In 3000 B.C. Egyptians believed mushrooms were a sacred food that pro-longed life. The pharaohs were so taken by its flavor that mushrooms were de-creed food befit only for royalty and commoners were not allowed to touch them. Little did they know the pharaohs were on to something because studies have now shown that mushrooms not only strengthen immunity but help fight infections and play an important role in preventing breast cancer.

First cultivated in France around 1650 A.D., the “agaricus bisporus” - white button mushroom – was the only species available grown in caves outside of Paris. Eventu-ally the practice spread to England then on to the Americas thanks to 19th century Minneso-tan Louis F. Lambert, the first American to suc-cessfully grow the mush-room spawn in this coun-try. Today most states produce mushrooms but Pennsylvania maintains a large lead in mushroom production.

Today there are nine varieties of edible mush-rooms- the white but-ton, crimini, portabella, maitake, shiitake, enoki, oyster, beech, and wild. Numerous studies in the past decade have found that mushrooms may help prevent breast cancer, particularly in postmenopausal women. Mushrooms contain the compound, conjugated li-noleic acid, which inhib-its aromatase, the protein in the body that makes estrogen. When the body is able to control its estro-gen levels, it is less likely to develop breast cancer than when estrogen lev-els are high.

To celebrate National Mushroom Month this September, try some new varieties in your weekly menus. After all, these little fungi have made it all the way from French caves to being an 827 mil-lion pound commodity. Later this fall you’ll see many brands of mush-rooms packaged in pink to honor breast cancer research with a portion of proceeds directed for the cause.

Baked MushrooM Mac ‘n’ cheese

Prep Time: 25 minutes Cook Time: 30 minutes

4 ounces (about 2 cups) elbow macaroni,

uncooked1 Tablespoon olive oil1 pound white button

mushrooms, sliced4 Tablespoons butter4 Tablespoons all-pur-

pose flour1 teaspoon salt2 cups milk1 cup shredded mild

cheddar cheese1 cup shredded moz-

zarella cheese1/4 cup fresh bread-

crumbs

Preheat oven to 350°F. Cook pasta according to package directions.

While pasta cooks, heat olive oil in large non-stick skillet over medium-high heat. Add a single layer of mushrooms and cook, without stirring, for about 5 minutes or until mushrooms become red-brown on one side. Flip mushrooms and cook about 5 minutes more, until other side is same color.

Melt butter in a large saucepan and stir in flour. Cook for a minute or two to slightly toast flour. Stir in salt and whisk in milk. Bring to a low boil over medium-high heat, stirring occasionally to slightly thicken sauce, for about five minutes. Remove from heat, whisk in cheeses and stir to melt. Stir in mushrooms and pasta and transfer to three-quart baking dish. Sprinkle with bread-crumbs.

Place dish on bak-ing sheet and bake until cheese bubbles around the edges, about 30 min-utes. Remove from oven and let rest for about five minutes. Serve warm.

1. Remove stems from caps of white or crimini mushrooms; fine-ly chop stems.

2. In melted but-ter or olive oil, sauté chopped onion for about 5 minutes. Add chopped mushrooms and continue sautéing until all liquid is absorbed, about 3 min-utes.

3. Add goat cheese or cream cheese to skil-let; stir until melted.

4. Season to taste with thyme, salt and pep-per.

5. Brush mush-room caps with oil; stuff with cheese mixture and place on baking sheet.

6. Bake at 425°F for about 10 minutes or until mushrooms are lightly browned.

chIcken WITh MushrooM MarsaLa sauce

Preparation time: 15 minutes

Cook time: 20 minutesYield: 4 portions

4 boneless, skinless chicken breast halves (about 6 ounces each)

1/2 teaspoon salt1/2 teaspoon ground

black pepper1/4 cup flour4 Tablespoons olive oil,

divided1 pound small fresh

white and/or crimini mushrooms, sliced (about 6 cups)

1/2 cup chopped onion1 cup Marsala or other

red wine1 cup chicken broth

Season chicken breasts with salt and pepper. Lightly coat both sides of chicken with flour.

In a large skillet, heat 2 tablespoons of the ol-ive oil over medium-high heat. Add chicken; cook until golden, about 2 min-utes each side. Transfer to a plate.

Reduce heat to me-dium. Add remaining 2 tablespoons oil to the skillet; add mushrooms and onion; cook and stir until tender; about 7 min-utes. Stir in Marsala and Chicken broth. Return chicken breasts to the pan; simmer, covered, un-til no pink remains in the center, 10 to12 minutes.

Makes 4 servings

8 ounces fine or medi-um egg noodles

8 ounces fresh aspara-gus*, sliced diagonally

1 Tablespoon vegetable oil

8 ounces fresh mush-rooms, sliced

3 Tablespoons green onions, thinly sliced

Cold and Spicy Sauce (recipe follows)

Cold and Spicy Sauce: 3 Tablespoons vegeta-

ble oil2 Tablespoons peanut

butter2 Tablespoons soy

sauce2 Tablespoons water1 teaspoon sugar1/4 to 1/2 teaspoon

dried chili flakes

In 2- to 3- quart sauce-pan cook noodles in boil-ing water until done, 6 to 8 minutes. Drain; cover with cold water until ready to use. Sauté as-paragus in oil until just tender. Add mushrooms; toss. Chill. In large bowl combine noodles, vegeta-bles and sauce; arrange on platter. Garnish with

green onions.Cold and Spicy Sauce: In container of electric

blender combine vegeta-ble oil, peanut butter, soy sauce, water, sugar, and chili flakes. Blend for one minute.

*Other seasonal vege-tables may be substituted such as snow peas, green beans or broccoli.

2 tbs. butter1 cup sliced carrots1 cup chopped onion1 pound (about 5 cups)

fresh white mushrooms, sliced

8 ounces (about 1½ cups) smoked ham, diced

4 tsp. curry powder2 cans (13 3/4 ounces)

ready-to-serve chicken broth

1 can (14-1/2 ounces) stewed tomatoes

1/2 cup quick cooking barley

In a large saucepan,

melt butter. Add carrots and onion; cook, stir-ring occasionally until carrots are nearly crisp-tender, about 5 minutes. Add mushrooms; cook, stirring frequently until mushrooms are tender, about 5 minutes. Add ham and curry powder; cook, stirring constantly, until curry is fragrant, 30 to 60 seconds. Stir in chicken broth, tomatoes and barley. Bring to a boil; reduce heat and sim-mer covered, until barley is tender, about 10 min-utes.

halved grape tomatoes or ½ cup sun dried to-

matoes (re-hydrated)2 cups (packed) spin-

ach leaves, torn into 1-inch pieces Salt and freshly ground

black pepper9 large egg whites

(about 9 ounces)2 ounces creamy goat

cheese1 Tablespoon chopped

fresh basil directions

Heat the oil in a 10-inch nonstick skillet over me-dium-high heat. Add the onion and mushrooms; sauté until golden. Add the tomatoes; sauté until tender. Add the spinach; stir just until wilted. Sea-son with salt and pepper.

Whisk the egg whites, and salt and pepper to taste until frothy. Pour the egg mixture over the hot vegetables in the skil-let; stir gently to combine. Reduce the heat to me-dium-low. Cook without stirring until the eggs are set on the bottom, about 5 minutes.

Sprinkle the cheese over the frittata. Broil until the cheese melts and the top is set, 2 to 3 minutes. Garnish with chopped basil.
