The classic Dad test - take a bit of water and drop it on the griddle. If the water "dances" excitedly or bounces, it is hot enough. Play your favorite dance music loudly for the best dancing water. I think disco works well. When do I turn them over? This is critical. After the bubbles on top of the pancake pop. Be patient. Watch the magic when you flip it. What size should they be? This is NOT debatable. The true Saturday tradition is what is classically called "silver dollar." Why?
