MAY CONTINUE TO USE YOUR CURRENT PATTERN FOR 2012-13

No separate meat/meat alternatecomponent requirement

May substitute 1 oz. equivalent m/ma for1 oz. equivalent of grains after minimum

daily grain requirement is met

MUST MEET THE REQUIREMENTS

To receive the additional 6 cents reimbursement, servings must be the planned portion sizes to:Assure meeting the minimum/maximum

requirementsAssure students receive the appropriate

nutrientsAssure food lasts until the end of the serving

lineAssure finances stay under control

A variety of leanMeats/Meat Alternatesis encouraged

BEEF, PORK, FISH, POULTRY

One ounce natural, cooked, skinless,

un-breaded portionEquals one ounce of Meat/Meat Alternate

DAIRY OR SOY YOGURT

Four ounces (weight)or ½ cup (volume)

Equals one ounce of Meat/Meat Alternate

NUT BUTTER

Two tablespoons Nut Butter:almond, cashew, peanut,

reduced fat peanut,sesame, soy, sunflower

Equals one ounce of Meat/Meat Alternate

NUTS OR SEEDS

Such as sunflower seeds, almonds, hazelnuts, etc.

May be used to meet no more than 1/2 of the Meat/Meat Alternate component

with another M/MA to fulfill the requirement

One ounce (weight) nutsEquals one ounce ofMeat/Meat Alternate

TOFU2.2 ounces (weight) or 1/4 cup (volume)

with 5 or more grams of protein

commercially prepared TofuEquals one ounce ofMeat/Meat Alternate

CHEESE AND EGGS

1 ounce Cheese (weight) or 1/2 large Egg

Equals one ounce ofMeat/Meat Alternate

BEANS/PEAS (LEGUMES)

¼ cup of drained beans/peas

BEANS/PEAS (LEGUMES)Examples creditable as M/MA :

Maximums: M-2, T-2.5, W-2, Th-2, F-1.5 = 10

K-5: Range 8-10, OK on both min and max

6-8: Range 9-10, min too low, and max OK

9-12: Range10-12, min too low, and max OK

REMEMBER

Regardless of the proteins offered,

dietary specifications for calories, saturated and trans fats, and sodium must still be

met
