WE HAVE NOT FORGOTTEN!
We The People..are the backbone, skeleton, flesh and blood of this
great country. Our government is simply a tool that allows us to achieve
our goals in a civilized and organized manner.
September 11, 2001 proved to us and the world that when the chips are
down it is individuals who make a difference. To us, herois a term
more appropriately attributed to the actions of Todd Beamer, Thomas E
Burnett, Jr, Jeremy Glick and Mark Bingham, the people who took it
upon themselves to take down United Flight #93, fully aware of the con-
sequences. But, they did it, and in so doing, saved countless lives. Indi-
viduals like these men are the ones who have built this country and made
it great. They didnt wait for any directive from a government agency.
They didnt beg for help or anguish over what they knew they had to do.
They simply did it, and in doing so the terrorists were denied.
So, never forget!
It is during times like these that many of us feel that our contributions are inadequate or not important. But, every effort we make on our own behalf or on behalf
of others solidifies the foundation upon which our system of government sits. It is not the politicians, nor the media pundits, nor the bureaucracies that make this
country great. No.. its we, the people. Celebrate our freedoms, and be vigilant so that we dont lose them.
CELEBRATE FREEDOM!

From Susans Corner
by Susan J. Coons
back to school
Ill never forget the first day of school for my first-born. I thought
about every frightening scenario that could possibly happen. There
could be an earthquake. A stranger might kidnap her. Just who is this
teacher/person and what kind of ideas will she be filling up my little
girls head? What if there is a fire at school?
I arrived early to pick her up. I was eager to hear all about her very
first day of school. She came running to the car and excitedly told me about the kids,
her teacher and what a wonderful time she had. She absolutely loved it! All of it!
By Wednesday morning I was much more confident in the school, myself and my
daughter. I knew we could handle it. That afternoon, when the classes had been dismissed
and Catherine was not among the large wave of students leaving their classes, I didntimmediately worry. She was probably looking for her sweater or something. After a
couple of minutes I began to PANIC! Where is she? I waited for about five minutes
which seemed like 30 minutes to me. I got out of the car when I saw her teacher and
asked her where Catherine was. She told me Catherine was with the daycare kids whose
parents came later to pick them up. What?
Seems that my daughter had so much fun the first day of school she decided to extend
her school days. Just didnt tell anyone.
Im still sending her off to school. Shes a teacher now. When she stays overnight
(once a week because she lives in Albany and this gives her a break on the long commute)
I pack her lunch, kiss her good-bye and tell her to have a nice day.
P.S.: I worry about her in the classroom more today than I did when she was a little kid.
Our society today is riddled with a gun-toting mentality and violence which is
romanticized and validated on television and through video games.
Reflections: Adventures in Potty-trainingWritten by Rachel Essaff Maher
My life revolves around the toilet. Not just any toilet, mind you. Ared and blue Thomas & Friends potty chair that is seated strategi-cally across from the regular porcelain throne. Because my three-year old is currently trying to kick his diaper habit, I spend a gooddeal of my day being either his coach or his cheerleader. You have
to go? Lets go! Move! Move! Move! and Whoo hoo! Way to pee! have becomemy household mantras. As this is my third time potty-training a child, I feel sometimes over-confident in myability to get the job done. There are moments when I am handing him his fifth Jakeand the Neverland Pirates sticker of the day and thinking about how completely easythis whole thing is, now that I have done it three times in only four years. On thosedays, I pat myself on the back and walk around feeling like I have just won the elusiveMother-of-the-Year Award. However, there are also moments when I find myself staring at my reflection in thebathroom mirror, giving myself a rousing pep talk in the midst of bleaching thebathroom floor or scrubbing the hallway carpet. And there are other moments when Iam clutching my son like a football, racing through Wal-Mart like a madwomanbecause the kid always has to go to the bathroom when he is located at the opposite
end of the store. I have abandoned my fair share of shopping carts, have fled numer-ous checkout lines, and have nearly forgotten my other two children, all in the nameof those panic-fueled pursuits of potty-training perfection. But I really cannot complain. This third time around has gone much smoother thanthe last two. And anything that gets us past the horribly expensive diaper stage of lifeis worth its weight in gold. In fact, my husband and I often pretreat the laundry, ourheads together over a bottle of Shout while we daydream (with dollar signs flashingin our eyes) of the day when we can toss out the Diaper Genie and burn the diaperbag. Imagine the freedom well have! and Imagine all the money well be saving!are just some of the whispered fantasies we share in the laundry room, spritzing awayat Spider-man undies and smiling at one another. It may not be very romantic, but Ihave heard that the couple who dreams together, stays together. At night, as I wrestle my son into his diaper before bed, I remind myself that we aregetting closer to that magical day when the last of our children is finally out ofdiapers. I know it: even when it feels like we have been doling out stickers for aneternity; even when it feels like I just cant sprint across Hannaford fast enough toget him to the restroom (where he will inevitably sit for twenty minutes beforedeciding that he did not really have to go); and even when I am hiding out in the
pantry, desperately devouring my secret stash of Dove dark chocolate because I feellike I am going to lose my mind if I have to scrub the playroom carpet one moretime. I know it.After all, I have been in potty-training mode for four years now, off and on. I ampractically a professional. Why, thats long enough to start listing it on my resume.

Have you given any thought to milking camels? Camel milk is hitting the mainstream courtesy ofAmericas drome-dairies.Were all used to cows milk alternatives, including goat, sheep and even legume and nut milks likesoy and almond. Another milk alternative is gaining traction with curious American consumers:camel milk. Technically, camel milk isnt new. Milking and riding camels is extremely commonelsewhere, particularly in native camel habitats. There are two main types of camels, the dromedaryor Arabian camel, the one-hump camel found in Africa, the Middle East, and Australia; and theBactrian, the two-hump camel found inCentral Asia. Milking either type, the resultis the same. Camel milk has 2 percent milkfat, a creamy white color and a sweet, slightly salty aftertaste. There are only sevencamel milking facilities in the U.S.Regulation on camel milk varies widely, withmost camel milk drinkers still buying fromsmall farmers or within membershipassociations. In June, a camel milk dairy and distributor,Desert Farms in California, started sellingcamel milk in California Whole Foods storesfor $18 a pint.
Michigan farmer Marlin Troyer says The camel is the one of the most misunderstood andunderestimated animals in the U.S Camels milk is definitely a benefit to anybodys diet.Camel milk advocates reference studies demonstrating that the anti-inflammatory beverage willsoothe symptoms of Crohns disease, IBS and diabetes thanks to its low sugar content and highlevels of protein and vitamin C. Some have even suggested camel milk can improve autism-relatedsymptoms (though the science remains up in the air on that claim). In many ways, its strange that its been hard to get camel farming over the hump in terms ofmainstream acceptance. Despite their unshakably bad rap for kicking and spitting, camels areextremely sensitive, intelligent creatures.Camels dont have natural predators, and accordingly, theyre more curious than combative. Theyalso dont have teeth on their upper mandible, just a jagged underbite and a few molars. A camelsloose, split top lip seems like an extension of its big, curious nose.Even with a gentle disposition, milking a camel is no small task. Unlike cows, which can be separatedfrom calves immediately after birth and keep producing milk, camels must be encouraged by theirbabies to let down their mi lk. When a calf nuzzles its mother s udder, the release of oxytocin inthe mothers brain triggers muscle contractions, which causes the milk to drop. The calfs tail willgo up in anticipation, and all four of the mother s teats will fill up like water balloons. The musclecontractions also cause a camel to suddenly become very still and blink hard several times, sometimeseven shedding a tear or two. (If youve seen the 2003 German documentary, The Story of theWeeping Camel, you know how true this is.) Its one of the only ways to tell when its possible tomilk. You must be quick. The milk is available for just 90 seconds at a time. Theres no limit to the
amount the mother will produce, so as long as the baby can prime the mother, milking can continue.Raising a herd can take considerable time. Mother camels gestate their 75 lb. calves for 13 months. All that waiting, and when its finally time, the birth tends to take just 20 minutes. Typically, camelslive 35 to 40 years old. Despite difficulty procuring the milk (and some sidelong glances from fellowfarmers), the milks benefits and a growing population seeking another alternative to traditional cowmilk means camel milk may finally make it over the hump in the United States.
