W ith summer coming to a close, having brunch on an open deck accompanied by a breathtaking view
was naturally one of our main priorities. And although Santa Barbara weather is always perfect for a
Sunday afternoon brunch al fresco, we really just needed an excuse
to try Executive Chef Leo Andres Ayala’s delicious
Bellini Brunch at the newly remodeled
Belmond El Encanto.

bottomless
Bellinis at one of the
most beautiful hotels
atop the famous
“American Riviera”
is no easy feat—after
all, how can one
possibly save room
for dessert when
they are devouring an
array of appetizers
(six to be exact)!
Loaded with ahi
tuna salad, chilled
prawns, marinated
berries, and smoked
salmon, the appetizer
tray will leave you
beyond satisfied.
But don’t get too
comfortable, there’s
more! To continue
the feast, diners will
choose from several
exquisite options
including eggs
benedict, roasted
salmon, brioche
French toast, steak
and eggs, buttermilk
pancakes, roasted
chicken breast, ahi
tuna sandwich or a
classic cobb. Let’s
just say it was an
ambitious task, but
we managed to
fill our plates with
delectable sweets
from the dessert
buffet, including
the New York
cheesecake (a classic
and my all time
favorite!) and the
floating island, while
loving every minute
of it!
While relishing
Chef Ayala’s
mouthwatering
creations, we couldn’t
help but wonder
how this amazing
menu came to be or
who this elusive man
was. Luckily for us,
we were fortunate
enough to sit down
with the culinary
genius himself and
talk inspirations, his
love for seafood, and
what it’s like working
at the first Five-
Star hotel in Santa
Barbara!
I read that you are from
Guerrero, Mexico—
being Hispanic, there is
this inherent love for food
imbedded within your
culture; would you say
that this is what inspired
you to be a chef ?
“Yes, because when I
was little, my parents
owned a restaurant
by the ocean (in
Acapulco, Mexico),
so I was always
involved — helping
them craft dishes for
the menu, helping
them cook, and
doing fun things with
it.”
You became a certified
oyster and lobster
fisherman at the age of
fifteen, and even went on
to own your own shop at
one point. Your resume
is rather impressive; you
have worked for the Four
Seasons Newport Beach,
the Five Diamond
Belvedere restaurant at
the Forbes Five-Star
Peninsula Beverly Hills,
Montage Beverly Hills
and the list goes on. Did
you have schooling or are
you just some kind of
culinary genius?
“I am just a genius,
basically (laughs). It
just comes natural
to me because my
parents owned a
restaurant with
beautiful flavors that
people really enjoyed.
I think it was just
natural for me to
come in the kitchen
and start cooking.”

What would you say your specialty is?
“My specialty is most likely seafood.”
We could probably talk about your culinary achievements all day long, but I want to talk about the one I am currently obsessed with: your Bellini Brunch menu! Please tell me a little about the inspiration behind how it came to be. “The inspiration came from the Belmond Hotel Cipriani property in Italy where the Bellini was first created, which we thought would be a sophisticated take on your traditional mimosa with brunch. The Bottomless Bellini Brunch uses the freshest ingredients in season from the local Farmer’s Markets, and offers a variety of brunch favorites
as well as our own original dishes, striking a balance between savory and sweet – what brunch is all about!”
What factors, in terms of balance and palate, would you say influenced this menu?
“The brunch menu was designed around the freshest, seasonal local ingredients from Oxnard, Ventura, and our on-property chef ’s garden and seafood that I buy from local companies. I wanted to make it fresh.”
I can honestly say that I didn’t have a favorite dish because everything is absolutely delicious, but what is your personal favorite on the menu?
“I believe the black cod on our dinner menu is really unique because it’s a local black cod that we get fresh everyday, and
the artichokes we get from the different farms around here and the heirloom tomatoes. It’s all fresh.” What is your favorite meal to make, in general? “I love seafood, so I like siete mares (seven seas), this is typically found in Mexican cuisine, but it is really flavorful—so good and delicious! It’s a mix of different seafood, like octopus, shrimp, clams, fish, mussels, and crab that you can use to make soup.” If we were to take a look into your fridge, what would find? “You’d find a little bit of everything.
I love cooking for my kids—I always love to cook healthy—vegetables, pastas, and some good Mexican dishes I come up with.”
Last but not least, tell us one thing you love about being Executive Chef at Belmond El Encanto.
“I enjoy the view from the property, and working at the first Forbes Five-Star property in Santa Barbara. I really enjoy the environment and the city; I just love everything about working here.”

Behind the coral walls of
Lotusland lies one of the
most magnificent and eccentric
collections of plants known to
this region. The property, once
belonging to Madame Ganna
Walska—Polish opera singer,
socialite and self-proclaimed
“enemy of the ordinary,”—
spans over 37 acres and boasts
a wild, yet cohesive landscape
one would only hope to find in
their wildest dreams. Lotusland
is over 3000 species of plants
and flowers from all over the
world, giant abalone shells
situated on their own replica
beach complete with sand and
peculiar garden gnomes strewn
throughout. Walksa’s presence
is felt no matter how far off
the beaten path you end up
wandering.
In 1941 Walska purchased the
estate under the guidance of
her sixth and final husband,
Theos Bernard. With the hopes
of creating a retreat for Tibetan
Monks, Walska named the
property “Tibetland,” but
after WWII foiled the monks’
arrival, she would ultimately
rename it “Lotusland.” Soon
after divorcing Bernard, Walska
discovered her true love and
began transforming the grounds
of Lotusland into a spellbinding
world of cycads, cacti, palms,
and euphorbias.

luxury, we needed to chat more
about her inspiration for these
breathtaking collections!
Where in Santa Barbara do you
go to be inspired?
I love Hollister Ranch and
Jalama Beach. My husband [Rob
Lowe] and I enjoy long beach
walks and stand up paddling.
Jalama Beach campground is
one of our favorite getaways.
How are you inspired by your
travels?
I’ve always been drawn to
new and unusual locations.
Wherever I go I enjoy treasure
hunting for unique strands of
beads. I have been traveling for
work for over two decades and
recently I traveled to Morocco
and found beautiful antique
coral that I just incorporated
into my line.
What pieces of jewelry can we
always find you wearing?
I am a creature of habit so my
favorite go-to pieces are Yemen
coral and bone bracelets in
stacks of threes and fives. I love
layering my long rolo chain
necklaces. They can be worn to
the beach or a date night.
What pieces are you excited
about?
I am so excited for our fall
collection, it is truly one of
our best with charms, chains,
and arms draped in greens and

For the cover look I used Phyto Strong Sculpting Gel on damp hair to create texture, then smoothed the hair with José Eber Infared Hair Dryer, which also reduces drying time! I sprayed the look
with José Eber Instant Radiance Hairspray (I
personally made this my secret weapon, and call it the The Black Can). It’s my favorite product hands down! The Radiance Spray gives the BEST shine and is an amazing workable spray with a gentle hold
for curling hair. I used my José Eber Clipless
Iron to curl the hair! Once the hair was set, I put Phyto Fiber Paste on my hands and into the curls to break them up and give a more tousled, sexy beach look. I continued to use The Black Can to add shine and rework the look throughout the Santa Barbara Life &
Style shoot! My areas of expertise include precision
custom cuts, hand painted highlights, touchable
sexy blowouts, beach waves, and sleek eye
catching updos. Notable celebrities Tifany has worked with include: Candace Bushnell, John Quiñones, Maria Shriver, Nia Long, Chee-Yun Kim, Rose Rollins, Emily Giffin, Mia Kirshner... and other names that can’t be mentioned! You can see more of her work in Allure Magazine, W Magazine, Self Magazine, D Magazine, D Weddings, Fox, NBC, ABC, and Univision.
I achieved this look by using all José Eber Exclusive Cosmetics! I knew the shoot was going to be at the beach, so I wanted her to have a bronzed beach goddess look. Tifany did an amazing job giving our model the perfect set of “beachy waves” so I wanted to compliment
that with golden glowy makeup. I started by
prepping her skin with a daily moisturizer-SPF, as well as a satin foundation
primer. Letting that set, I primed her eyes with José
Eber Indelible Eye Primer. To achieve that
bronzy, smoky, sultry eye, I started with a matte eyeshadow all over the lid, then highlighted her brow bone and inner tear duct area with a pearly shimmer eyeshadow, and layered metallic shadows in bronze, brown, and copper from her lash line to the crease. I finished off her eyes with José’s Black Out Indelible Gel Eyeliner. To make her eyes pop for the camera,
I gave her a little extra “oomph” with a set of false lashes!
To get that beautiful beachy
glow I started with all over coverage using
our Perfect Finish Liquid Foundation. I
accentuated her features using our creamy stick foundation as a highlight, and emphasized the contour of her face even further with our Sunkissed Tanning Powder in Golden and Highlighting Powder in
Soft Glow. Her lips were lined using the José
Eber Indelible Lipliner in Love Story, set with our perfect creamy Ultimate Lipstick in Doll, and topped off with Diamond Shine Liquid Lips in Brilliant Sand lipgloss. Spritzed with our Perfect Finish Setting Spray, her bronzed beach goddess look outlasted the ocean air, sand, and multiple wardrobe changes!
