About CHOCOA CHOCOA is organised by Equipoise, in cooperation with the Chocolate Festival Foundation, to promote sustainable cocoa and good quality chocolate production and consumption. The event attracts a wide audience and consists of a European Markets Academy, Chocolatier Masterclass, Trade Fair, Chocolate Makers’ Forum, Grand diner du Chocolat, Conference, Horeca & Retail programme and Festival.
The strategic position of Amsterdam, the largest port for storage, handling and processing of cocoa, makes this region an international hub for the cocoa and chocolate industry. This reputation is further consolidated by the city’s contribution to the developments in sustainability to the cocoa chain.
The Chocolate Festival foundation aims to boost the consumption of good, fine flavour chocolate by informing consumers about the advantages in terms of quality, flavour and the production process.

Good cocoa, better chocolate Welcome to the 6th edition of Chocoa - February 21st until 25th 2018 in Amsterdam. Chocoa brings together stakeholders from the entire supply chain, from cocoa farmers to chocolate consumers. Our objective is to increase the market for ‘good cocoa and better chocolate’.
Chocoa 2018 programmeEUROPEAN MARKETS ACADEMY - 21 FEBRUARY The European Markets Academy offers Trade Fair exhibitors and other participants a full day of lectures on requirements for successful operations on European markets as well as visits to cocoa companies in the port of Amsterdam.
WOMEN IN COCOA & CHOCOLATE (WINCC) EVENT - 22 FEBRUARYThe afternoon WINCC event for women will feature best practices and development of leadership skills, working groups on the WINCC network, while connecting to professional women in the cocoa and chocolate industry.

GRAND DINER DU CHOCOLAT - 22 FEBRUARY The Grand diner du Chocolat is recognized as one of the most important Dutch networking events for the cocoa and chocolate industry. Join over 200 industry participants and sponsors for the famous cocoa dinner.
CONFERENCE - 23 FEBRUARY The Chocoa Conference is a platform for international debate on the pro-gress of sustainability in the cocoa and chocolate industry. We bring together speakers from all over the world and an audience of over 200 stakeholders from all parts of the cocoa supply chain.
FESTIVAL - 24 and 25 FEBRUARYThe Amsterdam Cocoa and Chocolate Week ends with the Chocoa Festival, celebrating good chocolate. The Festival offers a wide range of sustainable chocolate to be sampled at over 80 stands and a special tasting route. Visitors enjoy two full days of tastings, demonstrations, public debates on sustainability, art and entertainment.

Port of Amsterdam - World’s largest cocoa portPort of Amsterdam is the world’s largest port for cocoa bean imports. All facilities, from transhipment to manufacturing, are available in the region. Big players in the cocoa industry, like Cargill, OLAM and Dutch Cocoa are established in de Amsterdam Region. Companies handling and storing cocoa or cocoa products are Vollers, CWT Commodities, Katoen Natie, Steinweg-Handelsveem, HD Cotterell, ACS and DSV. All is done in one region.Each year more than 600.000 tonnes of cocoa is transhipped by the port of Amsterdam. Mostly in sea containers, but also in bulk and breakbulk. 95% percent of the cocoa beans is coming from Ivory Coast and Ghana, 5% from Central-America

As early as the beginning of XVI century, small cocoa plantations sat in banks of the Guayas river. From there, cacao farming expanded upstream to the
banks of Daule and Babahoyo rivers. Giving origin to the “Arriba” denomina-tion for the Ecuadorian cocoa. Nowadays Ecuador grows two types (and
several varieties) of CCN-51 and Cacao Nacional.
But, what makes Ecuadorian cacao so special? Ecuadorian climate conditions and geographical location are important factors. Nevertheless, Ecuadorian cacao s particular floral and fruity aroma comes from the rich biodiversity
surrounding every crop. The organoleptic characteristics of Ecuadorian cacao in every small farm sails from tropical, citric or fruity flavors, nuts &
berries tones to floral & spicy revelations.
Cacao production in Ecuador is done by small farmers (organized in associa-tion, alliances or cooperatives), most of them use natural methods for pest-
prevention and disease control. In addition, fermentation and quality-control standards are carefully applied in the entire value chain.
Ecuador became Latin America’s number-one producer. It supplies 60% of the world’s “fine flavor” cacao production required in the European and

Cacao de aroma from PeruAn unforgettable, unique and sensational experience
In Peru, a country located in the central and austral part of South America, an aromatic cocoa known as ‘Cacao de Aroma’ is cultivated. Its seed, recognized by its floral, citric, and fruit notes, is embodied in the finest chocolates made from it. These attributes are contributed by the ecosystems where cocoa is
grown, the process of fermentation, and the process of drying.
Cacao de Aroma has grown in Peru since ancient times. Recent research in the Peruvian Amazon shows that Peru is the center of origin of this
kind of cocoa.The different colors of the crops are red, orange, yellow, and brown, which describe the high genetic variety that Peru has, concentrating 60% of the
existing varieties.
The seeds in the crops constitute the basis for obtaining a cocoa of excellent quality that works as the perfect ingredient to produce the finest chocolates.
These cocoa seeds are subjected to a fermentation process, in which they develop their characteristic flavor and aroma, to then be placed for their
natural drying.
The chocolates have diverse presentations ordered by their cocoa content, with dark chocolates going up to 80% cocoa. Other variations of 50%, 55%, 65%, 70% and 72% belong to mixtures with sugar, milk and other ingredients such as dried fruits, chestnuts, etc. Also available in the Peruvian market you
will find chocolates flavored with essential oils such as cinnamon, ginger, lemon verbena, coffee, among others.

According to the International Cocoa Organization (ICCO), 95% of the cocoa produced in Colombia is fine flavor, this distinction is granted only to 5% of
the grains produced worldwide. Its outstanding quality has been awarded in highly known worldwide specialized events such as the “Salon du Chocolat”. In Colombia cocoa is cultivated mainly by small
and medium size producers, gathering more than 35,000 families.
There are mainly three types of Colombian cacao: Criollo beans, forastero or amazon and trinitario or hybrid beans. Colombian cocoa flavors profiles are
directly correlated with the wide spectrum of climate and genetic diversity of each producing region. Ranging from strong cocoa/fudge organoleptic
profiles to subtle floral and fruity smooth cocoa types, most of Colombian cacao have some sweet nuts and molasses rounding the flavor notes.

The Unión de Cooperativas Agropecuarias (UCA) SOPPEXCCA was founded in Jinotega, Nicaragua in 1997. UCA SOPPEXCCA is a union of 18 co-oper-atives located in the department of Jinotega in northern Nicaragua where 60% of the countrys coffee is produced. SOPPEXCCA has grown to 650 members, 210 of them women (32%). They produce around 825 tonnes of coffee a year on very small plots of land. All coffee is shade grown and 30% is certified organic. SOPPEXCCA has developed a model of broadly conceived democratic participa-tion of every producer, which proceeds from the respective cooperatives and into which a youth movement is integrated as well.
