- worlds most luxurious and celebrated sparkling wine
- shares it’s name from region “Champagne-Ardenne” in
northern France
- where Romans were the first to plant vineyards
in this area
- wines from the Champagne region were
known before medieval time

- royalty became associated with champagne
in the 17th, 18th, & 19th centuries
- leading manufacturers made efforts to
associate their champagnes with royalty
and nobility through advertising and packaging

- In France the first sparkling champagne
was created accidentally, the pressure
in the bottle led it to explode, or pop corks
- In modern times champagne has
become more than just a beverage, but
also a brand with an expensive connotation
HOW CHAMPAGNE IS PRODUCED
1) Fermentation
- liqueur de tirage
- wine, yeast and sugar
- stored horizontally
- appellation d’origine controlee
- pressure determined by sugar
2) Aging on Lees
- champagne aged in
cellars for 3-8 years
HOW CHAMPAGNE IS PRODUCED
3) Riddling
- lees must be consolidated for removal
- bottles placed on pupitres at 45 grades
- slight shake and turn once a day every 2 days
- sediments go toward the neck of the bottle

4) Disgorging
- process of removing lees without
losing much liquid and sugar added
- freezing small amount of the liquid
which contains the lees

5) Dosage
- liqueur d’expedition
- amount of sugar in Liqueur
d’expédition establishes the sweetness
- sugar balances acidity
- finally cork is inserted
