Smoked mackerel pâté with cranberry, lime and ginger on Melba toast
Ingredients
• 250g of smoked mackerel fillet, hot
• 100g of cream cheese
• 50g of sour cream
• 1 tsp chopped dill
• 2 limes
• 100g of cranberries
• caster sugar
• 50g of sushi ginger, sliced into thin strips
• 5 slices of white bread, thick
• salt
• pepper
Method
1. First make the pâté by flaking the smoked mackerel
fillets from their skins into a food processor, along with the
cream cheese and sour cream and pulse until relatively
smooth. Taste for seasoning and then add the dill and a
squeeze of juice from one of the limes. Pulse again, only
briefly, to mix everything together then transfer to a bowl
and chill
2. To prepare the cranberries, put in them a saucepan with
a couple of tablespoons of water and just a pinch of caster
sugar. Place the pan on the hob over a medium heat and
cook gently for 6–8 minutes, just until the berries begin to
collapse and soften. Take off the heat and leave to cool
3. When ready to assemble, toast the slices of bread evenly
on both sides under a grill and with a sharp knife trim the
crusts off. Then slide your knife carefully and horizontally
through the middle, into that thin strip of uncooked bread,
and then cut into strips. Place the untoasted sides back
under the grill and make sure you keep an eye on them,
they will toast and curl quite quickly
4. Take the mackerel pâté out from the fridge and spoon a
healthy dollop on the ends of each Melba slice. Add the
small collapsed cranberry on top and then a pinch of sliced
sushi ginger. Finish by grating over the zest from the
remaining lime

Stilton beignets with grape jelly
Stilton beignets
• 10g of butter
• 1 tbsp of tarragon, chopped
• 300g of Stilton,
broken up in a food processor
• 150g of flour, seasoned
• 4 eggs, beaten
• 200g of Panko breadcrumbs
• 1000ml of oil
Grape jelly
• 500ml of black grape juice
• 2 tbsp of caster sugar
• 1/2 lemon, juiced
• 4 gelatine leaves
Method
1. For the grape jelly, warm the juice with the
sugar until dissolved. Add the lemon juice.
Soften the gelatine leaves in cold water for
5 minutes until floppy, lift out and squeeze
out any excess water
2. Add to the grape juice and stir to dissolve.
Pour into ramekins, filling to approximately
1/3, and chill to set. Bring out of the fridge
30 minutes before serving
3. Mix the butter and tarragon into the Stilton in a
food processor. Mould the mixture into 3 per person
balls. Place in the fridge to firm up
4. Put the seasoned flour, egg wash and Panko
breadcrumbs in the bowls. Dip the Stilton balls into
the flour, then the egg wash and finally the Panko
breadcrumbs. Place the balls on a tray until needed
5. Heat your oil to 150°C/Gas mark 2 and deep fry
the beignets till golden
6. To plate, remove the jellies from the ramekins and
cut into neat circles slightly larger than the beignets.
Place the beignets on top of the jelly and serve

Filo basket of poached pears and Roquefort cheese1. Layer 3 of 6cm square sheets of filo pastry brushed with butter and baked in a shallow bun tin until light golden, then leave to cool2. Fill filo cups with thinly sliced poached pear halves3. Crumble Roquefort cheese over pears and bake for 3 mins until melted4. Garnish with watercress or chervil
Chorizo Palmiers1. Puff pastry block rolled to 3mm and cut rectangle approx 30x20cm.2. Lay chorizo slices over all pastry.3. Fold both long edges inwards tightly to meet in centre, brush slightly with water, repeat another 2 times to create long sausage shape.4. Slice into 4mm slices, place on baking sheet 5-7 minutes 200°c flip over halfway through.5. Leave to cool.
