If there is one thing I am really good at in the kitchen, it’s burning cookies. What’s

But if you haven’theard the buzz about this livecooking demonstration being heldat Charleston SouthernUniversity’s Lightsey Chapel yet,here’s a brief run down.

At the Taste of Home CookingSchool, you'll experience a 2-hourdemonstration of exciting springrecipes. Culinary SpecialistMichelle Roberts will show step-by-step instructions on how to cre-ate satisfying and flavorful dishes.

“What I like about Michelle isthat she really explains cooking ina fun and simple way. Whetheryou’re someone experienced in thekitchen or you are just starting out,she really breaks it down and

makes cooking something every-one can do,” said Chris Zoeller,Regional Advertising Director.

WHAT YOU NEED!• 3 cups penne pasta, uncooked• 1/4 cup KRAFT Sun-Dried Tomato Dressing, divided• 4 small boneless skinless chicken breasts (1 lb.)• 1 cup fat-free reduced-sodium chicken broth• 1/2 teaspoon each garlic powder and black pepper• 4 ounces (1/2 of 8-oz. pkg.) PHILADELPHIANeufchatel Cheese, cubed• 2 cups grape tomatoes• 1/2 cup KRAFT Shredded Parmesan Cheese• 8 fresh basil leaves, cut into strips

Creamy Tomato-Basil Pasta with Chicken

MAKE IT!COOK pasta as directed on package. Meanwhile, heat 2 tablespoons dressing in

large skillet on medium heat. Add chicken; cover. Cook 5-6 minutes on each side oruntil done (165ºF). Remove chicken from skillet; cover to keep warm. Carefullywipe out skillet with paper towel.

ADD remaining dressing, broth and seasonings to skillet; cook 3-4 minutes oruntil heated through. Add Neufchatel; cook and stir 2-3 minutes or until Neufchatelis melted. Stir in tomatoes; cook 3 minutes.

DRAIN pasta. Add to ingredients in skillet with Parmesan and basil; mix well.Serve topped with chicken.

• 8 eggs, lightly beaten • 1/4 cup milk or water • 1/2-1 cup shredded cheddar, mozzarella or provolone cheese • 1 teaspoon salt • 1/4 teaspoon black pepper

Spring Risotto with Asparagus, Lemon & GarlicPairs with Gallo Family Vineyards Sauvignon Blanc

DirectionsHeat the chicken stock and hold warm over medium heat.

Heat a pot large enough to accommodate all of the ingredi-ents on medium high and add the olive oil and onions, sautéuntil translucent and add garlic. Add the rice and stir witha wooden spoon to toast the rice for 2-3 minutes, add thewine and continue to stir. When all of the wine is absorbedby the rice, add the hot chicken stock in 1/3rd incrementsand stir. Only add the next 1/3rd of stock when the previ-ous 1/3rd is absorbed by the rice and keep giving the rice a light stir. When the last 1/3rd ofstock is almost absorbed add the asparagus, parsley, and lemon zest, keep stirring. Mushrooms are among the richestsources of selenium in the produce aisle, an importantnote for vegetarians, whose sources of selenium arelimited. Recently, researchers from Arizona StateUniversity (ASU) found that mice that eat white but-ton mushrooms may record an added benefit due topotentially enhancing or boosting immune functionand preventing weight loss when exposed to disease-

Mushrooms are the only fruit or vegetable with nat-ural vitamin D. Similar to the way that humansabsorb sunlight and convert it to vitamin D, mush-rooms contain a plant sterol—ergosterol—that con-verts to vitamin D when exposed to sunlight. The topthree selling mushroom varieties (button, crimini andportabella) have vitamin D ranging from 1 to 97 per-cent of the Daily Value (400 IU) per raw 84 gramserving.

Interest in vitamin D, also called the “sunshine vita-min” has exploded in the past year, making D thenew hot nutrient among consumers and health pro-fessionals alike.

• This year, the Institute of Medicine (IOM) con-vened a committee on calcium and vitamin D todetermine if the current intake recommendationsshould be increased for all Americans. The report isexpected in 2010.

• The American Academy of Pediatrics doubled theamount of vitamin D it recommends for children andinfants.

• An emerging body of science, including laborato-ry, animal and epidemiological studies, suggests thathigher intakes of vitamin D may be protective againstsome cancers, including pancreatic, breast, colon andcolorectal cancers.

Cancer and NutritionCity of Hope, a leading research institution for can-

cer, diabetes and other life-threatening illnesses, hasthree research teams dedicated to investigating theeffects that mushrooms have on health and, specifi-cally, on breast and prostate cancers. Scientists at Cityof Hope were some of the first to find a potential linkbetween mushrooms and a decreased likelihood oftumor growth and development in cells and animals.

These scientists now plan to apply this research tohuman clinical trials to establish whether mushroomsact as aromatase inhibitors in women. It is far tooearly to conclusively say whether or not humans willexperience decreased tumor growth as a result of eat-ing mushrooms.
