eng About one hour from Montreal, after enjoying a peaceful scenic car ride, I find myself at the base of Mount Orford. There is an inn called Auberge Aux 4 Saisions d'Orford for people who enjoy the beauty of the cycle of seasons.
A restaurant located within the inn is Bistro 4 Saisons and a Japanese sommelier Mr. Michael Otaka works there. Four to five days a week, while working as a waiter, he chooses wines as a sommelier according to customers' tastes. He is also responsible for making wine menus and buying wines.
"Wines have different characters depending on wine makers and where they are from. Also each person who tastes them has different opinions. That's why I find it very interesting. I am very pleased to be able to offer someone a special glass of wine. Wine doesn't have to be expensive. I think it is fun to search for what you really like within your reach and enjoy it. My goal is to search for wines which fit well with Japanese food. Usually you drink sake with Japanese food but I believe there are good wines and other beverages which go well with Japanese and other Asian food."
Mr. Otaka also runs a wine import company called ENOTRIA. His passion for wines never runs out. During weekends he plays Japanese drums as a hobby; it's very refreshing to see someone so energetic in both his work
and private life.
At Bistro 4 Saisons, 30 year-old Mr. Antoine Rheault works as a chef. He carefully selects local fresh ingredients for his menu and the restaurant is very popular among locals, not only tourists.
My choice from their lunch menu was Salade de canard confit, orange et amandes grilles (duck confit salad with orange and roasted almonds) for which Mr. Otaka picked a 2010 Fedriani Laffitte from Spain.
It was an appropriate selection of special wine as I am planning a trip to Spain.

environ une heure de Montral, aprs une belle ballade en voiture, je me trouve la base du Mont Orford. Il y a une auberge situe cet endroit, lAuberge Aux 4 Saisons dOrford, pour les gens qui apprcient la beaut du cycle des saisons.
Le restaurant Bistro 4 Saisons se trouve dans cet tablissement, et un sommelier Japonais, M. Michael Otaka, y travaille. De quatre cinq jours par semaine, travaillant comme serveur et titre de sommelier, il choisit des vins en accord avec les gots des clients. Il doit aussi prparer la carte des vins et soccuper de leur approvisionnement.
Les vins ont diffrentes caractristiques qui dpendent du viticulteur et de sa provenance. Chaque personne qui y gote a une opinion diffrente de ces vins. Cest cela que je trouve trs intressant. Jai le plaisir doffrir quelquun un verre de vin spcial. Le vin na pas besoin dtre cher. Je crois qu'il est amusant de trouver ce qui est vraiment notre porte et de s'en dlecter. Mon but est de trouver des vins qui vont bien avec des mets japonais. Lhabitude est de boire du sak, mais je
crois que dautres bons vins et breuvages iraient bien avec de la nourriture japonaise et asiatique.
M. Otaka dirige aussi une entreprise d'importation des vins qui sappelle ENOTRIA. Sa passion pour les vins na pas de fin. Durant les fins de semaine, il joue du tambour japonais comme passe-temps; cest trs rafraichissant de voir quelquun de si nergique autant dans sa vie professionnelle que dans sa vie prive.
Au Bistro 4 Saisons travaille aussi M. Antoine Rheault, un chef de 30 ans. Il choisit trs attentivement des ingrdients locaux frais pour son menu et le restaurant est trs frquent, non seulement par les touristes, mais aussi par les habitants de la rgion.
Mon choix pour leur menu du dner tait une salade de canard confit, orange et amandes grilles pour lequel M. Otaka a choisi un Fedriani Laffitte 2010 dEspagne.
Ctait un choix de vin spcial trs appropri car je planifie de faire un voyage en Espagne.

engHalf a year has passed since I arrived in Canada and
Ive been missing my family a lot recently. The stress has also been building up from the constant back and forth between home and work. I dont even have time to go traveling, which is something I love to do. So, feeling as I was while choosing a film to review, I was immediately attracted to the cheerful yellow DVD package of Little Miss Sunshine. It is a truly heartwarming movie about the recovery of a family on the verge of collapse.
The story follows the Hoover family who drives 800 miles, from Arizona to California, so that their daughter Olive can participate in a girls beauty pageant called Little Miss Sunshine. On the way to the contest a lot of problems arise, making it difficult to get to California: the car breaks down, there is trouble at the fathers job, theyre forced to face past traumas and well, Ill let you see some of the interesting surprises for yourself.
In the end though, it is because of these setbacks that the family is able to reclaim their bond. For example, in what are the movies best scenes the whole family must come together to push their old jalopy, just to start the engine. Though the family experiences its fair share of problems, they are always portrayed hilariously, which will surely make the audience smile without realizing it. I also found myself on the edge of my seat, cheering for Olive. And when she loses confidence, her grandfather (who usually always fools around) encourages her with the words: Do you know what a loser is? A real loser is someone who's so afraid of not winning, they don't even try. Now you're trying, right? Well then you're not a loser! We're going to have fun tomorrow, right?.
This movie will fill you with both laughter and tears as you follow the Hoover family on their travels. This movie also teaches us what is important in our lives and I guarantee it will pick you up when you are feeling down.

Canada et ma famille me manque beaucoup. Le stress caus par le va-et-vient constant entre mon domicile et mon travail est toujours prsent. Je n'ai mme pas eu le temps de voyager, une chose que jadore faire. Puisque je devais faire un choix parmi la multitude de films devant moi, j'ai t immdiatement attir par l'emballage jaune vif du DVD "Little Miss Sunshine". C'est un film vraiment rconfortant propos de la rconciliation d'une famille en crise.
On suit la famille Hoover qui parcourt plus de 800 miles, de l'Arizona la Californie, pour que leur fille Olive puisse participer un concours de beaut appele "Little Miss Sunshine". Sur le chemin, plusieurs embches se posent, rendant le voyage difficile: la voiture tombe en panne, le pre fait face des problmes financiers, ils doivent galement faire face des traumatismes passs et ... eh bien, je vous laisse dcouvrir le reste par vous-mme.
la fin cependant, ces preuves ont plutt servi solidifier le lien qui les unit. Par exemple, une des meilleures scnes du film est lorsque toute la famille doit se runir pour pousser leur vieux tacot, afin de pouvoir dmarrer le moteur. Bien que la famille prouve sa juste part de problmes, les scnes sont prsentes avec humour, ce qui fera srement sourire lauditoire. Je me suis galement retrouv sur le bord de mon sige, encourageant Olive ! Et quand elle perd confiance, son grand-pre (qui en gnral se fout de tout) l'encourage avec ces mots: Sais-tu ce qu'est un perdant? Un vrai perdant est quelqu'un qui a tellement peur de ne pas gagner, quil n'essaie mme pas. Tu as essay, non? Eh bien, tu nes pas une perdante! Nous allons avoir du plaisir demain, non? .
Tout en suivant la famille Hoover dans leurs voyages, vous vivrez toutes les motions, du rire aux larmes. Ce film nous rappelle ce qui est important dans la vie et je vous garantis qu'il vous rconfortera lorsque vous vous sentez dprim.

engEvery time I pass by Kouign Amann standing on
Mont Royal Avenue, I recall a book I read in my childhood, named The Little House written by Virginia Lee Burton. Just like the story that taught me the warmth in the heart, the little house on Mont Royal Avenue shines, giving off its strong presence from the small shopfront.
The shop was named after Kouign Amanna traditional cake of Bretagne, Francemeaning butter cake in Breton. The shop owner Nicola comes from Normandie, which is next to Bretagne. The shop sells viennoiseries whose
characteristics are right in between bread and cakes. They require accuracy and delicacy to bake, and thus pleasantly stimulate the curiosity and creative mind of Nicola.
The shop policy is to remain true to the tradition as much as possible, and to make viennoiseries in a simple manner, as the tradition itself is a history condensed with the experience of pastry cooks, skills and sweets. This is the secret to the delicious sweets baked in Kouign Amann. The shop is filled with the smell of bread freshly baked many times a day, and because of the heat of the oven, it does not need any heating equipment even in the depth of winter. The warmth of the shop directly reaches to your heart along with viennoiseries put into your mouth.
Kouign Amanns croissants have a reputation as the best croissants in Montral. The dough is beautifully rolled up and layered, and the rich butter will sweetly melt in your mouth. The duet of their crispy texture and moist taste puts on a wonderful performance to satisfy your stomach. Clafoutie is known as Farz in Bretagne, where they mix
prune and rum with it. The combination of soft pudding-like dough, fresh prune and rich flavored rum delivers a scent of Bretagne into your mouth. Freshly baked Tarte Tatin with generous amounts of apples is a mouth-watering sight to see. Proudly steaming and giving out the sour-sweetness of apples at a stretch, it stimulates the appetite through your eyes and nose.
The shop is curled in the warm embrace of the tradition. And with the warm embrace around you, give your thought to Bretagne. Bon appetit & bon voyage.

lavenue Mont-Royal, je me rappelle La petite maison de Virginia Lee Burton, livre que jai lu durant mon enfance. Pareil lhistoire qui ma enseign la chaleur du cur, la petite maison sur lavenue Mont-Royal brille, refltant sa forte prsence partir de la petite vitrine.
Le magasin se nomme aprs Kouign Amann gteau traditionnel de la Bretagne, France signifiant gteau au beurre en breton. Le propritaire du magasin, Nicola vient de la Normandie, qui se situe ct de la Bretagne. Le magasin vend des viennoiseries dont les caractristiques
les situent entre les pains et les gteaux. Ils demandent prcision et dlicatesse faire, incitant ainsi la curiosit et la crativit de Nicola.
La politique du magasin est de rester le plus fidle la tradition, et de faire des viennoiseries dune manire simple, puisque la tradition elle-mme est une histoire mle de lexprience des ptissiers, dhabilits et de desserts. Cest le secret des dlicieux desserts faits Kouign Amann. Le magasin se rempli de larme des pains frais faits de nombreuses fois par jour. Aussi, cause de la chaleur du four, il na besoin daucun chauffage mme en plein hiver. La chaleur du magasin atteint directement votre cur avec ses viennoiseries dans votre bouche.

engWe are in May and it is almost
summer, with plenty of events around the corner. The ingredient I will introduce this time is katsuobushi. Soup stock in Japanese food is often made of katsuobushi. Therefore, it may be said that katsuobushi is the base of Japanese taste. Katsuobushi is dried bonito (fish.) You can buy sliced bonito at stores which carry Japanese ingredients. It makes you recover from fatigue and your bones strong. Furthermore, it is effective in anti-aging. I will introduce okonomiyaki with katsuobushi here. It is a local specialty in Kansai and very popular among the Japanese.
I will also introduce yamaimo -- or Japanese mountain yam --. With a high nutritive value, it is said that it builds up your immune system. By adding yamaimo, you can also enjoy its pleasant taste. You can buy seaweed flakes and okonomiyaki sauce at any store carrying Japanese foods. I strongly recommend you use okonomiyaki sauce.
Ingredients to make approx. 3 cabbage 5 tbsp yamaimo (grated) 6 tbsp all-purpose flour 2 tsp fish bouillon powder 4 tbsp lukewarm water 2 eggs Approx. 200g pork (thinly slice) okonomiyaki sauce for your tastekatsuobushi for your taste
*You can add mayonnaise, seaweed flakes and so on according to your taste.
preparationChop cabbage into fine pieces.1.
Add bouillon cubes into lukewarm 2. water, and mix with all-purpose flour well.
Add eggs and yamaimo until mixed 3. well. Then add cabbage.
Oil a frying pan that has been 4. heated over medium fire, pour 1/3 of the okonomiyaki batter and level the thickness. Bring the heat down and place pork on top of the okonomiyaki.
When the bottom of the okonomiyaki 5. gets brown, turn it over. Later, turn it again.
Place okonomiyaki on a plate, spread 6. okonomiyaki sauce on it and add katsuobushi as you wish. You can add mayonnaise or/and seaweed flakes according to your taste.
*You can also use meats other than pork. Adding squid or/and cheese is tasty as well. Please add ingredients as you wish.

Ainsi, on peut dire que le katsuobushi est la base du got japonais. Cet ingrdient est en fait de la bonite sche. Il peut vous aider vous remettre de la fatigue et fortifie vos os. De plus, cest un actif anti-ge. Je vais vous parler de lutilisation du katsuobushi dans lokonomiyaki, spcialit du Kansai trs populaire chez les Japonais.
Je vous parlerai aussi du yamaimo (igname de montagne du Japon, sorte de longue patate). Vous pouvez achetez du yamaimo dans le quartier chinois. Ayant une grande valeur nutritive, le yamaimo est rput pour renforcer le systme immunitaire et a un got agrable. Vous pouvez acheter des algues en paillettes (ao-nori) et de la sauce okonomiyaki dans tous les magasins proposant des produits japonais. Je vous recommande fortement dutiliser la sauce okonomiyaki.
ingrdients (pour environ 3 okonomiyaki) de chou 5 cuillres soupe de yamaimo rp6 cuillres soupe de farine 2 cuillres caf de poudre de bouillon de poisson4 cuillres caf deau tide 2 ufs Environ 200 g de porc finement tranchDe la sauce okonomiyaki (selon votre got)Du katsuobushi (selon votre got)
* Vous pouvez galement ajouter de la mayonnaise et des algues en paillettes (ao-nori) selon votre got
prparation1. Couper le chou en morceaux fins
2. Ajouter le bouillon en cubes dans leau tide, et mlanger avec la farine
3. Ajouter les ufs et le yamaimo en mlangeant bien. Ajouter ensuite le chou.
4. Huiler une pole pralablement chauffe feu moyen, mettre un tiers de la pte okonomiyaki et aplatir. Baisser le feu et ajouter le porc sur la galette ainsi obtenue.
5. Quand le dos de lokonomiyaki (ct pole) devient brun, le retourner. Ensuite, le retourner une nouvelle fois.
6. Mettre lokonomiyaki sur une assiette, ajouter de la sauce okonomiyaki et du katsuobushi selon votre got. Il est aussi possible dajouter de la mayonnaise et des algues en paillettes (ao-nori), toujours selon votre got.
* Une viande autre que le porc peut aussi tre utilise. Du calmar et/ou du fromage sont galement dlicieux. Ajouter les ingrdients qui vous plaisent !

I first met Joshua. The phrase is Japanese, meaning a freshening breeze in the sunlight and the moon in a clear sky after the rain, used to express a serene mind. The body movement of Joshua is like a mysterious light that seems able to freely come and go through the looking glass. And exquisite flowers will bloom solemnly where the light reaches. For this month's Nice Guy from Montral, I am introducing Joshua Layton, an Aikido instructor who is in charge of Montrgie Aikikai located in the city of Longueuil.
Joshua started learning Aikido when he was fourteen. Aikido is one of the traditional Japanese martial arts the feature of
which is to disempower the attacker by the efficient movement of ones body. At seventeen, he met a disciple of the founder of Aikido, Mr. Kanai who had been teaching Aikido in Boston, thereby causing his passion for Aikido to grow even more. And that was when he made the decision to devote his life to the world of Aikido. While he now has a large number of students, his passion has not faded away at all, but developed more.
In his classes, there are various students including children, women and elderly persons. A starting point for Aikido is to intercommunicate with each others energy, which is to say, to accept and enjoy the differences of age, sex and position, and to harmonize them with ones own energy. For this communication, courtesy should be considered as one of the most important things to be exercised in the dojo. Ojigi (bowing) conveys courtesy and respect. The form of seiza (seating with feet and legs tucked underneath and sitting up straight) is also important, as it straightens the posture and prompts you to breath from ones abdomen.
The calm but powerful movement of Joshua can be called as quiet existence, sometimes touching the surface of the sea and sometimes going down to the sea floor. While his opponent is at the mercy of him struggling to flounder, he looks as though he is smiling.
He will open another dojo in June, hoping it to be a place to introduce every Japanese culture, including Aikido and Iaido. Lets go visit the dojo!

Pour cette dition de la section Nice Guy from Montreal , jaimerais vous prsenter Joshua Layton, un instructeur dakido responsable de lakikai de la Montrgie, situ dans la ville de Longueuil.
Joshua a commenc tudier lakido alors quil avait quatorze ans. Cette discipline est lun des arts martiaux traditionnels japonais dont le principe est de neutraliser lattaquant par des mouvements du corps efficaces. lge de dix-sept ans,
Joshua a rencontr un disciple du fondateur de lakido qui enseignait Boston, M. Kanai, et cette rencontre na fait que renforcer sa passion pour cette discipline. Cest mme ce moment quil a dcid de consacrer sa vie au monde de lakido. Alors quil enseigne maintenant un grand nombre dtudiants, sa passion ne sest pas attnue, elle sest plutt approfondie.
Les types dtudiants qui assistent ses enseignements sont varis et comprennent des enfants, des femmes et des personnes ges. Lun des principes de lakido est lintercommunication avec lnergie de lAutre, ce qui signifie daccepter et de tirer parti des diffrences dge, de sexe et de statut pour les harmoniser sa propre nergie. Dans ce type de communication, la courtoisie doit tre considre comme lune des choses les plus importantes pratiquer au dojo. Lojigi (la rvrence) tmoigne par exemple de courtoisie et de respect. La position du seiza (une position assise avec les jambes replies sur elles-mmes et le dos bien droit) est aussi trs importante, puisquelle redresse la posture et favorise une respiration provenant de labdomen.
Les mouvements calmes mais puissants de Joshua semblent avoir une existence paisible; ils ne font parfois queffleurer la surface de leau alors quils peuvent dautres moments traverser locan jusque dans ses profondeurs. Alors que son opposant est sa merci, se dmenant comme un poisson hors de leau, lui semble sourire avec srnit.
Il inaugurera en juin un nouveau dojo, quil espre reprsenter un endroit offrant de nombreux lments de la culture japo-naise, dont lakido et liado. Alors, laissez-vous guider par la brise cre par les mouvements de Joshua jusqu son dojo!
