Your birthstone might mean a lot to you, but not more than other kinds of minerals: dietary minerals. These elements are essential to life and can be
found in specific foods and supplements. Deficiency of any mineral can manifest into a number of ailments.
Minerals and vitamins, both considered micronutrients due to their miniscule yet discernible requirement levels, have only been studied for approximately 100 years, yet the scope of their application is vast. These dietary elements have been incorporated into functional foods, dietary supplements, sports nutrition products and increasingly in cosmeceuticals.
“Minerals are essential to life, but cannot be manufactured by life,” said Max Motyka, RPh, director of sales and marketing at Albion Human Nutrition. “All minerals must be absorbed into the body from the outside.”
Mineral FormsDietary minerals are either macro- or microminerals. The human body requires
more than 100 mg/d of the seven macrominerals to maintain optimal health. They include calcium, chloride, magnesium, phosphorous, potassium, sodium and sulfur. Microminerals, or trace minerals, are essential for life as well, but are required in smaller quantities. These include iron, iodine, zinc and many more. Having too much or too little of any of these nutrients can have a huge impact on one’s health and bodily functions.
“Recent data shows that Americans as a collective whole are failing to reach recommended daily intake levels for almost all minerals,” said Ryan Davis, vice president, R&D, quality and regulatory at Kelatron. “This suggests the importance of continued mineral supplementation.”
In the example of iron, a deficiency could lead to anemia, poor concentration and general weakness; an excess could lead to iron overload, possibly causing arthritis, cirrhosis, diabetes or many other symptoms. This demonstrates exactly why supplements must be carefully formulated to deliver the correct amount of nutrients.
“As tiny as the amounts are, the health consequences of [micronutrient] absence are dangerous,” said Anurag Pande, Ph.D., vice president scientific affairs, Sabinsa. “Micronutrients require an accurate delivery system capable of providing an effective dosage because it’s relatively easy to go under or over the recommended amount.”

When working with dietary minerals, one must define the purpose of the product before formulation can occur. Whether it’s a mineral supplement, daily multivitamin or functional food, all delivery methods must consider dosage, interactivity and, of course, taste.
“Major challenges formulators often come across while formulating with minerals are related to stability,” Pande added. “Choosing the right delivery vehicle is important. The form in which the minerals are delivered is important, as it may affect the absorption of the minerals to a great extent.”
Stability pertains to the physical composition of the product, which determines the shelf life, disintegration rate and pH level. Consumers want a product with a long shelf life, but will also break down at the right time to be best absorbed into the body.
“The main purpose of our products is to provide a mineral source that be absorbed efficiently with minimal inhibitive interaction along the way,” Davis said. “Inorganic mineral sources are apt to react with other components of a given formulation, thus potentially decreasing the overall effective absorption of that mineral as well as the respective component.”
Bioavailability is one of the most important elements of formulating with minerals. If the product cannot be absorbed, then it is wasted. Bioavailability is determined by the solubility of the product in powdered, liquid or any other form, and its interaction with water, acid and other drugs and food.
“There are a wide variety of successful mineral applications from liquid supplements, powdered beverages, chewable tablets, gelcaps, capsules, etc.,” said Patrick Stano, vice president of sales and marketing, Dr. Paul Lohmann Inc. “A properly formulated mineral supplement can come in many forms.”
Other popular mineral formats include functional foods, fortified sports drinks and multivitamins. According to Davis, softgels and gummies are becoming popular mineral delivery forms as well. Each form requires that the physical parameters of formulation be calculated exactly to deliver a powerful product. These parameters include taste, color, metal content, solubility, bioavailability and physical form (powder, granular, micronized powder, crystal, etc.).
“If you are formulating a liquid or a powdered beverage, minerals with a higher solubility are required,” Stano added. “However, many soluble minerals are lower in metal content and typically have less desirable taste profiles. In some applications, a microencapsulated mineral can mask the taste of some minerals.”

at the most appropriate time to be fully absorbed into the body and not compromised due to premature reaction or negative environmental conditions. Microencapsulation can mask the metallic taste of a product, but comes with a heavier cost than the raw form of the mineral.
The Other OrganicOf course, the quality of mineral ingredients is the most important criteria
when making a supplement. Some of the more basic forms of minerals work better than others, but inferior ingredients will make a substandard product.
Minerals can be categorized as being either organic or inorganic. Organic compounds are derived from plants and animal products while inorganic compounds are sourced from the earth. Plants then convert the inorganic minerals into organic, more bioavailable forms for animal and human consumption.
Organic compounds contain a carbon atom and usually are a product of a biological system. These minerals have a much higher bioavailability than their counterparts. Inorganic compounds do not contain a carbon molecule (most of the time) and are usually a product of geological processes.
An inorganic mineral’s metal ion can be bonded with an amino acid in order to create a chelated mineral. These metal-amino acid chelates can provide a higher bioavailability due to the bonding preventing salts in the stomach from complexing with the metal. Due to their solubility and stability in acidic environments, chelates are easily digested thus providing greater absorption.
“The reason chelated minerals can survive the onslaught of enzymes and acid in the stomach is because they are bound to ligand anions in multiple locations,” said Philip Merrell, Ph.D., technical market manager, Jost Chemical. “The strength of the multiple bonds between the chelator and metal ion hold the mineral complex together through the acidic environment of the stomach and into the small intestine. With non-chelated mineral salts, stomach acid easily liberates the metal ion. The large macromolecules are more readily absorbed through the intestinal wall than simple ions, which are typically flushed through the intestine without being absorbed into the bloodstream.”
“Clinical studies of ferrous bisglycinate (as Albion’s Ferrochel®), an iron amino acid chelate, have shown it improves hemoglobin and ferritin indices at lower dosages than non-chelated ferrous sulfate or ferrous ascorbate; lower dosages mean fewer side effects and no interactions with other nutrients,” Motyka said (Nutrition. 2001 May;17(5):381-4).

Having a product with a lower dosage means cheaper costs of manufacturing, but more important than cost is the easier ability to control interactivity. “In order for a mineral salt to be successfully used, it must help make the product perform in the manner expected and not detract in any way,” Merrell noted. “Different mineral salts have a vast different set of properties that must be fit to the intended use.”
Pande added,“In multimineral supplements, care should be taken to ensure that certain combinations, which can interfere other’s absorption, are avoided, such as calcium and iron; calcium interferes with absorption of iron.”
Other relevant examples of interactivity include manganese dampening iron absorption or vitamin D improving absorption of calcium. A calcium and vitamin D interaction goes to show that sometimes interaction is a desired trait.
One study published in the Journal of Applied Nutrition demonstrated a 16-percent decrease in the frequency of moderate-to-severe side effects in women who took Ferrochel over non-chelated, sulfate formulation of iron (J Appl Nutr 1994;46:2–13). Another study validated the oral bioavailability of zinc chelate, in the form of zinc bisglycinate. It was 43.3 percent more bioavailable than that of zinc gluconate (Int J Vitam Nutr Res. 2007;77(4):243-248).
There are many factors involved when creating a prime mineral product, and the key is to bring balance to them all. A supplement should have the proper dosage of the minerals relative to its purpose, without going too high or low. Minerals can interact with each other in a beneficial way, but some reactions can be undesired, so a middle ground must be found. Bioavailability is one of the most important factors, but should be calculated with a sufficient enough shelf life. Additional factors to consider are chelation and microencapsulation, which can affect everything from dosage, bioavailability and interaction, as well the dynamics of taste and other physical characteristics.
