Watermelon and Lemon Granita, with Rosewater Meringues

LEMON & WATERMELON GRANITA

• Lemon granita, or all granitas are a great dessert to eat on hot days when you need refreshing.

STEP 1

• To make the lemon granita the first thing you have to do is juice the lemons. You’ll need enough lemons to make 500mls of juice.

STEP 2

• Make a syrup with 500grams of sugar and 1 Litre of water by bringing them to the boil and boiling for 5 minutes.

STEP 3• When the syrup is cold mix it with the lemon

juice and place in freezer for 4 hours.

• When making watermelon granita it is the same process except you puree the watermelon, strain and add juice to cooled syrup.

STEP 4

• After four hours take out the ice mix and blend in a food processor till smooth.. Return to freezer. Repeat again after 4 hours.

STEP 5

Serve a scoop of each with your Rosewater Meringues and ENJOY!
