gas or electric?
aussies have traditionally preferred electric ovens and gas cooktops,
but there are pros and cons to using both fuels. today the majority of
ovens are electric with the added advantage of fan forced cooking and
multiple functions. Different functions give greater control over cooking
many dishes helping to produce excellent results. induction cooktops
are gaining momentum and are a great alternative to gas.
steam away!
another option is to include a steam oven, or combination steam oven
to your appliance stack. steam cooking is used mostly for oriental
cuisine but certainly useful for everyday dishes. steaming helps to retain
the flavours, colour and vitamins.
freestanding or built-in?
another important consideration is whether you prefer a freestanding or
built-in oven. a freestanding oven has the advantage of a much larger
oven capacity as well as an integrated cooktop - an all in one cooking
centre. However, you will likely need to bend down to use the oven. a
built-in oven offers more flexibility in installation. they can be installed at
a preferred height in a wall or if that doesn’t suit, can go under a bench.
size matters!
think carefully about what purpose your oven will serve. if you have
a big family or intend to cook lots of meals regularly then a large
oven up to 90cm may be preferable. standard ovens are 60cm with
compact ovens usually 45cm. With a cooktop, think about the burner
configuration and what suits you. How many pots and pans do you
juggle at once?

if you have been shopping around for a new oven lately then you may have heard the
term 'pyrolytic' and wondered - "what the heck does that mean?" Don't worry you're
not the only one. put simply, a pyrolytic oven is an oven that can clean itself.
Using super high temperatures of 475°c, a pyrolytic oven turns food residue and grime
into ash which can then be easily wiped clean using a damp sponge or cloth. no harsh
chemicals or scrubbing required! let's face it, who actually enjoys cleaning their oven?
Umm... not us! plus, did you know that the chemicals used to clean the inside of a
regular oven can potentially contaminate food? therefore choosing a pyrolytic oven for
your kitchen can offer not only convenience but also health and safety benefits - brilliant!
features & accessories
as with any new product, it is important to make a list of the features
which are important to you and your cooking needs. in addition to
size, think about how the oven door opens and the size of the window.
other features include self-cleaning (pyrolytic), cooking programs, quick
preheat functions, timers, manual/touch controls, and fan forced baking.
accessories such as shelves, trays, rails and telescopic runners are a
few other factors to think about.
energy efficiency:
as with any appliance purchase, the use and size of it will affect your
electricity bills. if you are a single person or small family, consider buying
appliances that will help save on energy costs.

cooking is a skill, which means that the more you practice, the better you become. With practice comes knowledge about what to do when certain problems — rock-hard brown sugar, shells in the egg yolk, boiling-over pots of water — arise.
These are 13 simple cooking tips that chefs of any level can use.
1. Peel garlic easily by microwaving it.microwave your head of garlic for 10 seconds. remove it and peel the
garlic with your hands — you’ll notice the cloves slip right out of the
casings like magic.
another easy method is to smash the garlic head with the heel of your
hand, and then throw it into a metal bowl. put another metal bowl on top
and shake hard for a few seconds. When you remove the top bowl, you’ll
see a bunch of naked garlic cloves.
2. Soak mussels and clams in water with a few tablespoons of flour.they will open up to ingest the flour, and in doing so will expel any sand
or grit still inside. leave them in for 30 minutes to get the best possible
results before cooking.
3. Get more juice from a lemon by microwaving it.Heat up your lemon (or any citrus fruit) for 20 to 30 seconds. apply
pressure by rolling it on the counter or in your hands before cutting it in half
and juicing. the fruit will be softer and easier to squeeze.
4. Remove excess fats from soups and stews with ice cubes.Drop a few ice cubes into your finished soup, stew, or casserole.
scoop-able fat globules will rise to the surface where the fat has
congealed in the colder areas where the ice cubes landed. You can skim
these off with a spoon.
another simple method to try if you’re not eating the soup right away is put
it in a container and let it cool in the fridge. once the fat has risen to the
surface and solidified, you can simply scoop it out and then reheat soup
as desired.
5. Toss a pinch of salt onto a cutting board when chopping herbs.the friction and weight of the salt will keep the herbs from sticking to your
knife and getting all over the board.
(note: this tip is best with herbs like rosemary and thyme. Basil and mint
should be hand-torn to avoid bruising.)
6. Pat meat and seafood dry before pan frying.Using a paper towel to remove any surface moisture on your meat will
help avoid steam (or worse — flare ups) when it hits the hot pan or grill.
moisture and steam will also impede caramelization, which is what makes
the delicious exterior you crave when searing and grilling meats.
7. Chop iceberg lettuce in seconds by removing its core.take your head of lettuce and slam it down on the counter as hard as you
can onto its bottom. turn it over, and remove the core. once the core is
out, the lettuce will be easy to separate and chop up with a knife.
8. Avoid clumpy rice by rinsing it before cooking.place your uncooked rice in a sieve or mesh colander and run under cold
water until it runs clear. this will remove a lot of unnecessary starch from
the rice, which can cause it to stick and clump together. You’ll get fluffy
rice every time.
9. Speaking of rice, freeze leftovers to always have a batch on hand.after you make a big batch of rice, freeze it in multiple microwave-safe
containers. once you’re ready for rice again, sprinkle 1-2 tablespoons of
water over the rice and cover with dampened paper towels. pop it in the
microwave on high for 1-3 minutes before fluffing. repeat until the rice is
fully hot.
10. Prevent pots from boiling over by resting a wooden spoon across the pot.this works because the dry, room temperature spoon will break the
bubbles and send them back into the pot (there’s science behind it).
Use a different wooden spoon from the one you were stirring with,
however, because if you use a wet spoon, the wood will warp.
11. De-clump brown sugar quickly with a microwave and water.if your brown sugar is rock hard, there’s a really simple solution. place
the block of sugar in a bowl, sprinkle it with water, cover with a damp
paper towel, and then microwave for 30 seconds. continue microwaving,
checking every 30 seconds, until the sugar is soft.
in the future to keep your brown sugar from clumping, place the bag
in an airtight container or a resealable freezer bag and store at room
temperature.
12. Wet your fingers with water to retrieve an egg shell.Bit of egg shell getting in your yolk is the peskiest part about making eggs.
just run a little water over your fingers before reaching in, and the egg
shell piece will be easy to grab.

Apfelstrudel - Apple Strudel
This gorgeous strudel has just what you crave this time of year: thin layers of flaky crust and lots of juicy apples.
50 g unsalted butter, melted
4 sheets filo pastry, 32 x 37cm (about 150g)
icing sugar, for dusting
double cream, to serve
filling:
3 tbsp soft raisins
1 large orange, zested and juiced
800g cooking apples, peeled, cored and cut
into small chunks
50g unsalted butter
100 ml water
100g caster sugar
1 tsp ground cinnamon
1 large handful fresh breadcrumbs
for the filling, place the raisins in a small
bowl with the orange zest and juice to soak.
put the apple in a pan with the butter,
water and sugar, and cook together for
8–10 minutes, until the apple has softened
slightly, but still retains its shape.
remove from the heat, add the cinnamon,
raisins, along with the orange zest and juice,
and the breadcrumbs, and stir to combine
– the breadcrumbs will bind everything
together. leave to cool.
preheat the oven to 180°c/Gas 4.
Brush a suitably sized baking tray with a
little of the melted butter. spread out one
sheet of filo on the baking tray, and brush
with some more of the butter.
repeat the process with the remaining
pastry sheets, placing them on top of each
other, brushing with melted butter each
time.
spoon the apple mixture along the middle
of the pastry and roll up – from the bottom
first, then the sides, ending with the top – to
make into a parcel, seam-side down. (if you
like, you can even scrunch up some extra
filo pastry to make a decoration for the top.)
Brush all over with the remaining butter and
bake in the oven for 15–20 minutes, or until
the top is crisp and golden. check after 10
minutes; if it is browning too quickly, reduce
the heat a little.
Dust with icing sugar and serve with double
cream.

Before anything else, it is important to identify the model that most suits your kitchen and reflects your own personal tastes. all models can operate in 2 modes - Ducted and re-circulated. Ducted: the extracted air is expelled to the outside via flexible or ridged pipe connected directly to the top of the rangehood. this opening has a special valve, which allows expelling of the fumes and preventing of the outside air from coming back inside the house. ideally the shortest connection to the outside environment is the best method for maximum air movement and the elimination of food smells.
re-circulated: if it is not possible to expel air to the outside, it is important that the rangehood be fitted with charcoal filters. the air passes through filters, which extract the fumes and the clean, purified air is returned to the room. to get the best out of this method of extraction the charcoal filters should be changed regularly.

250ml (1 cup) cherry juice

preheat the oven and grease a 28 cm (11 in)
springform pan.
pRepaRe The shoRTcRusT pasTRy:
sift flour, baking powder and cocoa into a mixing bowl, add butter, sugar, vanilla sugar and kirsch.
knead the dough either with your hands or with a hand mixer (kneading hook) for 5 minutes until
you get a smooth dough.
roll the dough out and line the bottom of the springform pan, prick the dough a few times with a
fork. Bake in the preheated oven at 180°c/350°f for 15 minutes.
remove the pastry immediately from the pan and let it cool on a wire rack. clean the springform
pan, grease the bottom and line with baking paper.
pRepaRe The sponge:
put the eggs into a large mixing bowl, use a handmixer at the highest speed and whisk the eggs
until foamy. slowly sprinkle the sugar and vanilla sugar into the egg mixture while you continue
whisking. Whisk for at least 2 minutes after the sugar is added. the egg mixture should be very
fluffy and nearly white.
sift and mix the flour and cornstarch, baking powder, cinnamon and cocoa, and stir into the egg
mixture quickly. spoon the sponge dough into the prepared springform pan, flat the surface, and
bake it for about 30 minutes at 180°c/350°f.
remove the sponge from the oven, remove the ring from the pan and let the sponge cool down.
carefully peel off the baking paper and cut the sponge in half horizontally.
pRepaRe The filling:
Blend the arrow root/cornstarch with a little of the cherry liquid in a sauce pan, stir in the rest
of the juice, and the 4 teaspoons sugar. Heat the liquid until it boils, stir occasionally, and let it
simmer for a minute, add the well-drained cherries (set 14 cherries aside for the decoration) and
remove from the oven. When the mixture is cool add the kirschwasser.
soak the gelatine in the cold water for ten minutes, warm it up while stirring until the gelatine has
dissolved. let it cool.
Whip the cream until nearly stiff, add the gelatine, the sifted icing sugar and the vanilla sugar.
continue whipping until the cream is very stiff.
• Puttheshortcrustpastryonaservingplate.Spreadthecherriesonthebottomlayer,leaving
1 cm (1/8 in) uncovered around the edge.
• Addone-thirdofthecreamandflattenwithacakespatula.
• Putaspongelayerontopandpresslightly.Spreadhalfoftheremainingcreamandaddthe
second sponge layer.
• Fillapastrybag(star-shapednozzle)with3tablespoonsofcream.Covertheentirecake,top
and sides, with the remaining cream.
• Decorateyourmasterpiecewith14creamroses,putacherryoneachrose,andsprinkle
chocolate curls on the side and top of the cake.

storage of wine is an important consideration for wine that is being kept for long-term aging. While most wine is consumed within 24 hours of purchase, fine wines are often set aside for long-term storage. Wine is one of the few commodities that can improve with age, but it can also rapidly deteriorate if kept in inadequate conditions. the three factors that have the most direct impact on a wine’s condition are light, humidity, and temperature.
Wine is very susceptible to changes in temperature, with temperature control being an important consideration in wine storage. if the wine is exposed to too high a temperature (in excess of 25 °c) for long periods of time, it may be spoiled or become “cooked” and develop off-flavors that taste raisiny or stewed. the exact length of time that a wine is at risk of exposure to high temperatures will vary depending on the wine, with some wines (such as madeira which is exposed to high temperatures during its winemaking) being able to sustain exposure to high temperatures more easily than other, more delicate wines (such as riesling). if the wine is exposed to temperatures that are too cold, the wine can freeze and
expand, causing the cork to be pushed out; this will allow more oxygen to be exposed to the wine. Dramatic temperature swings (such as repeated transferring a wine from a warm room to a cool refrigerator) can also cause adverse chemical reactions in the wine that may lead to a variety of wine faults. most experts, recommend that wine be kept at constant temperatures between 10 and 15 °c.
in general, a wine has a greater potential to develop complexity and a more aromatic bouquet if it is allowed to age slowly in a relatively cool environment. the lower the temperature, the more slowly a wine develops. on average, the rate of chemical reactions in wine doubles with each 8 °c increase in temperature. keeping wine intended for aging in a cool area with a constant temperature around 13 °c would be recommended. Wine can be stored at temperatures as high as 21 °c without long-term negative effect.
