Roast Chicken gets its name from the delicious chickens that you can always see roasting away on their outdoor spit roast grill. The restaurant has been operating for several years and is a popular dining spot for locals and visitors alike. Typically Thai people will order these dancing chickens to be served with sticky rice and Som Tam, the famous spicy Thai salad - but of course you can enjoy them with anything on the menu that you wish. And the menu has a wide variety of classic Thai and Issan dishes at extremely reasonable prices. In fact menu items are so well priced that four people can enjoy a large meal, sharing dishes in the Thai fashion, for around 500 Baht.

Thai foot massage is one of the more common massage treatments on offer from the various spas and massage businesses on Koh Chang. Technically foot massage is part of an alternative medicine system known as reflexology. The principle underlying reflexology is the belief that there are reflex areas in the feet, hands and ears that provide stimulus to all of the parts and internal organs of the body. The chart pictured below, versions of which can be seen outside massage shops all over Koh Chang, gives an indicator of which parts of the foot are thought to correspond to which parts of the body. Reflexology massage does not use any oil but maintains that by simply massaging and stimulating the reflex points corresponding to a particular organ or part of the body the circulation and general health of that organ can be improved. As with many alternative medical therapies the opinion of mainstream medical science is that the benefits of reflexology are far from proven with many studies showing no positive effects from reflexology treatments, although a few medical studies have seemed to show positive results. Reflexology therapists, however, always recommend reflexology treatments as a compliment to and never a replacement for conventional medicine. And all of the above is missing one of the most important things about foot massages. They are incredibly relaxing and feel fantastic. So there is a school of thought that suggests that you should forget about all the debate and just go and treat yourself to a foot massage. If it improves your health then that’s a bonus, if it doesn’t, so what, it still feels great!

Grand Cabana
There are as many ways of spelling this classic North-eastern Thai (Issan) dish as there are variations in the recipe. You can find it featuring on different menus as Larp, Laab, Larb and probably a host of other ways.Basically Laap (as we’ll call it here) is a spicy minced meat salad. The dish is commonly made with pork, beef, chicken or fish and often a little offal such as liver is added to make the flavour more robust. For our recipe below we’ll use pork and chicken liver but all of the other versions are worth experimenting with.
Ingredientsground roasted rice 1 tablespoon shallots, thinly sliced 3 fresh lime juice 3 tablespoons minced pork 150 gmssliced chicken livers 100 gmsroasted dried chilli powder 1/4 tablespoon (or to taste) water (or chicken stock) 3 tablespoons nam pla fish sauce 2 tablespoons long leaf coriander, shredded 1 tablespoon mint & coriander leaves handfull salt & pepper pinchesMethod
1 - First heat the water or stock until just boiling and add a pinch of salt and pepper.
2 - Now add the meat, heat to a simmer and stir for a few minutes until just cooked.
3 - Season with the chilli, lime juice and nam pla.
4 - Then mix in the herbs and the sliced shallots.
5 - Lastly sprinkle with the roasted rice and stir in to bind.
ServingLaap is typically served with an accompaniment of chilled raw vegetables such as sliced cucumber, long beans and eggplants. It is also good with sticky rice, especially if you are eating it as a main meal instead of a snack. You can also serve with other Issan dishes such as the famous spicy Papaya salad, Som Tam and Moo or Nuea Dat Diow, delicious strips of dried and deep-fried Pork or Beef.

Sticky RiceSt

Ric
e Sticky rice (known as Khao Niao in Thai) is eaten as a staple in the Northern and North-Eastern “Issan” regions of Thailand. It is a hardy plant that grows well on the mountainous hillsides of the north and it requires much less water to grow than regular rice. Sticky rice has a very high starch content and if it were to be prepared by boiling in water the grains would lose their individual cohesion and the result would be a kind of sticky mush. Instead sticky rice is prepared by soaking the uncooked grains in water for a few hours and then by placing in an enclosed, usually wicker, container over a pot of boiling water and steaming. The result is a cooked rice that whilst it has the adhesive exterior typical of sticky rice, keeps the individual rice grain shape. Sticky rice is served alongside a meal in a conical wicker basket. One of the advantages of this serving technique is that it does away with the need for cutlery. The best way to eat sticky rice is to pull a lump off the main mass and roll it into a little ball. This can then be used to dip into either a spicy sauce or to dip into main dishes such as laap. It’s a pretty entertaining way to eat and is far less messy than you might imagine. Khao Niao is grown in many countries in South-East Asia and is by far the most consumed rice in Laos. It has a very long heritage as well, having found to have been used in the construction of the mortar in the walls of the historical temples of Xian in China and, it is believed, in the Great Wall of China itself. These days you can find sticky rice served all over Thailand in restaurants that offer or specialise in North-Eastern cuisine. Sticky rice flavoured and sweetened with coconut milk is also eaten as part of Thai dessert dishes such as sweet sticky rice and mango.

Recipe: Gang PanangRecipe: G
ang PanangGang PanangThis is one of the famous Thai curries. This dish has a rich creamy sauce thickened by coconut milk. You can purchase the curry pastes in most large supermarkets back home, or why not take some home with you as a souvenir of your holiday in Thailand? You can serve the dish with plain boiled rice, adding a fried egg on top enhances the experience, or put it together with other dishes as part of a larger Thai meal.
IngredientsMeat 100 gms.Carrot thinly sliced Quarter Green Beans: 2cm pieces 50 gms.Large Red Chilli chopped Quarter 4-6 Kaffir Lime Leaves torn into large pieces Oil for frying 2 Tbs.Prik Gang Curry Paste TeaspoonPrik Gang Panang Paste 1 Tbs.Coconut Milk 10-20 ml.
Preparation1 - Heat the oil in a wok or frying pan and add the meat together with the two chilli pastes. Stir-fry over a medium heat for about three minutes or until the meat begins to brown.
2 - Now add the Green Beans, Chilli, Carrots and Lime Leaves and fry for a minute or two (longer if you prefer the vegetables to be softer but we think that crunchy vegetables make for a more interesting final dish). Then add a drizzle of water and fry for two more minutes.
3 - Next add the Coconut Milk, Oyster Sauce, Nam Pla, sugar and a little water and boil over a higher heat for about two minutes.
And that’s it. Serve and enjoy!
