No BakeChocolate Chip Peanut Butter Balls

DirectionsCombine all ingredients in a bowl, and mix until everything is thor-

oughly mixed together. Roll into small balls, about one heaping table-spoon of “dough.” Makes about 12 balls (can double or triple recipe,as you’ll want more than one!). Store in refrigerator if not eating rightaway.

1/2 cup Rolled Oats1/4 cup Natural Peanut Butter (can sub in any other butter)1/4 cup Peanut Flour (or any other flour would work)1/4 cup Honey or Agave2-3 tablespoons Mini Chocolate Chips or Cacao Nibs1 teaspoon Vanilla ExtractDash of Sea Salt

DirectionsDice potatoes, carrots and onion. Spray heavy duty foil with cooking

spray. On foil put two small balls of hamburger. Add potatoes, carrotsand onion and two pats butter/margarine. Seal very tightly. Cookdirectly on coals, 10 minutes on each side.

DirectionsRub pork with 1 teaspoon chili powder and garlic powder; place in

baking pan. Bake in preheated 425oF oven 30-40 minutes or until porkis well browned and juices run clear. Let stand 10-15 minutes. Cut into2- to 3-inch slices; shred slices into bite-size pieces with fork. Spraymedium saucepan with nonstick vegetable spray; heat over mediumheat until hot. Saute onion and garlic about 5 minutes or until tender.Add tomatoes, vinegar, mustard, chili powder, maple extract and liquidsmoke to saucepan; heat to boiling. Reduce heat and simmer, uncov-ered, 10-15 minutes or until medium sauce consistency. Stir in sugarsubstitute. Season to taste with salt and pepper. Stir pork into sauce;cook 2-3 minutes or until hot. Spoon mixture into buns.

DirectionsLine a baking sheet with waxed paper; set aside.In a medium bowl, combine first four ingredients (using your hands)

to form a smooth stiff dough. Shape into balls (about 2 teaspoons ofdough per ball). Place balls on prepared pan, and refrigerate.

Place shortening and chocolate in a metal bowl. Place metal bowlover a pan of lightly simmering water, and allow chocolate and short-ening to melt together. Stir occasionally until smooth and remove fromheat.

Remove balls from refrigerator. Using a toothpick to hold the ball,dip each one into melted chocolate to cover about 3/4 of ball. Returnto wax paper, chocolate side down, and remove toothpick.

Refrigerate for 30 minutes to set.

While Smith said he’s “had a few tail-gates in my time” as a Georgia Bulldogsfan, he pointed to Denton on the grill andadded, “Tom’s definitely got the tailgatething down.”

The annual tailgate “is a good way tocelebrate the first home game,” saidCrateau, whose wife, Meshon Crateau, isan English teacher in the ScienceTechnology Engineering andMathematics Academy at HVA. “We decid-ed to kind of take advantage of the crowd

and we’re right across the street [fromHVA].”

Joining Food City as HVA Tailgate pri-mary sponsors were Access Solutions,Inc., Subway, Embroidery Boutique, TacoBoy, Studio C, Marco’s Pizza, Sam’s Cluband Moonwalks and Such.

Grilling scores of hamburgers and hotdogs was Pam Keathley, human resourcecoordinator for the Food City locationjust a few hundred yards west of HVAalong Hardin Valley Road.

“We have enough food for 300 … 150hamburgers and hot dogs and webrought, like, 600 bags of chips,” saidMike Iden, head cashier/front enddepartment head at the neighborhoodFood City. “A pretty big crowd.”

“We’ve been the primary [tailgate]donator for the past three years. But thisis the first year we’ve been here cookingourselves,” Iden added.
