1. Your pig should be FRESH. Make sure that you’re

getting it from a trusted meat shop or grocery and

that it has passed inspection.

2. You can get your pig from local farmers who can bring you exactly what you need: a suckling pig, a 60-pound beauty or a 90-pound one.

3. If you live in the city, you can go to meat markets or your local butcher. You can special order whole hogs

4. When deciding about the weight of your pig, you

should remember that only 30 to 50 percent of its live

weight is going to be edible after being dressed.

5. Count how many guests you are expecting and
