take any item out of one room and use it in another,” he says. “That’s another way to be able to change things up and keep it fresh.”

Although the homeowner was a little hesitant at first, this duo has formed a great partnership that started in design but resulted in her just-right home.

A few weeks ago, as I was optimistic about the end of a winter that seemed to go on forever, on one warm day I bought a

couple of really nice, big beef tenderloin steaks. More beef than either of us should eat at one sitting, but I wanted to make the transition into summer. I was ready to spend an evening grilling a really good steak. But Mother Nature is a fickle woman. When the time came to fire up the grill, the weather outside my backdoor had gone from mild to monsoon.

Suddenly the idea of standing next to the grill, savoring a glass of California Cabernet while the steaks cooked went from nirvana to feeling like a Weather Channel reporter in the middle of a hurricane.

So what’s a guy to do with these steaks? Well my mind wandered back to my old home town of Des Moines. There, way back in the 1940s or 1950s (depending on which story you believe) a Des Moines regional favorite came into fashion. It’s called Steak De Burgo. One family swears the recipe came from Vic Talerico. He opened his first restaurant in 1939. Steak De Burgo would become a staple at Vic’s Tally Ho, and his family claims the recipe as their own.

But another family of restaurateurs claims it was the brainchild of their grandfather Johnny Compiano. That family still runs a favorite restaurant of mine called Sam and Gabe’s which is conveniently located just blocks from my sister’s

house; so I get there often. They claim Johnny created the recipe when he was cooking in the Coast Guard down in New Orleans.

Now, just about every chef in central Iowa has their own recipe. Some cook it all in butter, others add olive oil, and a few insist on adding cream. It seems the only thing they can agree on is what to call it, Steak De Burgo. Where did the name come from? That mystery seems to be lost to history, just like the origin.

Steak De BurgoMakes 2 servings

Ingredients2 Tbsp chopped fresh basil1 Tbsp fresh thyme1 Tbsp chopped fresh oregano 2 cloves garlic, chopped fine2 Tbsp olive oil2 Tbsp butter, softened2 6-8-oz. beef tenderloin steaksSalt and freshly ground black pepper

InstructionsIn a small bowl combine basil, thyme and oregano; set aside. Sprinkle steaks with salt and pepper. In a large cast iron or stainless steel skillet cook and stir garlic in olive oil over medium-low heat about 4 minutes, do not let it brown. With a slotted spoon remove garlic from skillet and set aside. Increase heat to medium-high. Cook steaks in skillet, turning once. Allow 10 to 13 minutes for medium-rare (145º F) to medium (160º F) doneness. Transfer steaks to serving platter. Add butter to pan and cook until the butter just begins to brown. Add garlic and herbs to the pan, which creates the De Burgo sauce. Top each steak with sauce. Enjoy!

Here’s the thing about beef tenderloin; it is tender. Very tender. The most tender piece of the whole cow, but when it comes to flavor, it doesn’t have nearly as much beefy taste as a ribeye or New York strip, so you need to add a little something to turn the flavor up a few notches. You can do it with rubs or melt some blue cheese on top, but my favorite way is to add a really flavor-filled sauce. Steak De Burgo fits the bill.

My recipe is a combination of several I’ve read and others I’ve tasted and tried to mimic. It’s simple, it’s chock full of garlic, herbs, butter and olive oil. What could go wrong? So the next time Mother Nature unleashes her fury on your backyard, whip up some Steak De Burgo. You may start praying for rain.

629 Years and Still Producing Wines

Page 49: 2014 05 etcmagazine volume13 issue06

etc. for her | May 2014 49

Some days are better than others. Some days, I have a glass of wine. Other days, I have a glass of wine with distributors,

suppliers, estate managers, and winemakers. Recently I had the privilege of tasting eight award-winning wines from one of the oldest wineries in Italy, Antinori. Established in 1385 (you read that correctly,) Giovanni di Piero Antinori became part of the Winemakers Guild of Florence and started what would be become one of the longest-running family-owned businesses in the world. Now run by its 26th generation (yes, you read that correctly too,) Piero Antinori’s three daughters, Albieri, Allegra, and Alessia operate the winery. The wines they produce are high caliber and range from traditional to cutting edge, but like Piero Antinori likes to say, “Ancient roots play an important role in our work but have never been a limit to our innovative spirit.”

As I sat listening to Glen, one of Antinori’s estate managers, I had a hard time focusing on the details he was giving me on the first wine we were tasting; I was still trying to wrap my mind around the length of time this winery has been in existence. Glen mentioned historic icons like Galileo and Leonardo da Vinci walking the same streets as the early Antinoris and perhaps even enjoying some of Antinori’s first wines. To put it in perspective, Antinori was making wine 500 years before grapes were even planted in California.

We started the tasting with one of Antinori’s newest projects, Antica, based in the Napa Valley. Antica (a fusion of the words Antinori and California) is located in the Atlas Peak appellation of the Napa Valley, ranging from 1500 to 1800 feet in altitude. The valley floor is ideal for growing chardonnay grapes thanks to the combination of alluvial (fertile) soil and the cold air that settles in the area. Because of the altitude and cooler temperatures, the expression of the fruit in the Antica Chardonnay is fresh and pure, one of the cleanest chardonnays I’ve had in a long time.

Next up was one of Antinori’s Chianti Classico estates called Peppoli. This classic Chianti (made of primarily Sangiovese grapes blended with a touch of Merlot and Syrah) had soft tannins with quintessential cherry flavors and a juicy characteristic. This estate possesses ideal growing geography as the vines face southwest which allows the grapes to ripen fully.

We tasted through several other wines in Antinori’s portfolio, including other properties located in Tuscany and Puglia, but one of the show-stoppers for me was a property Antinori acquired in Piedmont called Prunotto. I have had many Barbaresco wines over the years, but the Prunotto Barbaresco is one that will make my wine list for sure. Barbaresco is usually referred to as “Italian Pinot Noir.” Made from Nebbiolo grapes indigenous

to Piedmont, Barbaresco is one of Italy’s best kept secrets. The Prunotto Barbaresco did not disappoint: delicate and light in color, yet powerful and austere with gripping tannins. This age-worthy wine will soften over the years and is a classic pairing to truffles, another Piedmont staple.

After tasting Antica Cabernet from Napa (which was quite delicious) and a Super Tuscan called Guado al Tasso, this wine tasting ended like a wine tasting should end: save the best for last. A wine that was first made in 1978, Solaia continues to be one of Antinori’s flagship wines, made of 75% Cabernet, 20% Sangiovese, and 5% Cabernet Franc. This cutting edge, and category-creating, wine has won numerous awards over the years and is only made during exceptional vintages. Recently, it was not made in 2002 due to a cold and rainy season which produced less-than-adequate Sangiovese grapes. The 2006 Solaia was everything I expected and more. Rich chocolate notes coupled with strong tannins, this Super Tuscan is super in every way, including its price tag. Depending on the vintage, Solaia retails for over $250 per bottle. Needless to say, I savored every drop.

When Piero Antinori is asked about the best wine Antinori has made, his answer is, “We haven’t made it yet.” This constant pursuit of creating the best wines for over 600 years is what sets Antinori apart from all the others. And now with its first generation of women running the company, Antinori continues to be in good hands.

Inspiring, exciting, and unique, Tucson, Arizona, is an oasis of fascinating natural landscape and plentiful activities to

experience and enjoy. There are many interesting attractions to see in Tucson. The Arizona-Sonora Desert Museum is one of the best zoos in the country, with exhibits that encompass the entire spectrum of Sonoran Desert life. Plants, insects, and animals are all displayed in very natural settings, and seem very much at home. Coyotes, mountain lions, black bears, tarantulas and scorpions make up just some of the wildlife you can witness here at this diverse attraction in Tucson. The walk-in hummingbird aviary is a sight to see, and there are so many wonderful exhibits it wouldn’t be far fetched to say you might spend several hours here; so wear good walking shoes.

Tohono Chul Park provides exceptional sights of plant and

animal life in the desert. You will find forests of cholla cacti, as well as a garden of small pincushion cacti. Gorgeous wildflower displays are worth seeing, as well as the ethnobotanical garden, which encourages children to touch, smell, and listen. Enjoy breakfast, lunch, or an afternoon tea at the tearoom, and browse the art in the exhibit house.

The Arizona History Museum is the state’s oldest historical museum. Explore a full-scale reproduction of an underground mine tunnel, an assayer’s office, a miner’s tent, a blacksmith’s shop, and a stamp mill in the mining exhibit. Stagecoaches and horseless carriages are on display in the transportation exhibit as well. Children will enjoy Trail Dust Town, a Wild West-themed shopping and dining center, with a full-size carousel, a miniature train ride, shootout shows, and the Museum of the Horse Soldier.

Right next door is Golf n’ Stuff, where the kids can have a blast with a game of miniature golf at one of the two courses, as well as enjoy bumper boats, go-karts, laser tag, a video-tame arcade, a climbing wall, and batting cages. Tucson is home to many professional hot air balloon ride businesses, allowing you to get a bird’s-eye-view of the serene Arizona mountains and the vibrant Sonoran Desert. Balloon America offers flights over the magnificent foothills of the Santa Catalina Mountains, and Fleur de Tucson Balloon Tours offers rides above the Tucson

Mountains and Saguaro National Park, including brunch and a champagne toast.

One of the best bicycling cities in the country, Tucson offers several trails and dirt roads that are perfect for mountain biking, surrounding national forest and desert. The west unit of Saguaro National Park provides the 6-mile Bajada Loop Drive, which is an easy and very scenic dirt road loop. For those that prefer a paved biking experience, there are some fantastic options for this adventure as well. The road up to Sabino

Canyon is a popular choice in town for experienced cyclists, and for a much easier ride, the Rillito River Park path is an excellent choice, providing 12 miles of paved bike trail that runs parallel to River Road and the Rillito River. Hiking is also a very popular activity in Tucson, which is surrounded by mountains that are protected as city and state parks, national forest, or national park. Within these public areas are hundreds of miles of superb hiking trails. Some of the best hiking is available within Saguaro National Park, which flanks Tucson on both the east and the

west sides. The west unit is the better choice for hiking among the huge saguaro cacti, for which the park is named. Enjoy a similar hiking adventure at Tucson Mountain Park, which is adjacent to Saguaro National Park. The parking area at Gates Pass is a favorite spot to enjoy the sunset. Sabino Canyon is a well-known hiking and recreation area, with waterfalls and swimming holes which are formed from a cold mountain stream. The most popular hike is the 5-mile round-trip Seven Falls Trail, which takes adventurists deep into the mountains via Bear

The dirt road led me out to my dreams...The dirt road will always lead me home.

OPENING MAY 1

You’ve been waiting for winter’s bitter cold to loosen its grip. You’ve got your gear ready: A t-shirt, pair of shorts and

tennis shoes is all you need. Sounds simple, right? Maybe not.

If you’ve decided to incorporate running into your lifestyle, it’s important to run the right way. With a little planning, these tips can help you get the most out of your run:

• Avoid cotton. When this fabric gets wet with sweat, it can cause chafing. Now you have access to a variety of synthetic fabrics such as spandex and polyester, which are better at wicking away sweat.

• The right shoes matter. Get fitted for the right shoe for your foot type and running style.

• Splurge on socks. Like your running attire, pick socks that include synthetics or lightweight wool, which limit friction-causing moisture. This can help keep your feet more comfortable mile after mile.

• Eat and drink right. Fuel your body with the proper nutrition and hydrate it with plenty of water.

• Find a buddy. In the beginning, it can be easier to get out the door when you know someone is waiting to join you for a run.

• It’s ok to walk. There’s no shame in taking a break to walk. It’s important to build your fitness and endurance in a safe way.

• Listen to your body. It’s not uncommon to experience some soreness as a new runner. But don’t overdo it to the point of causing permanent damage.

• All runners have been in your shoes. Don’t feel intimidated by more experienced runners. Everyone was a new runner at some point.

To help you get off on the right foot, a training plan for new runners is available at the Sanford Wellness Center. This 5K training program is designed to improve your running endurance

through a slow and steady progression. Your running volume will increase weekly between 1 and 5 percent, depending on your individual abilities, needs and goals.

The benefits of a detailed training program include a plan designed just for you and your capabilities. Our trainer uses interval repeats, tempo run and long run, which are designed to work together to improve your endurance. For each run, specific paces and distances are used based on your current level of fitness. This can help you reach your goals faster and maximize your run.

Call the Sanford Wellness Center at (605) 328-1600 to learn how our program can help you hit the road the safe, healthy and effective way.

Tips to help you run cool when it gets hot:

• Run early or late. Try to avoid running between 10 a.m. and 4 p.m., when the sun’s intensity is at its highest.

• Stick to shady roads if you must run during the middle of the day.

• Don’t try to beat the heat. Scale back workout intensity during brutal heat and humidity. Hot and humid conditions are not the time to push your pace.

• Use water to cool yourself during runs. Splash water on your head and your body to cool down quickly.

• Be familiar with signs of heat related problems. If you feel faint, dizzy or disoriented, if you have stopped sweating, or your skin is cool and clammy, slow down or stop running. If symptoms continue, sit or lie down in the shade and seek help.

• One or two hours prior to your run, drink 8-16 ounces of water or a sports drink. And drink another 4-8 ounces 15-30 minutes before you run.

• During longer workouts, your fluid intake should include sports drinks such as Gatorade to replace lost salt and other minerals (electrolytes).

A Fun Place for the Davis Kids

Page 71: 2014 05 etcmagazine volume13 issue06

Cassidy and Pierce Davis are just like any other kids. They like to hang out with friends, play video games and watch

TV, and they like to have their own space. And, in the home built by their parents Kory and Jocelyn, they

can do all of that and more. The siblings have their own bedrooms on the upper level of

the house, but they get to share the loft area just outside their bedroom doors.

While the Davis home has a neutral-yet-warm décor in greys and browns, the loft is accented with a bright orange couch (and

a colorful striped snake that lies across the top of it), aqua side chairs and a funky, retro-modern clock on the wall with colored balls of green, orange, black and aqua on the end of metal spindles marking the hours.

Jocelyn says the family likes the modern design of the house, along with the grey and brown color scheme, but they also wanted to add their own personality to the neutral backdrop.

“I am an ‘outside the box’ person and didn’t want to be limited to ‘inside the box’ design,” she says. “So, we looked for colors and accessories that were different.”

On the wall opposite the couch is a flat screen TV, perfect for watching TV or firing up the video games. A desk along another wall is the spot for working on the computer, doing homework or “creating” using the pens, markers and pencils that hang above the desktop in white, wall-mounted buckets.

Behind the couch, the loft has arch-shaped openings looking down over the great room below. Glass panels provide protection while still allowing the kids to feel part of whatever might be going on in the rest of the house (and gives Kory and Jocelyn the ability to keep an eye on the upstairs activities).

When Cassidy and Pierce want to get up and get moving, they can head downstairs to the Sport Court.

When it Comes to KIDS, We Know Our STUFF!

“ Like” us on Facebook

This kids’ zone was built just off of the lower level family room and includes real court flooring, a basketball hoop and a rock climbing wall. The school-gym-blue mats against the wall under the hoop are detachable, so the kids can pull them down and use them on the floor as well.

It’s certainly unique to be able to say you have a rock climbing wall in your basement, but what about a zip line? Hooks at three levels on one wall provide for a change in height for the yellow swing seat that zips over to the other side of the sport court.

Whether studying up in the loft or shooting hoops in the court, the Davis kids enjoy having space of their own.

If you think your rendition of “Itsy Bitsy Spider” or “Wheels on the Bus” leaves a little to be desired, nothing could be further

from the truth as far as your child is concerned.“Children don’t care, even if their parents are tone deaf – they

just love the sound of their parents’ voices. Music can be so beneficial to children in so many ways,” said Erin Cook, Music Therapist at Avera McKennan Hospital & University Health Center. She uses music to help patients of all ages, including children and teens at the Avera Behavioral Health Center and adults at the Avera Cancer Institute.

Music has a positive impact on children from the moment they are born – and even before. “My son was constantly hearing music before he ever entered the world,” says Cook, whose baby is now six months old. Just hours after he was born and became fussy, Cook sang to him, and he immediately calmed down and looked at her intently. “I knew he recognized my voice and my singing.”

NICU music therapy research shows that music helps babies’ capacity to feed, sleep and self-regulate. It improves their vital signs and creates opportunities for emotional bonding.

As children get older, music can be an effective tool to improve social skills, increase attention span, and promote relaxation. It can help children express themselves and learn to manage stressful situations. Dancing and movement can improve motor skills and coordination. Plus, it’s great exercise for everyone involved.

Music helps children learn. It sharpens their concentration and gives them an increased capacity for memorization. “Music uses both the left and right sides of the brain,” Cook says. A case in point: who didn’t memorize the alphabet using the ABC song? Songs also have been invented to help students memorize the U.S. presidents, the 50 states and even the Pythagorean theorem.

Beyond singing, learning to play an instrument in orchestra, band or private lessons fosters a sense of achievement, relieves stress and elevates self-esteem. Practice requirements teach kids responsibility and discipline, as well as time management. Playing in a band or singing in a choir promotes teamwork, hones listening skills and helps children overcome “stage fright.”

by donnA FArris for Avera McKennan Hospital & University Health Center

Page 76: 2014 05 etcmagazine volume13 issue06

At home, music is a way to get children to “unplug” from TV, computers, video games or wireless devices. “Get creative,” Cook advised. “Making music together promotes happiness in life and it can really bring a family together.”

Sing in the car to make the time go faster, and keep children occupied and less restless. Sing as you’re waiting or doing household chores.

Play musical games. Make up little songs, or put new lyrics to familiar tunes. “Waiting, waiting, waiting your turn” or “Clean up, clean up, everybody everywhere” are simple little songs that can pay big dividends.

Don’t limit yourself to “kids’ music.” Feel free to expose children to other genres of music, whether it’s rock, classical, religious, country or jazz. Introduce them to music of other cultures, Cook suggested. Whatever your selection, just make sure the lyrics are appropriate.

Music can help children calm down, but don’t expect a lullaby CD to take kids from bouncing off the wall to settling down for a nap. Rather, use music to help children transition. Start with more upbeat, energetic music and slowly adjust to more mellow songs.

Instruments in the home are also lots of fun, be it a piano, electric keyboard, guitar or drums. Home instruments don’t have to be expensive. Maracas, tambourines, rhythm sticks, a triangle or bells are great options. Ask your child to play a “feeling” such as “what does angry sound like,” or “what does happy sound like” to help him express himself.

Older children and teens also love music – music that parents may or may not approve of. Instead of being judgmental, engage youth in conversation about what they like about the music and why. Ask them if a particular lyric is really the message they want going around in their brain and influencing their life, Cook suggested.

May Flowers Beckon

Once upon a little girl’s dream, she wished for wings and magical things. So what is a mother to do, other than

make her sweet dream come true? Invitations were sent out to a special group of friends two weeks before the party. Each invitation read, the Flower fairies of our charming home request your attendance to conjure up some magic for a special day! Arrive at 9:30am and become transformed! Delight in whimsical crafts and become entranced by fantastical treats. Dance, play and maybe catch a glimpse of a real fairy! Twirl in our enchanted until 11:30 when all fairies must flutter home.

We made headdresses adorned with flowers, butterflies, and sparkling gems. We used a hefty amount of glue and an array of stretchy sequined headbands. Each was personally made for each admired guest. 18 different pair of wings were ordered online to match our handmade headdresses. This was a great start, but it was the easiest part.

We purchased glittery face paint and face sparkles to give everyone a enchanted makeover. We collected mini fairy houses and a plethora of paint to decorate them with. We searched high and low for tiny fairies to set atop cupcakes. Then came the plan

for the party foods. Fruits kabobs, tea cookies, cheeses and a variety of crackers. Flutter juice, cupcakes, and the coveted celebration cake. Magically matching plates, cups and napkins were an absolute must. Yet there was still so much to do.

Creating the right space is so important. That is why we transformed our outdoor space into a place of utter whimsy. A

few days before, I covered a normal swing with a rainbow of faux flowers and many textures of greenery. Creating simply the best flower fairy swing I have ever seen. We were almost ready. The morning before I obviously was up early to start the festivities. I took heavy rope and tied it between the trees to create a circular sanctuary. We draped pieces of shimmering tulle and colorful

Page 80: 2014 05 etcmagazine volume13 issue06

streamers over the rope to create fluid walls and to capture the wind.

Magical makeovers were under the big apple tree and that fairy swing eagerly tipped and turned, awaiting the start of the party. Glorious glimmered goodies stood on a table waiting proudly for ooohs and ahhhhhs.

Paint was poured by the fairy houses hoping for an enchanted design. Just minutes before the party, all was still as we anticipated the joy of a fantastical fairy affair.

A frenzy of wee squeals, flying glitter, cupcake smiles and multiple twirls saturated our celebration with glee. After the dance party, the wing toss and the unwrapping of gifts, each fairy was given a cookie wand before she fluttered home.

Crafts for Kidsby JessicA Weischedel

Mother’s Day

Spring Celery FlowerSMaterials needed:

Celery stalk, green marker or craft paint in green and paint in color

choice for flowers, paper plates, and white paper.

instructions:

Draw stems for flowers onto white paper with a green marker,

or paint with a skinny paint brush. You can make this a bouquet

of flowers or a few flowers on their own, however you’d like your

artwork to look for Mom. Put some craft paint in the color choice

for your flowers onto a paper plate. Taking a celery stalk, cut off

2-3 inches from the base, then dip the cut end into the paint.

Carefully place the painted celery end onto the white paper at

the top of the green stem. Continue this until your artwork is

complete, then let dry.

ButterFly Feet ArtMaterials needed:

Permanent marker, finger paint, a surface to work with, and a

white canvas board.

instructions:

Paint the bottoms of your child’s feet with your choice of paint

color, whether it be one, two, or three different shades. Carefully

press their right foot down on the left side of the canvas, leaving

enough room for antennas at the top and another footprint on

the right side. Press their left foot down on the right side of the

canvas, leaving a very small space in between each foot print. Let

the canvas dry completely before taking a permanent marker and

drawing the body of the body of a butterfly in between the two

foot prints, which are the butterfly’s wings. Draw two antenna

lines with the marker, then use your finger tip to dot two small

finger paint antenna circles at the tops of the marker lines. Make

a few different colored ones on smaller canvases to create a little

collage on the wall for Mom and everyone to enjoy.

CupCAke Flower VASeMaterials needed:

Green tissue paper, acrylic craft paint, small paint brush, crayons,

glue, big buttons in spring colors, empty soup can-washed and

dried, 1 inch wide ribbon, pipe cleaners, mini cupcake liners, and

construction paper.

instructions:

Paint the soup can all over, then let it dry completely. Decorate a

piece of construction paper, then cut a strip that is long enough

to wrap around your can, about 2 inches wide. Wrap the paper

around the can and glue it in place. Let glue dry. Taking the 1 inch

wide ribbon, wrap it around the can so it sits right on top of the

paper. Create a bow to make it a pretty decoration on the can.

Gently scrunch up some green tissue paper and place inside of the

can in order to hold the cupcake holder flowers in place. Take a

pipe cleaner and create a small loop in the middle, forming a leaf.

At the top of the pipe cleaner, create another small loop. This will

be where you glue the cupcake liner. With the bottom facing down,

glue the cupcake liner onto the loop at the top of the pipe cleaner,

then glue a large button into the center of the inside of the

cupcake liner. Repeat this step in order to create as many flowers

as you would like, then stick the flower pipe cleaner stems into the

tissue in the can, which is now a vase.

wow MoM CArdMaterials needed:

Colored paper or poster board, marker, scissors, and decorative

items such as glitter, stickers, crayons, and more.

instructions:

Fold the paper in half, then write “MOM” in big, upper-case block

letters, with the fold at the top. Carefully cut out the letters with

scissors, and be sure to leave the letters attached to each other.

Do not cut off the top near the fold! Unfold the card, and see that

the card says Wow, Mom! Decorate the card with anything your

heart desires, and write a message to mom inside.

key wind ChiMeMaterials Needed: Several old keys, a sturdy stick from outside,

various colors of craft paint, a small paint brush, scissors, and

twine.

Instructions: Locate a good stick for your wind chime, then gather

some keys you no longer use, or go to your local antique store and

find some unique old keys. Paint your stick with your desired paint

color, then let dry. As the stick is drying, paint each key a different

color of paint, or leave them unpainted if you like the rustic,

antique look. Cut pieces of twine to your desired length, then tie

one end of twine to the stick and the other end to a key. Repeat

this until you have every key tied to the stick. Find a place to hang

the wind chime, and listen to the beautiful sound.

Mothers Day at our house has been celebrated a variety of different ways. There have been many days where gifts

of flowers and special dinners occurred. But, there are other times when landscaping or hospital visits took center stage. It is mostly a happy time, but for some maybe not so much?

When I decided to be a Veterinarian, I thought that my daily routine would involve treating and caring for animals. It never occurred to me that for every dog, cat or bird that I encountered, there is a human involved with it. I needed to learn to communicate and deal with people to make their pet better.

So how does this relate to Mother’s Day? Well, pets have become very important parts of our families. In many cases, they have become like children. Pets provide companionship, emotional support and entertainment. The bond between pets and their people is very strong and I needed to understand it.

When I was single, Clancy the Scottish Terrier came into my life. He was happy to eat, sleep and go for rides with me. It was a lot of company. He did not allow me to be lonely or to sit on the couch very long. He demanded to be played with and to go on walks. I was needed and it felt good. He taught me about the

bond between people and their pets. He came to our wedding, but I am not sure he approved. I think

he liked the “bachelor life”. We didn’t have children for a few years and he was like our child. He had clothes, hats and went on our vacations. He tolerated the indignity, in exchange for treats and walks. He made us smile, laugh and love.

Pets are so important to us. They demand that we wake up, play and pet them. In return, they promise to accept us even when we forget to comb our hair or brush our teeth. They also do not care if our clothes match.

It is important to recognize that when pets become ill or pass away, it can be a big emotional loss. It creates stress. Grief can be overwhelming for some when these treasured creatures are gone. It is real for them.

If your pet is family, you understand. Clothes, car seats and strollers are part of the experience. They require great care, meticulous grooming and spoiling on a daily basis.

It makes us happy and that is what is the most important. For you “Pet Parents” out there, Happy Mothers Day. I hope you

all get a big wet kiss or long loud purr!

Human Timeline

94 friends & family | Historical marker

About twelve thousand years ago, as the Wisconsin glacier retreated at the end of the last Ice Age, the first humans came into this region. These

nomadic hunters pursued mammoths and other large mammals. Now know as PaleoIndians, their spears were tipped with fluted stone points.

They were replaced about 5500 B.C. by Archaic hunter-gathers whose way of life focused on hunting smaller game and harvesting wild plants. About 2000 years ago, Woodland peoples moved here, introducing pottery, earth lodge villages, burial mounds, and the bow and arrow.

Plains Village groups were the next to arrive. They cultivated large gardens and built sizable permanent communities. About 750 years ago ancestors of the Missouri River Mandan lived in a fortified village near Brandon, and in the 1500s, a large Oneota settlement spanned the Big Sioux River at Blood Run.

By the mid-1700s, the Sioux, a nomadic Plains group, displaced the less militant permanent villagers. Lastly, Sioux Falls city was founded by Euroamerican settlers who arrived in 1856.

Beringia and the ice Free Corridor.During the last period of the Ice Age, the land that now forms Siberia and Alaska was joined by a sizable land bridge called “Beringia.” From 75,000 to 100,000 years ago, there were at least four periods when early man, and the animals that he hunted, crossed this land bridge from Asia to North America.

Mammoth SkeletonThis skeleton of a Columbian mammoth is 12-feet high at the shoulders. All mammoths were completely vegetarian and continually foraged up to 20 hours; by using their trunks to feed themselves, they consumed as much as 300 lb. of fresh food each day.
